Only now do I live in a semi-rural area, where my two closest neighbors have horse stables and an other has 3 cows. I'm blessed with great neighbors, but cursed with homeless drug addicts just .7 miles away... It's a double edge,sword. I love my neighbors, it's 4 generations of people who lived at that spot, but we are so close to druggies who attack other people.

I appreciate the no preservatives. However msg being bad for you is a myth. It is less toxic than regular salt and primarily comes from seaweed and mushrooms, two of the healthiest things on earth, and the main reason everything you add those ingredients to ends up tasting better. Fun fact of the day. Keep on cooking cowboy.
If you slice up the cheese into planks - more surface area = more smoke into the cheese. Then you can put down foil or parchment on bottom because all the extra surface area makes up for NOT having the cheese on a rack.

Well, just can't pay for a review like Cletus gave you. He may not have known what cheese was, (smoked, anyway!), but one little taste, and you had his full attention. I always wondered if I could smoke cheese myself, since I can't afford an actual smoker- but the BBQ I have, says it can double as one. The issue, as you showed so well, was the heat. But now I know: Ice in (A. foil tray), elevate.. but most important of all, FREEZE those puppies. Not the dogs, the cheese! For 20-30 mins. Not sure how I missed your "smoke cheese" video before. Gonna have to go archive digging. Can't wait to give this a go, thanks Kent & crew!

Kent, one thing I think you should give a try is smoked green bean casserole. A couple of Thanksgivings ago the oven was full and I didn't want to wait to have everything finished. Threw it on the smoker and it was fantastic!

I have one of those cold smoker "spirals" that uses sawdust. It works really well on a Weber kettle for smoking cheese. I learned the hard way not to let the black grill sit in the Texas sun while smoking cheese...

Rolling through Hollis in May on the Harley's on our way from Northern Colorado to K River. It took me a hot minute to think why Hollis was so familiar. It will possibly be our first fuel stop and coffee (relief) break after leaving Amarillo.

For some reason, not too many folks around here care for smoked mac and cheese, go figure. Make mine with smoked white cheddar, smoked provolone and smoked cream cheese. Have even tried using just one smoked cheese and not smoking the others, but folks say it just ain't how mac and cheese should be. But guess what??? That just means more for me!!! Because if I make it without smoked cheese, there won't be none left. Folks around here don't care for no sausages of any kind off in their mac and cheese, but if you toss a cut up steak off in there, they'll tear it up. I freeze my cheese and cream cheese completely before smoking and place a sheet of parchment on the bed of ice so's it can smoke longer, just flip it every now and then. Not saying it won't eventually melt, just not as fast. And that smoke taste will permeate through the cheese the longer it sits. Don't like dry mac and cheese, so add a bit more milk to it. Cream cheese was the ingredient I found to help me get folks to liking mac and cheese without that funky fake cheese product that's loaded with preservatives and chemicals.
I've seen a few videos that the title intrigued me and after every one I'm hungry for what was made. However I'd like to say this, Kent (I'm assuming that's the host of the show) just comes off as an all around great person. The way he conducts himself on camera seems to be the way he would conduct himself in person, just an all around good person
I wonder if smoking the cheese in a low pan would work. You could turn it as many times as neccesary and if it melts just stir it. My dog Tracker once stole eleven uncooked italian sausages without tearing open the pack. I was kinda proud of him. 🤗

Smoked cheese is amazing. You can try a twist on this - use smoked gouda and throw some apple slices in there with the mac. It's fantastic.

Kent, That looks great, my friend! I wish I could send you my Chilli Mac. I use it for all outdoor adventures. Sometimes, it will change a bit depending on what I have on hand, but it's still a good meal no matter what.

At approximately 7 min 28 seconds into the video Kent was taking the cream cheese off the smoker and turning the other two block..... when out from under the cheddar crawled what appeared to be a Black Widow spider of some other kind of critter.... did you all see that? Love the video still though! lol.... God Bless you all !

For cheese I have better luck just using a smoke tube with pellets and no fire in the box

Good afternoon enjoy the video I just miss you back out on a trail you got yourself wrapped up in the RUclips corporate organization I know they'll be a lot of people in the cruise and they'll enjoy it but that's just not for me and my family I still want to try to meet you somewhere I miss when you used to be out on the trail there might not be very many like me to feel that way it seems like you've got wrapped up in a corporate world but you got to pay bills I understand that have a great day to you and Shan and all your four-legged Critters

Couldnt help but notice the double bit axe with adirondack handle leaning against the building. I restore vintage axes as a hobby as well as old Coleman lanterns and stoves. Cant beat quality of days gone by. Thanks for keeping the old traditions going Kent.
