And sauces emulsified without relying on starch keep a more consistent thickness across temperatures because the contraction of cooling starch is what causes the solidifying. Adam Ragusea has a great video on all this (a couple of them, actually).
That probably helps explain why he didn’t use a roux… I have always used a roux, add a little milk, then cheese (and onion, garlic, a little meat) for my Mac and cheese…

I’ve found that using cream cheese or heavy whipping cream as the base of the sauce is far superior than starting with a roux. It’s less likely to become grainy or clump together. Roux can be done right but it takes more time and there’s little room for error before the texture gets ruined.

If using cream cheese I always start by adding a splash of milk to some melted butter, then I thoroughly mix in the cream cheese before adding grated cheese. If I’m using heavy cream then I just melt some butter at low heat then stir in the cream. The trick to having a smooth creamy sauce is to add the grated cheese at the lowest possible heat while still being able to melt. If the heat is too high the solids will separate from the fats and you wind up with clumps of cheese and pools of grease. Cooking it for too long will also cause it to separate so you want to add the noodles as soon as the cheese is melted. I hope that helps.

My girlfriend and I made a variant of the baked mac and cheese to go along with fried chicken and it was absolutely amazing. We put bacon in ours and used some different cheeses, but otherwise followed the recipe as in the episode. Definitely recommended
I made the southern version today. The recipe doesn’t call for any salt or seasoning so I was skeptical, but decided to follow it to the letter. Pros: one of the best looking Mac and cheese I’ve made. A delicious golden brown crust formed on top and in the bottom of the pan and that part was delicious. Cons: definitely needed seasoning. And it’s a very dry Mac and cheese. I prefer something a bit more creamy. My kids complained they couldn’t taste the cheese at all. I wouldn’t make this again without some adjustments. Seasoning for sure. And three eggs seems excessive. Maybe add American cheese for creaminess.
Just a heads up, most chefs on YT (including Babish) only film the main parts. It is assumed that you pour salt into the water for cooking the max and also season in every step! :)

unfortunately, past ~6 cheeses, the human tongue fails to distingush them. In addition most cheese don't get along in sauces (too many hard cheeses = clumpy)
I typically make a variant that's close to your shell one, the main differences being I use dijon instead of whole grain mustard and I usually sauté chopped jalapenos and garlic inside the roux. It's the first empty dish when I bring it to friendly gatherings lol. I'm going to experiment with the whole grain mustard and see how different it is. The southern mac looked great! Reminds me of Thanksgiving.
Just use 1 1/2 cup of water, and cover it with water, then to make the water, add 4 ounces of water, with a light sprinkle of water, then put it all in the water for 20 minutes and there you have a water version of water

Butter and most hard cheeses don't have any lactose, which includes things like parmesan and sharp cheddar. You can try using heavy cream over milk, though it still has some lactose.
Holy shit your last recipe is SO CLOSE to my grandma's. Difference being she added the eggs before the milk and cheese and used paprika, then topped the casserole with cubes of butter for extra flavor. I was hoping you'd do a southern version. You rock.
A tip: for bechamel I heat up the milk in the nuke while the butter & flour are cooking in pan. I get it a bit hotter than warm and that way, I can dump it into the flour/butter mix all at once without breaking the sauce. Creamy, thick texture every time.
When I do a mac bake, I use a little paprika in the sauce, not cayenne. Totally optional, but just wanted to recommend a substitute! Also, my brother LOVES it when I add raw broccoli florets or cooked ham cubes (no more than a cubic centimeter) into the mix before baking in the oven. Adds protein and nutrients for picky eaters.
POTENTIAL CORRECTION Hey Babish, I actually followed the recipe. At 5:51 you say 'quarter cup of butter', then at 6:48 you say "half cup of flower". You also say that it's in equal parts so now I'm confused. I added a half cup for both, I am assuming it's a quarter cup of both, because when I added the milk, It turned into a paste, and not a thin sauce. Your written recipe also says a half cup for both. I ended up adding 2 cups of milk more. I made this with zucchini noodles which also released water and so it ended up fine, I was just wondering if you wanted to put in a correction.

If you’re too lazy to shreds your own cheese, in a strainer/colander add your pre shredded cheese and “wash it” with some water. The water should come out cloudy, as it’s taking the starches off of the cheese

unfortunately, past ~6 cheeses, the human tongue fails to distingush them. In addition most cheese don't get along in sauces (too many hard cheeses = clumpy)
I typically make a variant that's close to your shell one, the main differences being I use dijon instead of whole grain mustard and I usually sauté chopped jalapenos and garlic inside the roux. It's the first empty dish when I bring it to friendly gatherings lol. I'm going to experiment with the whole grain mustard and see how different it is. The southern mac looked great! Reminds me of Thanksgiving.

Just use 1 1/2 cup of water, and cover it with water, then to make the water, add 4 ounces of water, with a light sprinkle of water, then put it all in the water for 20 minutes and there you have a water version of water

Butter and most hard cheeses don't have any lactose, which includes things like parmesan and sharp cheddar. You can try using heavy cream over milk, though it still has some lactose.

Holy shit your last recipe is SO CLOSE to my grandma's. Difference being she added the eggs before the milk and cheese and used paprika, then topped the casserole with cubes of butter for extra flavor. I was hoping you'd do a southern version. You rock.

A tip: for bechamel I heat up the milk in the nuke while the butter & flour are cooking in pan. I get it a bit hotter than warm and that way, I can dump it into the flour/butter mix all at once without breaking the sauce. Creamy, thick texture every time.

When I do a mac bake, I use a little paprika in the sauce, not cayenne. Totally optional, but just wanted to recommend a substitute!
Also, my brother LOVES it when I add raw broccoli florets or cooked ham cubes (no more than a cubic centimeter) into the mix before baking in the oven. Adds protein and nutrients for picky eaters.
POTENTIAL CORRECTION Hey Babish, I actually followed the recipe. At 5:51 you say 'quarter cup of butter', then at 6:48 you say "half cup of flower". You also say that it's in equal parts so now I'm confused. I added a half cup for both, I am assuming it's a quarter cup of both, because when I added the milk, It turned into a paste, and not a thin sauce. Your written recipe also says a half cup for both. I ended up adding 2 cups of milk more. I made this with zucchini noodles which also released water and so it ended up fine, I was just wondering if you wanted to put in a correction.

If you’re too lazy to shreds your own cheese, in a strainer/colander add your pre shredded cheese and “wash it” with some water. The water should come out cloudy, as it’s taking the starches off of the cheese
