  • These are my favorite healthy vegan Thanksgiving recipes. I decided to change it up from how I normally make my mushroom gravy. I added carrots and celery to give it a more complex flavor. The roasted veggies are a favorite, especially the fennel and purple potato, and the mashed potatoes could not be any easier to make. This was a practice run for my mushroom gravy recipe that will be in my upcoming recipe book. Is this not also the cheapest way to eat delicious food ever? We get to feast for very little money.

    The mushroom gravy hit the spot, thanks! Just a suggestion, when you get to part when you add potatoes to the sautéed veggies into the blender, I would start with less potato (maybe only a few spoonfuls) and then add as needed. Also, I used dill instead of parsley (since I was out of the latter)....and I used the mushroom gravy to make a veggie Shepherd's pie (sort of mix between this recipe and the green bean Casserole recipe). I layered steamed green beans on the bottom, then gravy, then a layer of steamed carrots & celery, and another layer of gravy, and then topped it off with the mashed potaoes. We baked it in the oven and...WOW, was it delicious! Thank you for a very tasty and versatile sauce!!

    Just made this! OH.MY.LORD! Dillon.... you sir, are a master of gravy! Even the marital meat eater loves it! Perfect texture and flavor! I used poultry seasoning because I didn’t have parsley or rosemary.

    Making this for Thanksgiving 2019 for meat eater family. What's nice is they asked me to bring it to dinner because they are curious about my new way of eating. WFPB SOS Free since 9/1/19. 20 lbs down, swelling gone from legs, excess oil gone from hair and face, and rubber/elastic/latex/spandex allergy dramatically improving. I have went from needing allergy meds 3 to 4 times a day down to once or twice a week. Hoping for full recovery from it as Dr. Brooke Goldner says it is possible. She is the doctor who accidentally cured her lupus, and now uses the same diet to cure other inflammatory diseases.

    This is the best demo of how mushrooms and onions brown just fine with no oil. Must try the fennel; looks interesting. Thanks so much for showing us such quick and simple WFPB meals. Love watching he channel.

    Thanks for the gravy recipe, Dillon! I add a few cloves of garlic to the instant pot before I cook the potatoes. The garlic gets nice and soft and is easy to mash with the potatoes. The potatoes get infused with a more subtle garlic taste.

      You could also wrap some cloves of garlic in some foil and put it in to roast with the veggies... Roasted garlic is super yummmmm

    I use water the potatoes were cooked in, but the yummiest is when I lightly saute/brown the minced garlic, and gently mix it into the completed mashed potatoes, cross your eyes delicious. First dish on the table to be completely eaten/wiped out.

    Made the gravy with Italian seasoning. Didn’t add the sautéed mushrooms and onions at the end. Just blended it smooth...on mashed potatoes. Couldn’t believe there was no salt. Sooooo good!!

    That looks so good Dillon! This will be my first plant based Thanksgiving. I figured out how to make creamy whipped potatoes. I blend cashews & almond milk in my Vitamixer to make a heavy cream consistency. Then I whip the potatoes with the cashew cream in my electric mixer. I also like to add onion & garlic power to the potatoes. The trick is to add a little cashew cream at a time, to prevent over doing it & making soupy potatoes.

    Hey Dillon...I finally got around to making this meal and it is delicious! After starting, I realized I didn't have any celery so I added celery salt which didn't result in the flavor I hoped for but was still delicious! I also discovered that 1 teaspoon of rosemary is way too much for my palate so will adjust next time. This really hit the spot! Thanks for all your creativity and passion!

    Great video!! One great way to make garlic mashed potatoes is to take the head of garlic, chop off the top so that you have a flat surface, place it on a sheet of aluminum paper, add a tablespoon of extra virgin olive oil and bake it for 30 minutes. When it’s done, just squeeze the garlic out into the mashed potatoes and mix well. It’s delicious!

      yep! baked garlic is my fave addition to mashed veges! but these days i never add oil to anything and actually i dont even miss it! in my opinion the lovely baked garlic taste & texture is made over-greasy by the addition of oil, and its actually plenty creamy without it.

    I worked at Sur La Table and learned a lot of odd facts. Learned that if you rice the potatoes they don't get glutony/gluey. Straight mashed potatoes get gluey if mashed direct.

    This is seriously one of my favorite recipes that you have put out. I felt the urge to make this meal immediately after watching your video I changed a few of the roasted veggies to ones I already had on hand...and it was a crowd pleaser.     Your gravy recipe is heavenly. Made this meal yesterday, but altered the gravy slightly: used less celery and more mushies. I added one bay leaf and a pinch of nutmeg and ground cloves, also a spritz lemon juice. After everything was soft, I liquefied it with the immersion blender right in the pot, I added some ground golden flax, and a tiny bit tapioca starch at the end to give it a bit more substance. O.M.G. There will now be always a jar with this gravy be in my fridge. Thanks for your video. Btw, I chopped the veggies for the gravy in the food processor before I cooked them, so they had an equal size, that made the work for the immersion blender easier. No reason to mess up the big blender, esp. for people without a dishwasher. My Braun Multiquick 7 (MQ735) is my favorite tool in the kitchen.

    I admit that I am a meat eater, but I am impressed by the ability of many vegans, to emulate milk or animal products while staying completely plant-based. I should definitely try this dish, as it does look very good.

    Add a little lemon juice to your potato water and your potatoes won't turn brown even when you're making potato pancakes or any other kind of potato products. It's the vitamin C from the lemon juice that keeps it fresh

    First Thanksgiving being totally plant based. Thinking in making something with portabellas to substitute for turkey. Would be about the size of the turkey pieces once the the bird is carved anyway. A nice, oil free vegan gravy would go well with it.

    I put salt in the water and put the potatoes and 2 or 3 minuets later take it out and it won't turn brown, it applies to apple and eggplants too.

    I just tried this gravy. In spite of me doing it wrong, it turned out wonderful with a delightful aroma of Thanksgiving. It turns out, I didn't have onions, so I used onion powder. The vegetables took a lot longer to saute than I had anticipated, and I ended the cooking too soon, so I didn't get a creamy gravy. Because i didn't have onions, I didn't include mushrooms in the finished gravy because I hate mushrooms. If I would have had onions for chunky gravy, i would have used mushrooms too. And finally, I don't have a blender. I only have a food processor, so again, it wasn't as creamy as it should have been. Definitely a keeper.

    I made a very different mushroom gravy for Thanksgiving and GOD I am so sorry I didn't find this until it was too late. I will be making and taking some stuff for Christmas dinner at my cousin's and I WILL be taking this entire thing as my meal along with a seven layer salad. This is just...wow.

    I always write two WW together, and then connect the middle bottom corners of the two WW with a Y underneath. It gives a kind of tree of life design, which I truely associate with WYW.

    Alright... I took the bait. I'm on the hook. You've reeled me in! (the best kind of fishing) The mushroom gravy looks super scrummy. I may or may not have let out an "ooooh yeeeehhhh" as the gravy began smothering the pureed potatoes. It all looks a lot like "get in my belly!" Thank you for all of your time and information that you generously share. I know it truly comes from a genuine place of wanting to make the world weller. Mistakenly, hubby picked up 2x 500g boxes of mushrooms, yesterday, instead of the one on the list. The universe is obviously suggesting I get right on it...       Dillon, the mushroom gravy is incredibly tasty! We all agree, it is to become a very regularly reoccurring menu item. Picky 17yr old even ate a couple helpings of veggies she would otherwise never put in her mouth, because the gravy is delicious and helped mask the flavours of said veggies.     Looks delicious. I'm fascinated how your recipes don't have oil or salt because they've always been staples for me but I like how you've incorporated water as a substitute in vegan recipes.

      It is so delicious! It is a learning curve to cook without oil and definitely takes some time to adjust to a completely SOS free diet. With that being said it is possible and once you are used to it, its a breeze and you won't even miss the oil or salt!

    I made the mushroom gravy little too thick but it’s delicious. A lot of leftover just for me. Lucky me. I will blend more water into the gravy and heat it up. Yummy potatoes and veggies too.

    Dylan you can also use the little spray bottle to put your marinace and then spray it on your vegetables as a cook and it doesn't even lie that's what I use is a dollar store spray bottle a little one. Also thank you for all the help that you give us all your videos are so helpful and you're so funny and I just think you're hilarious much love❤

      I don't think that the Avantgarde Vegan's recipes are complicated, it just seems to be because he is talking way too much, back and forth about the ingredients. Quite annoying, but he means it well. I love his BBQ sausages, though I came up with my own version of it

    This is the most awkward yet realistic cooking video I've ever watched. Lmao he is actually hilarious he looked so enthusiastic in the thumbnail and then I watched the video and everytime he said and into the bowl I fuckin lost it it's like he doesn't give a shit about the food he is cooking ahaha. No hate at all I fucking love this real entertainment. On a side note I might actually try it looks good 😂

    Save time. The potatoes are more nutritious with their skin on. The potatoes can be cooked with the veggies in a huge stock pot. Where's the beans? It looks like a feast!
