    REBEL CANNING ALERT!
I really had to sit and think, pray, and decide whether or not I was going to make this video. I never want to lead anyone astray but at the same time, must be honest with you that I can beans using a rebel canning method.....essentially an untested and unapproved method by the USDA.
The "no-soak method" of canning dried beans is not a tested or approved canning method. Do you your research before choosing to can your beans using this method.
Now, with that being said, I am going to share with you how I choose to can my beans. I am also answering some of the most frequently asked questions regarding canning beans, most of these questions can be found on THIS video:

I have a suggestion for your just under a cup... you can get precise so that you have the same exact amount of measurement in each jar by measuring your under a cup amount you like to use, by weighing your amount by grams... then, you will have your own personal recipe measurement 😊

I have always done the "no soak" method. Like you, many years ago I followed the canning book method and was sorely disappointed. Way over cooked. So my grandma taught me to do the "no soak" method and I've never turned back.😁 Can on sister, can on !!👍👍

Heather, ... (Holding back tears) you have made me feel like I can do this. You have made me feel like I will be successful. You have helped me feel confident that I DO have the power to help my family feel food secure. I got my tax return and I purchased a 921 pressure canner and a ball water bath canner and a bunch of jars. I had no idea where to start. The first video I watched was carrot cake jelly. You made me feel like I was at your house with you. You have inspired me more than you know. I have been using food pantries to get food lately and they give a lot of produce I found that many times it is last leg or more than we will ever eat. So, I thought to can the food. You helped me feel like I don't have to fear. I don't have to be food insecure..I don't have anything to fear. I thank you. I feel like you are my sister. Thank you. From the bottom of my heart.

I'm an old-time canner. Haven't done it in some time, now that I'm older. I still enjoy watching others can; makes me wistful. When you get older, you lose strength in your hands, and I just don't trust myself to lift hot jars out of the canner. Do it as long as you can. You'e a lovely young lady and a joy to watch can. Loved your "rebel" method. You're an inspiration. I think you're gonna get a lot of ladies wanting to can. I always enjoyed it; to me, it was relaxing. I know, sounds crazy.

That was one of the videos that I was searching for on the cheapest way to feed your family and prepping the old homestead ways.... I had found other videos first on that same pinto bean video, and then I found yours.. I must have watched it about 50 times since. And I think it is one of the best most step by step easy to follow instructional video that anyone could find on RUclips. I compared your video to others that's why I watched it so much in the last several months. And for someone who knows a little, and not alot, like me, I personally rated your video the best for beginners.

Rebel canners unite! ;) I put up a video back before the holidays just on how the various types of beans can up. I mentioned that the way I was canning them wasn't an approved method, but that it was how I do it, and the video was just for informational purposes. I got so much flack and had to block so many comments, I just couldn't believe it. I even got chastised for being so wasteful as to can beans that we won't be eating. At least it got people talking! You are a brave woman.

I also can beans the no soak method. I have done both ways and you are right, they turn to mush. Last beans I canned were pinto and I added onions and jalapeños. Used last night in beef and bean enchiladas. Was wonderful! I just started pressure canning last year, and have read many books to learn. I love all your videos on canning, you have made canning fun and easy for me and have taught me so much. Thank you!

Thank you for reposting this, Heather. How did you know I was getting ready to can beans? Can you see me??? 👀😅
I know you're primarily an ingredient canner, but do you ever can pre-made meals? I'm disabled and my kids are grown, so I've been canning soups and stews for those days when I'm in too much pain to do more than open a jar. I love having hearty, homemade meals ready to heat and eat (often right out of the pot for easier cleanup 🤫🤭). I know there are other RUclipsrs who do this, but you're my favorite. 🩷
Thank you for all of the fantastic information you share. I'm old enough to be your... really cool aunt, 😉 but I've learned SO MUCH from you over the years!

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  6 месяцев назад +1

I don't but thats because I am picky and a control freak and I like creating meals on the fly! hahaha So, I can make a soup or stew, but with just the canned ingredients, its easy enough for me to pick what I want in it, and add it all to a pot....add my spices....and heat it up! So easy! The issue with canning a soup or stew.....is that the more ingredients you add to that jar, the more variety you processing time is. So.....if you are making a beef stew.....a quart has to process for 90 minutes because of the beef......so every veggie you add into that jar is going to have to withstand a 90 minute processing. Some veggies only can for 30-35 minutes. Thats 3 times longer. There is nothing left of that veggie by the time you are done canning. It's mush. I am picky. I do not like those results, but some people have no problem with it. So I say, do what you enjoy!

Just discovered you. You are so adorable, knowledgeable and experienced. I have been canning for about 25 years, doing it 'my way'(self taught) based on my medical background of sterilizing surgical instruments...so I know what it takes to have a sterile product, in this case food. So I suppose this makes me a 'rebel canner'! I would venture to say 98% is rebel canning on my part, anywhere from veggies, meats, sauces, broths and prepared meals such as soups, stews, chili con carne, spaghetti meat sauce, etc. I have no bad results and my canned shelf life has been at least over 10 years. Over the years, I discovered pressure cooking everything was not really necessary for sterility and only needed for deep prolonged tenderizing cooking such as in this case with beans. Otherwise, most foods like veggies get over cooked. Up until now, I have been 'dry canning' beans, rice, flour and pasta for the purposes of 'survival prepping'. I'm not much of a bean consumer, but I like your method of no soak beans so I'll definitely give it a try as in the past I hated soaking beans which never worked well for me anyway. Again, thankyou for your dedication in sharing your knowledge.

Thanks for the wonderful step by step for canning beans. I am definitely going to can them the no soak method. I have canned them using the other method and don't like them. However, I use them by creaming them with a stick blender to thicken a hearty bean soup. That way I don't waste them.

I can beans both ways. I use black beans cooked the "regular way" for black bean burgers, and pintos cooked the "regular way" for refried beans. I usually can these after making a pot of beans we are eating for dinner that night lol. I learned the no soak method from grandma. I do not argue with my grandma's recipes lol! I do always put a clove of garlic, a slice of onion, and some sliced jalapeno in half them because that is pretty much what I will add to most of my bean recipes. Sometimes I add green chili. I always put on the jar what I add so I can pick what works best with what I'm making

So good to hear I’m not the only one who doesn’t always pre soak before canning dried beans... great video....BTW I loved your Music Heather, I detected a little Southern soul in the room. Lol, ....I grew up in Michigan but have been in Tennessee for the past 42 yrs..There’s nothing better than the country life...canning, dehydrating, preserving in every manner possible is an addiction to us Homesteaders...I love your channel, your just a doll! God bless you! ❤️❤️❤️❤️❤️❤️

I really appreciate your honesty in sharing this method of not presoaking or precooking the beans. I will definitely be doing your method for doing the chili beans. I generally always can according to the NCHFP guidelines. However, I also believe that some of these "rebel" methods are perfectly safe. I have a favorite "rebel" recipe for doing pickles that actually keeps them crisp. Most of the old ways of canning are still practiced by many Amish families today. So, like you said , do your own research and do what you are comfortable with. Thank you for sharing.

Great Job... I’ve been Canning dried beans for yrs.. my goodness you can buy beans for pennies on the lb. why buy that store bought canned stuff. I do a no soak method on all my beans except my pintos.. I do soak over night and cook with ham for about an hour and then pressure can. They are wonderful... black beans, chili beans, black eye peas, navy beans, kidney beans.. all are dry packed and water added. It’s the way to go for me... you save tons on canned goods. Also I like to add a splash of vinegar to my all American canner when I do a batch it keeps the inside of the canner from discoloring.

As being fairly new to canning, I SO appreciate your video!! I had just a water bath canner, until a few days ago when I brought my new pressure canner home and will be taking baby steps as I learn to safely use it. Have dehydrated for a long time and excited to learn the next step ... pressure canning. Thanking you again from West TN. New subscriber.
