    Oh my goodness...white vinegar in the rinse receptacle is brilliant! Im sure you know by now but for everyone reading these comments it is important to follow the Presto 23qt Canner instructions for water in the canner. That amount is 3 quarts, maybe a "little" extra for 90+ minute canning. For new canners that dont know about her "jiggler" on the steam valve, it is not the one that comes with your canner. The one she uses in the video is far better than the one that comes with your canner. It allows you to "listen to the jiggle" rather than be glued to looking at the gauge. Plus using the jiggler enables you to never have your pressure gauge tested for proper function. Using the juggler will enable you to never use the gauge again and gives you so much freedom to do other things in your kitchen while you are processing in the canner. Doent mean that you never look at the jiggler or the canner it just means you will memorize the sound and the "hula" that your juggler makes.

    I have two Prestos. I like them because they are not too heavy for old ladies like me. Have done well for me over the years. First time I watched one of your videos. Nicely done. I use the Amish book a lot.

    Great video. Can't wait to try no soaking. Just a quick note though. The owner's manual for your Presto doesn't say three inches of water. It says 3 quarts.

    I used a permanent marker to draw a line on the inside of my canner so I don’t have to measure the water every time. Every little bit of time saved helps!😉

      The inside of the canner has marks built in for different water levels.

    Love your tutorial! About 6 months ago I ran a load of beans and also had two that did not seal. Putting them in the refrigerator wasn't an option so put them in clean jars with carefully cleaned rims, new lids and clean rings. I also filled and processed
    Quart jars of filtered water for the emergency shelf (why run an almost empty canner?). I Processed the batch for the full 75 min. And let the pot sit until there were no indications of pressure. All of the jars sealed just fine. Curiosity got the better of me so I opened a jar of the double processed navy beans. They were not quite as firm as the no soak method jars --but they weren't mushy.
    I have switched to the no soak method. It is soooo much faster!

    Great video. We have only done water bath canning. But just recently purchased the Nesco electric pressure CANNURE and cooker(saw it first on Texas Boys) We have canned potatoes, carrots and beans. NOW I've got to try it this way. Look so much easier. The canner you are using is one I want to buy when I get my nerve up to use one. Thanks again.

    Thanks for the book suggestions. I’m new here and I love your way. I’m a well seasoned canner yet I’m learning new things with each video. I’m going to use this method today to can up 4 pounds of kidney beans. It’s not a huge undertaking it I’m excited none the less.

      Please don't believe everything you see in videos! This lady is trustworthy but don't ever trust anyone who tells you to put a mason jar into the oven!! Lots and lots of new canners have believed people that bake bread and cakes in canning jars in the oven and then they turn it upside down to force a seal. I have been getting a lot of those videos and just pass right by!! :-). Welcome to canning. :-)

    There's just something about the "Ping" lol. It must be the weekend for canning. I put up two cases of tomatoes into tomato sauce, and tomato ginger preserves. Mmmmmm.

    May I make a safety suggestion. The black plug on the lid is an emergency valve. Please turn pot so that black plug is in the back. If it blows out, you could be severely harmed.

    You really did a great teaching video. Your pintos that you showed at the end of the video had a more than 1 inch headspace. I mention this because mine did the same thing, and I was worried that might not keep them safe.

    It’s also very light in weight for a good sized pressure cooker. I alway wet the gasket. It’s after that the heavy American with the screw down handles.

    Thank you for this tutorial! I’ve canned beans, but I’ve always soaked them first. Looking at the level of liquid in the jars, it doesn’t look like you got those three too full. I think maybe you didn’t tighten them down enough. You mentioned that you shouldn’t tighten them down too tight because they will loosen, but I think they actually tighten down when they vacuum down.

    I use old cardboard to put my jars on when they come out of the canner. It is especially nice when I'm doing meat. The cardboard absorbs any mess and then can be tossed. Usually they end up in the garden under mulch.

      Good idea! I like using dog pee pads. Nice and big and disposable for same reasons. However cardboard can be acquired for free, from many places :-)

    I have canned beans 4 times already using this exact method and it works great. Phil likes Adobo in his beans but I haven’t seen a recipe to can Adobo so I do the beans plain and he seasons when heating. I’ll have to ask him if he would like that Fiesta Ranch seasoning, I watched Leisas video on it. She’s a great canner, that’s how I got into canning.

    I wish you could have seen my eyes pop out when you put the uncooked beans into the jar. People keep telling me pressure canning is easy and I have been too afraid to try it with meat and soup, etc. BUT your video was so clear, I can't wait to try it. I did not know you did not have to cook the beans first. Do you make uncooked soup in the jars also? This is so fun. This could be my new hobby. Thanks.

      Heartiness Approach yes I do soup from raw veg. I think I do more canning in winter and heat house at same time lol.

      Heartiness Approach Rhenda, the first time I canned beans this way I was a nervous wreck. I was new to canning and felt very unsure of myself. After I got over the anxiety of it, I was so proud of myself.
      I’m still nervous to try meat, but when it gets closer to St. Pats, I plan on starting with corned beef.

      Dry beans yes, I’ve been doing that for years. Also raw meat, super easy. I’ve got both my canner going right now. Love the products I make and they do taste better than store bought.

    Cracked jars...light cracks.. can be used for dried product storage. I use mine for dried herbs or dried fruits or dehydrated foods.

    I enjoyed your video. I've done lots of canning but can always learn. I usually check my jars after taking them out of the canner within a couple of hours. If I noticed they didn't seal (checking to see if the middle went down) I place them in the frig. I don't allow them to sit 18 hours. I guess I'm a little afraid of getting ill from spoilage.

    A good trick I always use is a big floor fan. When I turn the heat down and the pressure gauge goes up to much I just ran towards the pot, starts going down to much, i turn it away. How to can with an old stove :)

    Love this video! I also have a 16 and a 23 qt. presto canner and mine said to put in 3 quarts of water and you put in 6 quarts. I was wondering why the difference. New to pressure canning and not to water bath canning, that I have been doing for years, lol, like for 40. Like I said really like your videos, all of them.

    Thank you for your video.I am canning beans next weekend. I also have a Presto canner, jiggle only. No Dial gauge. In my canner there are 3 lines engraved on the inside of my canner. My owners manual said to fill it up to the bottom for pressure canning. That is the 3 inch mark I believe. Does your canner have lines engraved on the inside as well?

    My jars at this moment in time are all new so they better not be cracked! I use imperfect jars to put beans or whatever in to decorate the kitchen.

    Your video makes me want to can something today. Super fine explanation of the step by step process of canning. Now I’ve got to see what’s lurking in my cupboard to can...Not beans,as I’ve already stockpiled them and I’m a widow, so after giving as many away to friends and family I still have too many.     I LOVE canning! I broke my leg very badly last summer so I was unable to can last summer😫. I’m still using a wheel chair but I’m ready to start canning again! However my husband is overprotective and says it will be to much on me to can anything yet🤪. Since I can’t get to my canner he wins for now BUT the battle isn’t over yet! I will be canning soon🤣
    He actually loves it when I can and loves the food that comes from it! My canned food was our main staple when I came home (I was in the hospital and then rehab for a whole month). It was such a blessing to be able to open a jar of meat and veggies and have a home cooked meal in a matter of minutes! Since canning is something that I do constantly we were very fortunate to have it ready for this stage in our life. Now I just have to start back into stocking my shelves again.
    Have you tried the festa beans yet? Did you like them? I was thinking about trying them as well.

      @@deborahwiideman2456 yes it was but I thank you anyway! I am back at canning once again! As a matter of fact I canned 30 pounds of potatoes yesterday, they look so pretty in the jars waiting to be washed and labeled 😄

    Good video. I'm in a couple of canning groups on facebook, and LOTS of people have had problems with lids not sealing this year. (It seems moreso than usual). I've heard the manufacturer has changed the lids, supposedly so that they don't have to be heated before use, which is causing an increase in seal failures. I still heat mine though.
    Now I must go see what exactly a fiesta bean tastes like. I'm looking for a good chili bean canning recipe (using pintos)-- if you know of one please share. 😉

    I use those for odds and ends in my sewing room. As long as I won’t cut myself.
