I have 2 pressure cans. Last year I made it a mission to learn....how to pressure can green beans. I pressure canned green beans 3yrs ago. Failed horribly. I did everything wrong. Alot water siphon out. Just all around bad. Last year.....I sat down with my canner instruction booklet and watched videos on RUclips. I had an awesome canning. 86 pints of garden fresh beans. Store bought can't touch these beans. I gave some to my family...it reminded them of old days of home canned food. Just can't beat fresh produce....home canned. Sooo much better for you too. Ty Jess for making this video. I want to learn how to pressure can....other foods to now.

Just a couple tips: If you add apple cider vinegar to the soak water, drain as normal and boil in fresh water, it helps reduce the gas-inducing properties in beans. Also, if you don't use the cooking water, but strain and use either fresh water or plain broth as canning liquid, it can increase the flavor of the canned beans.

I am 60, and canned with momma growing up. We used her mother's pressure canner. I am proud to know that when momma was no longer comfortable using it. It's hard when you have arthritis in your hands. I love knowing that the Maid of Honor canner on my stove is the same one grandmother used.

I want canned foods in my pantry. Now I only have store canned because my failure at canning was trying to be self taught. I need to SEE and UNDERSTAND what will/can happen…You show me what I need and can do! So, I’m going to try it again! I’m 74….never too old to learn a new thing!!! Thank you so much!!!!❤❤❤

Awesome video! I just canned some beans yesterday before seeing this. I do pints most of the time.. I soak them inside the jars instead of one big container because it helps me know how much beans I need to soak. So I do 1/2 cup dry beans in each jar, fill them up with water, and leave them on the counter overnight. Then I pour that water out, rinse them once, and refill them with fresh water. To avoid the temp change, I don’t pre-cook the beans but I do put them in the canner before I turn it on so they gradually warm up with it. Seems to work well, but I loved seeing the way you did it too! Thanks!

Always drain off your original bean rinse water!! The beans leaked out their lectins, which are bad for your digestive tract. The lectins are what give you the bloating and gas after you eat beans. That is the whole reason for soaking them, plus you want them to swell in size, of course, so you will have a proper headspace. I don't think people realize that. I love to can beans, too!

One ☝️ thing I enjoyed in the UK 🇬🇧 was buying food without any crazy preservatives in it. They had the best food that was fresh prepared like pasta to duck to organic vegetables & fish that was really fresh like salmon from Scotland. Fast food is the worst. So many more restrictions there about food you buy at the grocery stores 😊❤👍🏼❤️☝️😁

You have been pressure canning longer than I have, but one thing I learned is to never use a knife to debubble the jars. It could (over time) scratch the inside of the jar creating weak spots that can fail sometime down the line.

I, too, have difficulty thinking ahead and like canned beans that I can pull off the shelf and make a quick meal and decided it is best to do lots of beans all at once instead of going through the soaking process over and over again. Thanks for this video. You did such a great job!! Wow... thank you for making it THAT simple ❤ I would absolutely be canning tomorrow if they were a suitable pressure canner available in Denmark. We have a long history of water canning og preserving with vinegear and suger. But pressure canning is still only for the few. I'll consider ordering an "All American" from the states.. but wow.. the shipping cost 😱...But on a happier note.. "le parfait" jars or similar are very cheap in Denmark and can be just like for ever... without replacing the rubber rim. In fact, in most 2. hand shops - you can find perfekt jars for 1 or 2 dollars - depending on size. So maybe it will be worth it in the long run to pay the +200 dollers for the "All American" I'll watch some more of your lovely videos and fall in love with pressure canning - im sure 😍

Love this 😀 This is for what I can "ingredient" canning. I also like to make some ready to eat meals with ham, onions, use chicken broth instead of water, and a little Tony Chacheri's (have to go easy on the spice because they intensify) So easy after working a 10 hour day. Pro Tip: If you’re using well water that might have mineral content, add a splash of white vinegar to the canner before processing. This helps reduce the mineral buildup on your jars. If you forget to add it, wipe jars down with vinegar dampened paper towel, then rinse the jars under tepid water, drying throughly with a clean towel. Don’t forget to label and date your jars! Just get in the habit of doing this even if you’re sure you will
    remember what the contents is.

    Great tutorial Jess!
I soak my beans with a splash of apple cider vinegar. This helps to break down the phytic acid that can make beans hard to digest ( that's why you toot when you eat beans😁).
I love having home canned beans available. I've made black bean salsa in the summer, refried beans whenever, added them to chili or soups. It's a great pantry staple.
PS-you skipped the step of making sure you wash your jars before you put them away. Also suggest a splash of white vinegar in the canning water to prevent mineral build up in the jars if you have well water.💞
Many blessings to you and everyone else as always.

Hi Jess - I love canning beans, it makes life so much easier for a quick dinner. When I'm canning my beans I don't soak them first and put 1 cup of beans in a quart or or half cup in a pint and fill with water or broth both at room temp and put in the "cold" canner and everything heats up together. They come out great and takes much less time. See starting time is almost here thank goodness!

If you follow the "rules", the reason to release any air bubbles is to make sure no air stays in the jar. Pressure canning can remove air at the top, but not always remove any air bubbles lower down in the jar. I am a rebel canner, but do follow this practice to ensure it seals safely. :) BTW, love your videos, you can and cook like I do!

It really doesn't take that long to get used to the process and you are right, listening for the rattling just becomes second nature. Jess, thank you for all your wonderful videos!! I have a hint for you...I have heard you say that when you roast your tomatoes to can sauces, you drain the clear liquid. When I cook tomatoes for sauces I like to drain the clear liquid to make it thicker without cooking it down, (that can lead to a sickening sweet flavor in my opinion) that clear liquid is what I like to use when canning my dry beans. If I don't want to do the dry beans at that time, I just can it and open it to just drink or open it to can the dry beans later.

I have a small All American canner 10qt. I have a hard time getting the pressure just right because I have cast iron burners. I packed it away. Between trying to get the cover on straight and trying to get the pressure right I was a nervous wreck. My husband even took cover as I was so stressed out. LOL. Love this video. I’ll try again. Thank you so much.

Thank you, Jess! I bought a canner in December thinking I was ready and then realized I am apparently terrified of canning. 😅 You've given me the confidence to dive in. Thank you for the tutorial!

Hey Jess! Thank you for doing these videos. I wasn’t scared to do it, but I am a learner by watching it be done. I have watched other videos about how to can and still couldn’t wrap my mind around it. You broke it down enough that not only do I understand but I’m 💯 that I can do it with no questions asked. Thanks for being such an amazing teacher!! Happy Canning!

I started canning a handful of items in the past approximately 1 1/2 years. This past summer I started to venture out and try some new items. I haven’t had a chance to use it yet but I can’t wait to try my beef broth from the cow we raised!

I pressure canned my first 7 pints of beans today. Much thanks to you and all the content creators for the videos of encouragement! ❤ It was relieving when the process was done and my canner didn’t explode! 😂

I have come to love pressure canning. I love the convenience of home canned ingredients and I hate the waste of all the empty cans I was throwing away from the store. But I'm at the opposite end of the family size scale. There's just 2 of us so, sometimes, even pints are too much food. That's why I'm doing more canning in half-pints because it's just the right amount for us (and, yes, I know that half-pints get processed for the same length of time as pints). Canning my own smaller jars also saves me money because sometimes the smaller cans at the store are nearly the same price as the larger cans and, this way, I don't feel obligated to buy the larger cans because of the cost savings but also don't have to deal with what to do with the leftovers. I'm loving your new channel. Can't wait to see what you do here once the harvest starts coming in from your garden.

Thank you so much for these great videos! I’m 70+ years old and want to learn pressure canning. I’ve never done it before. I’m only made jams and jellies and pickles. This is a great video on “how to”!! I’ve only recently started to follow you and I’ve already found some great information! Keep up the good work!! ❤

I’ve done a lot of water bath canning, but just picked up a thrifted presto pressure canner yesterday. This video was so helpful, I’m glad you started with a simple recipe. I’ve even hearing on videos that you have to get your cooker to tested, can you explain this better? Thanks for all your videos. Hugs from Ontario Canada

Thank you Jess, I have had several different videos and "tutorials" that I have watched and become even more hesitant to learn. This has definitely helped, and as someone who has not started water-bath canning yet and just wanting to learn before investing you have given me a new perspective and I can't thank you enough 😊

Great video. I've been back to canning the past 3 years after a 35 year absence. Preserving food is critical for the success of mine and my husband's food budget since we are retired and live 98% on our social security (by choice). When planning my garden I keep my food preservation in mind. 😊 ~Rhonda

This is exactly what I needed to watch! I tried canning beans about a month ago and they syphoned out and we had to eat them all within a week so they didn't go bad🤢. I am not going to give up! Thanks for always sharing your wisdom, watching you is always like hanging out with and learning from a cherished friend.

2024 is the year for me to bein pressure canning! I have so many things that I want to preserve that cannot be done by water bath canning (the only way I’ve canned up to this point). I have a great charro bean recipe that my family loves, so I would love to make those and have them on my pantry shelf instead of having to go thru the time to make them every time we want them for dinner. I also want to be able to can green beans from our garden instead of filling my freezer with them… so many ideas in my head! 😊

Excellent tutorial Jess. I love pressure canning and avoid waterbath canning. I have an All American and an electric Presto canner. Love them both. The electric is so hands off and lovely for small batches. You can't beat an All American for big batches. Thank you for dispelling the fear of canning.

Wonderful tutorial! I recently started pressure canning with a friend and she had one blow on her and was traumatized for a while. I ran the canner the first time and now we are canning machines doing all kinds of stuff. Takes a few to get situated with keeping pressure, but it's definitely easier then I thought it would be. Reminds me so much of my childhood with the pressure cooker going.

I often bring the beans to a boil then turn off and let sit an hour. I change the water and cook. The beans rehydrate faster that way.

THIS IS THE BEST INSTRUCTIONAL VIDEO!! I bought my American canner 6 months ago. Watched a ton of how to videos before I canned my first jars of corn. Then we did jam (I know you can water bath but I just wanted to try it) Then we did green beans, stew meat. Lastly we canned some of our meat chickens with the bones. All of that to say, if this had been available then, it would’ve saved me a ton of time.
Yours was far away and above all of the rest!
    Good job 👏 👏👏
