Enjoyed your personal approach giving instructions as well as added insight pertaining to the ingredients and their usage.. I will be 80 in May 2024 and grew up on a 300 acre farm in rural Tennessee. I deeply appreciate you sharing good country cooking to a population unaware of joys home cooking brings. May God bathe you and your with all His Gifts.

I loved your recipe. I grew up in southern Kentucky and had many times. Just a suggestion, once cooked lay the salmon patties on a wire rack to drain. It makes them super crisy and not greasy. The paper towels will make them soggy. I have cooked both ways for years and the rack makes them so much better. Laying in the grease on a paper towel will make the bottom super soggy. It makes a world of difference. Just my humble opinion. I love the hot sauce on mine also.

I'm from Mississippi and we made biscuits, salmon patties, with syrup or rice, fried green tomatoes. Different people eat them different ways. I don't care for the cornmeal so I just use a couple tablespoons of flour, onions, eggs, salt, pepper. The onions give them the right amount of flavor and they're quite tasty.

I am also from Mississippi and grew up eating these for supper. Of course I learned mom’s recipe but gradually updated as I got older. We used fresh minced onion or green onions, can of mackerel with flour and an egg with salt, pepper, garlic. I upgraded to salmon and add corn meal to mine for that crunch. We have always eaten it with mustard on the patty and whatever veg was available from the garden. Ummm- fried green tomatoes. Hubby hates them so I only cook it when I can air the house out before he gets home. We had church folks who said they ate jelly on their patties. I don’t think of this as a breakfast food.

When I was growing up my Mom would make the salmon cakes/salmon patties with grits and a side of scrambled eggs for breakfast. And she would also sometimes cook them for dinner with a side of rice and a side of southern style vegetables ( such as cabbage w/ smoked turkey, string beans w/ smoked turkey, fried corn or fried okra)! Absolutely Delicious!

I’m Creole so I usually add creole seasoning. I use garlic breadcrumbs, pepper( because it makes everything within reason taste just a lil better, and onion powder as well and I add one cooked potatoe smashed into it. Makes it more moist. I either have dirty rice or jambalaya with it. I’ve also used Worcestershire sauce lots of times. So good.

    Hello, Brandon 👋🏽
Both of my parents were from Louisiana, which I loved visiting each summer. I grew up eating salmon croquettes in Chicago and we sometimes had them with dinner fries. My mom told me the story of how she found out that my siblings use to eat the biscuits & syrup and then throwing away the croquettes . One day, mom saw some croquettes peeking out from under some paper in the garbage can. Boy I'm glad I was too little to be apart of that plan because, my parents didn't play that! 🤦🏽‍♀️
I really enjoy your channel as you're earthy and it's easy to relate to. Continued success with your channel 🎉

Gimme some! Unknowingly, I have been making them in a cast iron Aeblskiver pan, which is ideal honestly. I still haven't made Aeblskivers yet, but I think I will prepare them as a side since so many comments mentioned biscuits, and just fry the croquets in a cast iron skillet 🍳. Thanks y'all, from beautiful Colorado!

We had salmon croquettes and creamy grits for breakfast or dinner. When I make them I use sauteed onions, jalepenos and potatoes (diced) with seasoning. I use eggs to hold the ingredients together (no bread crumbs, flour, or cornmeal). You can also use left over mashed potatoes or scoops of baked potato, not to overwhelm the salmon of course. I use rolled Ritz cracker crumbs to coat the patties before frying. Drain and serve. Croquettes are delicious with a side dish of cabbage/cole slaw too. Yum, yum, yummy!

Because we lived here n Seattle my dad use to go fishing for salmon. The hats what we used.
Today I use your recipe but with two cans of wild caught salmon.
    Very taste.

    SC and FL roots here!
One of my favorite breakfasts’ for dinner served with grits.
Salmon (only croquettes) is my go to because mackerel is too fishy. Long story for another time.😂
I’ve used breadcrumbs, flour or panko to bind them.
I always use flour and cornmeal for dredging because I love the added crunch both provide.
My family loves all kinds of spicy, so I use a pinch of cayenne and fresh jalapeño/habanero with some seeds. I do use herbs in my mix. It just depends on how I feel which ones I use.
    😂
I always make enough croquettes to make a sandwich and I grew up making them using a good mustard and Tabasco Sauce only on the croquette to top that off.
If I were to use a side other than grits it would be a seasoned rice made in ways to numerous to mention. That said I prefer a good mixed green salad or my homemade coleslaw also made in different ways to accompany the rice. I do enjoy spaghetti w/fish and that’s another option. Hush puppies or cornbread if there is a bread served bc I I’m fine w/o it!
    Love this episode!

Hi I make salmon patties too and add tuna. The onions are raw (chopped very fine). Two eggs are whisked, seasoned with garlic, pepper & salt. Then rye or spelt flour is sprinkled in the bowl and mixed together. The patties are formed (about 1/3 cup) fried in grapeseed oil until they're golden brown.
P.s. with grandmom we ate patties w/ grits, stewed tomatoes and bacon.

First time viewer. Thanks for the tip on sauteing the veggies. I've never made them and I'm in my 60's. I will now though, your recipe is so simple too. My parents were from the Midwest and New England so we didn't eat that kind of stuff. This is funny, the family down the street from us had salmon croquettes often, with fried potatoes or okra. After my family was done with dinner my little sis and I would go to those neighbor's house (we played with their kids) and eat their leftovers, because their food was so different. They never said a word (bless their hearts), they probably thought we weren't being fed lol. Our street was very family oriented, Gosh, those were the days!

This brother is from the south, we like them with grits at any time of the day ( with a little hot sauce). Great video, keep up the good work.

I'm from New England, and salmon or chicken croquettes were on the menus of a lot of diners, or were daily specials. Those were the only places I saw them. If you are in northern Maine, you will find sauce au salmon, which is creamed canned salmon, served over mashed potatoes. Canned salmon is great to have on hand. (The bones are calcium and good for you )

Praise the Lord 🙌🏾. I bought a can of salmon 2 months ago because my husband wanted salmon croquettes. The only thing is I have never cooked them. Remarkably your video appeared brought back fond memories so I am going to the store for the other ingredients so that I can make this dish. I'm from Cali and my mom mixed both jack mack and salmon to make croquettes prepared exactly like yours with that cornmeal/flour mixture coating before frying. We had white buttered rice (I always added sugar to my rice) and green beans 😋. tfs, oh and I love them as a sandwich the next day.

Why sugar added to rice since it's a starch that breaks down to sugar? What does the sugar do to the rice for you? Does it make the rice taste sweet? Thanks for what may be a tip for me to try.

@Car Bar, it is the sweetness for me. Thanks for asking 🙂

My family is from Nashville TN,as a little kid I remember my great grandmother would boil potatoes and onions adding that to the salmon along with all of the seasoning corn meal and flower. Back then we had lard to fry in. the best part of that meal was the butter milk biscuits home made preserves with rice and peas. That was the good old days!!!🎉

She has passed now, but i miss her so much. You made me smile Thank you
