As a child my moma( grandma)use to make these salmon croquettes and I remember my moma used that can of grease on the stove for everything, chicken, fish, bacon, cut up potatoes etc.

The bones of canned salmon are VERY soft, and are an EXCELLENT source of calcium! My mom made salmon croquettes throughout our childhood and told us to stop trying to pick those bones out! They're good for you! Of course, now I make salmon patties and croquettes from my leftover oven baked salmon. A 100% improvement over the canned version. No sense wasting any salmon from a previous dinner! Thanks for the memories of my mama. She, too, always fried hers in a cast iron skillet. So do I. Pssst....a tablespoon of bacon drippings added to the cooking oil will ALWAYS put it over the top.

I’m in Houston Texas. I put red and green bell peppers and onions in mines. I use Italian breadcrumbs and one egg per can and I season it with old bay. I also make a sauce on the side using Mayo, garlic, dill, lemon juice and tad bit of salt and pepper.🥰

I toast my bread & crumble it up & dust them with light yellow corn meal begire frying. Serve with smothered potatoes & onion, Hunty makes for a delicious breakfast, brunch or dinner. You have the most graceful, delicate touch while cooking. You mix the ingredients without mashing it up, you form the patties without squeezing the mix, you turn the patties without flipping them around. You treat it like something you would really want eat, best cooking lesson I’ve ever seen. I’m going to make these today!
BTW reusing grease is a lost skill when I grew up my mom kept a lard crock that was a collection of reusable cooking grease. Clean hands is a key part of safe cooking.👍

Yes mam! Salmon patties, southern stewed Potatoes, Corn Bread and Turnip greens, was what my mama made when I was growing up. Can't beat it. I like Mustard on top of my Salmon patties!
