To add more to the backstory: Paseo originally went bankrupt because its employees filed a lawsuit against the company alleging Paseo owed a significant amount in wages and overtime pay that they refused to pay to its employees and that they failed to abide by labor laws regarding breaks and meals. Racial discrimination was also brought in the lawsuit in regarding how Lorenzo Lorenzo, owner of Paseo at the time, treated his employees, particularly Hispanic ones. During the investigation, it was discovered Paseo owed a lot to its vendors and to utilities as well. The debt had accumulated so much that Lorenzo Lorenzo was forced to file Chapter 7 bankruptcy and liquidate its assets in order to pay back all of its creditors and the wages owed to its workers. Interestingly, the debt owed was relatively small compared to the amount of revenue Paseo pulled in each year--in total, the debt owed amounted to over $30,000 dollars whereas Paseo grossed $2 million in annual sales (before they filed bankruptcy). During the liquidation, there were a lot of bids for acquiring Paseo, but Lorenzo Lorenzo adamantly refused to sell the recipe. It's rumored Lorenzo would come in once a week to make the secret sauce that gave Paseo (and now Un Bien) its unique, citrusy flavor. After the liquidation was completed, Lorenzo, now free of debt, can open up another shop: Un Bien, now run by his sons.
karuven yeah I remember when Paseo shut down I was shocked because the place literally has lines out the door any time that it’s open. They were terribly managed.
I don’t know how much this sandwich has changed since the original owner left paseo but I went here back around 2009 and got the Cuban roast pork sandwich with a side of beans and rice and it was by far the best meal I’ve ever had. It was SO GOOD that it truly put me into a euphoric state, I literally felt high, like a giddy feeling that you get from opiates. Not even kidding, it was so delicious that I had an overwhelming emotional reaction to it and cried tears of happiness. I know most people will probably read this and think I’m a weirdo but I don’t care, I have to give this masterpiece of food the credit it’s due. The pork was the juiciest, most tender, most flavorful meat I’ve ever tasted. The caramelized onions were plump, sweet, so flavorful I could’ve eaten them plain and loved it, they almost tasted like the perfect mix between a fruit and a vegetable, sweet and savory in the best possible way, the sauce was tangy and creamy, just another layer of amazing flavor on the sandwich. Lastly it was all served on the most crispy on the outside, soft on the inside roll ever, just perfectly toasted to a godly level. Not to mention the beans and rice, both cooked to absolute perfection and the black beans were flavored like nothing else, you could taste a ton of spices and bay leaf, but it wasn’t spicy, just perfectly seasoned. AMAZING. I wish everyone on earth could try the meal I had that day.
As a local and regular of this location I can confirm that Mario is just as cool in real life as he is in this video. 10/10 class act always holds a great conversation too. This place is the real deal
Went to Paseo in early 2014. I think it was the best thing I ate in Seattle. Was quite saddened it had closed down due to the owners not paying wages to their workers. Glad to see it's back! Keep up the good work Lucas!
Had some leftover pulled pork and torta rolls and made some caramelized onions ribbons (along with mayo and pickled jalapenos) and made me a sandwich inspired by this and it was one of the greatest sandwiches I've eaten.
My boyfriend and I went to Un Bien and loved it!! I got the pork sandwich and it was delicious..esp. the onions. The lettuce somehow stayed crispy and the bread was soft. Definitely going again! Thanks for showing this. :)
I went to Un Bien yesterday and the Caribbean Roast sandwich was awesome! Absolutely messy but delicious! I really wanted to try the corn but it’s off season...I will be going back!
Well, I'm glad I got to go to the original Paseo before it closed, in May, 2014, and a couple of months before it closed that year. I had the Cuban Roast on the second visit, but on the first visit, I had the incredible Havana Seared Scallops sandwich, and the one with the pork roast, and smoked ham and swiss. I think that was called The Midnight Cuban Press, or something.
Just curious, when you film in places where people will be in the shot like in Un Bien with the 2 group of ladies in the background, do you give them a heads up?
I was the Chef at a small kitchen & beer place. We knew there was a "silent" partner (the $$ guy) but the day to day owner was very knowledgeable about beer. The kitchen/menu was mine to run/create, the place brought in TONS of money per sq. ft. After two years there was an ownership dispute, first the very informed and professional "beer masters" left. Shortly after I left. The deep pockets "silent owner" replaced us easily....1 year later the place went bankrupt. I was "texted" about 2 months after I left by the new chefs (friends of mine) how to make the staple menu items (sauces, marinades, what kind of potatoes EVERYTHING). Front of the house never trained anyone and I never wrote down a single recipe. The day to day owner told us not to when we first started. It was a great place but sadly great things never last at their peak.
Lucas Peterson PLEASE VISIT PHILIPPINES THIS YEAR :D I'd love to see you try everything that Filipino cuisine has to offer. It is so underrated. Happy eating. :)
You know, I think you should have tried the #2 at Paseo -- the grilled pork loin. That's my favorite one there. I definitely like it more than the roast which has that pulled pork texture which is only ever ok to me no matter how many times I try it in its various renditions across the southern US.
un bien will always top paseos IMO i love both but grabbing a sandwhich from un bien then hitting up chucks hop shop in the summer for a brew is just amazing
For the record, there are some original staff members at both locations. Haven't been back to the original Paseo location since it reopened, but I go to Un Bien all the time. So damn good. Dude is right, the steak sandwich is fuckin' bomb. I've had most things on the menu and haven't been disappointed yet. It is true, we are sandiwch rich here in Seattle.
So which ep at which 00:00 is Lucas in West World? Will watch but don't want to watch the whole series or even a whole episode. Not so much much a terebi fan.
Mario is one of my favorite humans ever! Always so happy and always remembers you no matter how often you come back! Paseo is hot garbage now. Minimal care put into their sandwiches, and the pork is fucking dry as hell almost all the time. Ryan is just cashing in on the paseo name. Any real Seattleite will tell you Un bien is where the true experience is.
There is no debate. Un Bien is the best. It's as good as Paseo used to be because that's what it is; the old paseo. When locals come into town after hearing about paseo, they go to what paseo is now but they should be going to Un Bien.
Peco's Pit is a perfect example of crappy west coast BBQ. I've eaten there dozens of times but I acknowledge that that stuff wouldn't stay in business for one week in the midwest or south.
The fish and Scallops are actually better than the pork, and Un Bien is far better than Paseo as they have the authentic recipes. And Mario is the best!

karuven so Lorenzo Lorenzo was money laundering or not paying his bills
karuven can someone simplify this for me I'm too dumb but I'm really interested in what is he/she trying to say
That seems awfully suspicious, if it really was only that much debt.
Jameel
This Lorenzo dude was either cheap af and not paying his expenses...or his business was a front for crime
karuven yeah I remember when Paseo shut down I was shocked because the place literally has lines out the door any time that it’s open. They were terribly managed.
"Of course my brother"
"Fo' sho"
Daniel Lin what's up my man?
"Thanks my dude"
"I know you want that corn"
You'd think as brothers they would know some of this stuff by now. They need to meet up more, use the holidays etc. Or call. :)
"We do great food. They do great product, for sure." lol the rivalry is real

Excellent editing when Ryan of Paseo was trying to say nice things about Un Bien. 😂👍 Fantastic looking sandwiches all. Damn.
Lmao can't believe i never noticed that before! Lucas and the team is trying to make the world a better place haha
Lucas, I discovered your series here on Eater just recently. I just want to say that you're a great host, probably the best in Eater.
imagine this episode if the food was bad
"this taste bad"
"fosho my man"
lol
Big Boss Two number 9's
I like this concept... a show eating only bad food ...
I reckon Man vs Food is already invented.
Lucas Peterson dont do that to yourself! 😅
Went to Paseo in early 2014. I think it was the best thing I ate in Seattle. Was quite saddened it had closed down due to the owners not paying wages to their workers. Glad to see it's back! Keep up the good work Lucas!
tenchichrono
At 1:15. That chicks super snag of that sauce bottle. Sickkkkk
Thank you for a great video and seeing you guys reply to comments is so awesome. I wish I could give more than 1 thumbs up.
Thanks for watching!
Had some leftover pulled pork and torta rolls and made some caramelized onions ribbons (along with mayo and pickled jalapenos) and made me a sandwich inspired by this and it was one of the greatest sandwiches I've eaten.
Sounds awesome!

love the back stories on the restaurants. Always interesting.
Lucas = food storytelling genius
thanks rayfil
Rayfil Wong I think you're his number one fan. I, however, am not a fan at all...
Aww why not he’s a great host!
Much respect for picking a sandwich and not sitting on the fence like most food shows do👊
Appreciate that you didn't cop out with, they're both the best and showed some honesty.
so lucky to live a few miles from both locations. thanks for another great episode, Lucas!
Who else is sad that he didn't plug the "FALLS OFF THE BONE!" lady clip from LA? :D Even still, as always, great job and keep up the great work Lucas!
Hey Lucas, saw you in Westworld! Should have hopped on that tang bruh!
thewhiteblurr is that really him. saw him but maybe i was wrong
His IMDB's profile listed the show, heheh /o/
I've fanboy'd so hard when my wife recognized him in WW.
I will not have u talking about thandie newton's tang like that
Wow, this is the longest segment. More of this length please.
It was really bothering me how that lady at the back kept looking back geez
yeah...
the other group started distracting me too! LOL
I know hella annoying
And I thought I was easily distracted. It’s not too bad
ever considered that these people just want to enjoy their sandwhich? instead they are getting annoyed by a loud youtuber and his camera crew.
awesome review as usual. thanks for always making me hungry at 2am :)
I have to say, on some of these videos you have people always eyeing you but good job on keeping your cool and making awesome videos!
My boyfriend and I went to Un Bien and loved it!! I got the pork sandwich and it was delicious..esp. the onions. The lettuce somehow stayed crispy and the bread was soft. Definitely going again! Thanks for showing this. :)
That first bite was awesome. Since I'm no where near Seattle, I might have to try it at home.
idk why I love watching this guy do these reviews
I went to Un Bien yesterday and the Caribbean Roast sandwich was awesome! Absolutely messy but delicious! I really wanted to try the corn but it’s off season...I will be going back!
I come back to this video here and there and fantasize about this sandwich. It looks crazy
These are truly excellent.
These videos couldn't come at a better time. I'm back in Seattle and I'm totally hitting up the places in this version of dining on a dime.
Lucas! Are you still in Seattle? Would love to show you some more amazing eateries. Huge fan of Eater and your series, been watching since day 1 :)
Lucas and the team are no longer in Seattle. We just finished filming the next season in an undisclosed location. Thanks for watching!
"undisclosed" = Area 51
Lucas Peterson 😂
Great video, Lucas. More of the same would be great. Can never go wrong with high-end-yet-substantial sandwiches.
thank you!
They need both those establishments in Tokyo. They'd be yuuuuge!
Well, I'm glad I got to go to the original Paseo before it closed, in May, 2014, and a couple of months before it closed that year. Architecture nerd here. Love ure shirt Lucas!!! And hey love the show as always 👍
Just curious, when you film in places where people will be in the shot like in Un Bien with the 2 group of ladies in the background, do you give them a heads up?
The cameras are a dead give away! Thanks for watching!

Lucas Peterson PLEASE VISIT PHILIPPINES THIS YEAR :D I'd love to see you try everything that Filipino cuisine has to offer. It is so underrated. Happy eating. :)
is there a way to like more than once ?
You know, I think you should have tried the #2 at Paseo -- the grilled pork loin. That's my favorite one there. I definitely like it more than the roast which has that pulled pork texture which is only ever ok to me no matter how many times I try it in its various renditions across the southern US.
Omg Lucas... That looks like great eating!!
Would have been cool to hear why the customers like to eat at the respective shops. But either way, all of the sandwiches look so delicioussss
No one wanted to talk on camera, we asked!
It's easy, Tourists go to Paseo, locals go to Un Bien
I'm drooling over those caramelized onions instead of the pork, steak, or chicken thighs etc. Looks too good my man! 😂
It seems every restaurant in Seattle has a significant story to it!
Lucas saying "Hey dude" is going to be my morning alarmclock. Could this guy be anymore loveable?
such a great job again, lucas
un bien will always top paseos IMO i love both but grabbing a sandwhich from un bien then hitting up chucks hop shop in the summer for a brew is just amazing
When are you coming back!?
Si Señor Dale Una Mordida Grande Al Corn
...I Love Corn 2....jeje well my Last Name says it All!! Saludos Lucas y Buen Provecho😄😄
Damn...I have to make it up to this place soon...looks too good.
Good for the guy who made sure to keep open Paseo. Awesome for hiring back the original staff! And saving jobs.
yummy and I'm hungry
Love both Paseo and Un Bien. I usually get the Press at the Shilshole Un Bien
So when's the San Diego episode going to air?
I shouldn't have watch this at 3am. I'm hungry.
Wow Lucas loved that corn. I don't remember seeing Lucas finish anything on this show.
Un Bien's Caribbean Roast is one of the finest sandwiches ever made.
DO DINING ON A DIME BRITISH COLUMBIA, CANADA PLEASE!
Damn I need these sandwiches.
That cashier is a human seattle
He's actually from Jersey.
lol was gonna say here in Miami this is popular everywhere
I was waiting for Lucas getting jumped at Paseo :) joking .. thanks for sharing i now know of 2 more wonderful spots to check out in Seattle
If you go back you have to try Geo's Cuban sandwitches.
There is no debate. Un Bien is the best. It's as good as Paseo used to be because that's what it is; the old paseo. When locals come into town after hearing about paseo, they go to what paseo is now but they should be going to Un Bien.
haLLo its me at QUETTA form Balochistan

Unfortunately My sandwich I received from Paseo was small with like one onion. I was so disappointed. I used to love that place.
That looks good
The sandwiches at both spots looks delicious.
Lucas are you an architect or fan of architects? I see that lloyd Wright shirt!
Haha. Yes, they are incredibly messy. Thanks for showing everyone how awesome Seattle food scene is.
does he all the food or does he share it with the camera man and others?
In another video they said the crew helps finish it.
OK. I got it...Tom Hanks and Jet Li had a baby...
"Like a famous person once said , falls off the bone." 😂
2:10 lmao they all turned around😂😂
You should try Pico's Pit they have amazing BBQ sandwiches in Seattle
I think you mean Pecos.
***** Lol spelling is wrong
Peco's Pit is a perfect example of crappy west coast BBQ. I've eaten there dozens of times but I acknowledge that that stuff wouldn't stay in business for one week in the midwest or south.
Michael To each it own but the food is 🔥🔥
that lady on the right is hella annoying and distracting. stop turning around to stare!!!
Countrymusicnumber1 I knew someone else saw that! If he wants to involve you he'll ask. sheesh... Worry about yourself.
Countrymusicnumber1 so glad I'm not the only one.
Countrymusicnumber1 rewatched to share in your aggravation. Lol!!
The fish and Scallops are actually better than the pork, and Un Bien is far better than Paseo as they have the authentic recipes. And Mario is the best!
Falls of the booooooooooone
Mike Hawk lol the Canadian girl is now a meme
The diners in the back at un bien were distracting me :( thanks for the video
Makes me want to be in Seattle.
