This is my kind of cooking style. Making flavorful pastes (never doubt the power of the paste), double or triple cooking things in different combinations. This is how you extract the most flavor possible.
Some fun fact: Korma has Mughal-Turkic origins. It comes from the word Kavurma’kawurmah’ which means braised in Turkish. Just as the Arabic Shawarma coming from Turkish Çevirme’Chawarmah’ which means rotated.

Kavurma definitely means fried not braised.
Actually its actual word meaning is to sear/roast. Turkish Kavurma is made by searing the meat with its own fat and water in a pot,not frying with extra added oil as it is typical for fried food.

Chicken Korma pot pie sounds like an interesting take (although a lot of work). But I've never been so distracted in a cooking video by the chef's hands. Long nails get junk under them and seem unwieldy, and rings would get junk in there too. Seems pretty unhygienic.

You can usually tell a chef by how they cut onions. This person couldn’t be a chef with those knife skills.
