    Sohla is such a great teacher, she doesn't just tell you "do this" she very clearly tells you why so you're learning the reasoning behind the technique. And she does it with this cool calm vibe

      The intro of her book talks all about her philosophy behind this. She was always the kid asking “but why?” in school and was often met with unhelpful adults that gave the whole “because I said so” spiel. Now, as an author and teacher, she actively tries to foster curiosity in her audience and include all the “why”s behind what she does. I think it makes her one of the most helpful and engaging food hosts out there right now.

    I always learn so much from Sohla videos! I had no clue to use that much salt to blanch different items. I too am super shy about using too much. That is so helpful!!!

      For blanching and boiling, it might be helpful to consider that most of that salt stays in the water that you throw away. You want to salt the water pretty heavily so that enough of it ends up in the food (which like Sohla mentioned also depends on how long you're blanching/boiling).

      "Enough" salt for many people is none. I haven't yet missed the salt I don't put in most food, including blanching water. IMO, salt is a terrible flavor.

    100% agree on the vinaigrette ratio. The ones I see most people in the US using is wayyyyyy too much oil and not enough acidity. Then you have to use too much dressing in general to get the flavor boost you want, so the salad ends up goopy. I much prefer a thinner but more impactful dressing that I can use less of to get a bunch of flavor. I do anywhere from 50-70% acid depending on the dressing, but never anywhere close to the only 30% that a lot of dressings recipes seem to recommend.

    This is why I love Sohla so much - the mix of high brow and low brow cuisine and cooking techniques. She doesn’t care if some ingredient or cooking method is considered lesser, but shows you how to cook things to make them the most flavourful. She’s the best!

    I have a treasured photo of my grandma standing on her porch with a "gentle wash" laundry bag full of greens, swinging it over her head like a lasso to get the water out. Sohla beautifully reminded me of that with the towel-wrapped broccoli! 😁

    my mother is a broccoli hater but even she loves a similar raw broccoli salad her vegan friend makes - maple dijon dressing, broccoli, chickpeas, red onion, carrots, sunflower seeds, craisins, optional baby spinach . gotta try this version soon!

    I add raw broccoli, raw brussels sprouts, raw kale, and raw cabbage to my everyday salads. No crunchy water (aka lettuce), which I discovered way too late was why I never liked salads. You all can have my lettuce. Those veggies in a salad based on raw cabbage are great! Thanks for sharing, Sohla!

    Thank you for saying it about the oil to acid ratio for dressings. Every so often I seem to default to the 3:1 ratio because it's 'correct', and every time I end up with a mountain of dressing as I frantically add more of everything else to prevent a sad, oily dressing situation.

    Love Sohla!! Excellent instruction! Absolutely agree on the ratio of acid to oil for a dressing! 3 to 1 is too much oil; I use 1 to 1 always.

    I've never been a big fan of raw broccoli, but Sohla has never steered me wrong, so I resolved to try the salad at some point. Got the opportunity sooner than expected when my oven broke tonight and derailed my planned dinner! It was DELICIOUS, a huge hit with the whole family. Definitely going to be using the dressing on all manner of veg going forward too!

    Broccoli is my thing -- just lightly steamed with butter, lemon, salt and pepper. A large bowl of it and I'm a happy camper. Doesn't even need any help. Cheese? Not necessary at all. Yum!

    I’ve been addicted recently- I’ve literally been snacking on it for the past 3 weeeks- I dry fry it on a non stick pan till it’s a bit charred then stir fry them with teriyaki, ginger, garlic, vinegar and brown sugar- it’s addictive!
    And honestly the stem is my favourite part!
