- Join Sohla El-Waylly in the Bon Appétit Test Kitchen as she makes red lentil zucchini. These crispy, crackly zucchini fritters take inspiration from the traditional Bengali onion snacks piyaju. Soaked and blended red lentils make up the batter, which is spiked with turmeric and chili powder.

It sucks, no joke :/ And as a fellow South Asian (and Bengali), it's honestly making me sick to my stomach thinking she's been this amazingly fun, talented, and thoroughly entertaining person on camera while not being compensated for it and silently bearing the brunt of bias all this time!

Look, I made my PhD studies with a grant of less than 30K per annum. In the Bay Area, which is similarly overpriced. Do you think that a scholar job in the lab is much easier than the chef's in the test kitchen?

So he refuses to make a definite claim that parsley exists or doesn't exist? Or that it should be used or not used? Or just wishes he knew more about it? I'm confused, cause I'm regular agnostic and I know it translates to "without knowledge" aka making the claim something is unknowable.

She had me at the "compost bowl", more videos of her Bon Appetit.
We need more environmental friendly chefs.
If you watch other videos and try to sneak a peek, more chefs use the compost bowl but dont mention it... its always that huge silver bowl, I believe Gaby started it!!! I know Carla uses it ALL the time and so does Brad (0bv) and I thiiiiiiink Rick.

I always assumed they did before, so the first time I heard it mentioned in a recent video (not this one) that they just started composting, I was lowkey horrified. I'm fairly certain NYC restaurants of a certain size are technically supposed to compost by law. But the test kitchen would be in a different category, so I don't think there's any composting legislation that would apply to them. Regardless, it's awesome that they finally started.

Well, not a weird thing considering the job
I really liked how technical and process-focused Sohla's delivery was. The details about why she was taking certain steps (food processor > blender for example) really helped me understand how her process created the final result. I think it makes a really good addition to the perspectives on food the test kitchen has.
Even something as simple as dipping your spoon in the oil really blew my mind. And I fry things all the time!

I think It's actually Sohla's attention to detail in teaching things that helped Claire overcome her chocolate-tempering fears. 😄

If fried is her thing then there's are lot of Indian foods that might interest you. As for example the thing she mentioned in the beginning called Piyaju is known as piyaji here and is a snack.

I've made this two times already, it's one of those things where you don't need any crazy ingredients and you can make it any time with anything you have on hand. First time I've followed the recipe and the second time I used just onions and cilantro instead of parsley. It's really about the lentils.
I keep coming back to this video. I like the energy, the calmness, the professionalism. Same reason I keep rewatching Chris's videos. And this one has both of my favourites!

Sohla needs her own show BA! I love the other shows, but when all the others are always asking Sohla for her expertise, maybe it'd be a good idea to give such an expert her own show too!! Just saying... though I do love gourmet bakes especially with all the guest chef drop-ins to help the project (but CondeNast please pay everyone for their video appearances, even if not their own show, if you're regularly asking them to join in - I understand having your own contract for your series, but for guest appearances fair is fair).
