    Love watching chefs not trying to take a cooking style or background then try change it, a lot of the time the most purest form of an original dish is all the elevation it needs

    I’ve been fortunate to eat at laser wolf (Philly) and it really is that good. Also a nice way to get similar food
    to Zahav that’s a bit more affordable/accessible.

      Lazar Wolf was the name of the butcher in the musical "Fiddler on the Roof." This is obviously a play on that name.

    very nice cooking, keep it honest, simple and delicious. no fancy nonsense or tons of garniture. and the grill statement from the beginning sums it up pretty good:
    ".. used grills for about 20k but now we juste use bricks from home depot and charcocal." nice. use them brains, most of the expensive stuff they tell you you need is just.. well.. expensive stuff. doesnt mean that its better in any way, quite the opposite in fact. if u think about it, that applies to pretty much everything society wants you to buy

      The name is taken from a character in Fiddler on the Roof, the butcher who was named Lazar Wolfe.

      Laser Wolf is a name. It's Yiddish. Lazer is the Yiddish pronunciation of the Hebrew name, Eliezer. Wolf (or Volf, in Yiddish) is the Yiddish version of the Hebrew name, Ze'ev, which means "wolf" (one of a few animal names in Hebrew).

    damn it's similar to asian cuisines just missing some ingredients. the beef and fish is good for sure just by the listed ingredients and marinades. because it's what i used too with a little dash of Fish sauce and fresh lemon grass stalks.

    I understand these guys are professionals. However, I'd argue that the external fat from a brisket becomes "intermuscular" after grinding it.

      They are using the terms incorrectly. Intermuscular fat is the fat between the lean. This is the seam fat or fat cap. Intramuscular fat is fat that is inside the lean. This is the marbling.

    Pro tip, don't have to wash the grinder everytime. Just remove the attachment, cling wrap and pop it back into the freezer ready for next use.

      Yes. Israeli cuisine is a very interesting mix of traditional, international-Jewish cuisine, traditional food from Arab countries where many Jews came from, and kosher dietary restrictions. It's a really interesting and delicious cuisine!
