2 vegan Italian-style sausages (I use Field Roast)
1 medium onion, chopped
3 garlic cloves, minced
1 1/2 tsp fennel seeds
1 tsp dried oregano
1 tsp dried thyme
Dash red pepper flakes (optional)
Salt, black pepper to taste
6 medium size Yukon Gold potatoes (peeled or unpeeled)
5 cups water/low sodium veggie broth
2.5 cups unsweetened non-dairy milk (I used oat milk)
Large bunch kale
1 can cannellini beans, drained and rinsed (optional)
1 Tbsp nutritional yeast (optional)
Avocado oil or olive oil / vegetable broth / water, as needed for sautéing

I’ve been plant based for about a year and vegan for 1 month now and the only thing I can eat at Olive Garden is the minestrone soup and aubergine parm minus the parm ( even then I’m sure they use egg when frying their food lol) I’ve been eating microwave potato’s with vegan butter and vegan bac’n bits for a week now and my moms birthday is in 2 days I’m definitely going to make this 😊thank you !

Actually you can show an authentic soup Toscana that is vegan by default and it's called Ribolllita: re-boilled

It will. Just be aware that it will give the soup a coconutty flavor. If you're OK with that, then feel free to use it.
Can I use coconut milk?
Sure, as long as you don't mind a slightly coconutty flavor.
