    Thank you so much for this recipe. I just found your channel the other day and cant wait to try more recipes. I made this soup today pretty much exactly as the recipe calls. except, I added less chili flakes because Im a wimp when it comes to spicy. It wasnt spicy at all and next time Ill add the full amount. I added a can of white beans. and my cook times were bit longer. I let it sit a while before I had it also. It was so so so Good. better than a restaurant soup :) thank you

    Made this also, 2 days ago! I can't stop eating it! I added more veggies to it tho.. I added some celery , carrots @ even broccoli..
    That extra step of cashews & water mixed is awesome! This tastes soooooo good, i can't stop eating it!! Even tho i ate it all day, i still lost 1/2 lb! So healthy & yet soooo totally good!!

    I just made this one today for Sunday Lunch - OMG!!! This soup is AMAZING! My husband had 2 huge helpings. It's a keeper. Yesterday I made your Apple Pie. Again, Amazing. My husband told me that your recipes are the BEST. I made your Salami as well, but we are just eaten the last of it. I was asked by my husband to make another badge of Salami. BTW, we had my husband's family visit us last weekend. They LOVED your Salami as well. Thank you again for all your wonderful recipes :o)

    Oil free. Reduces the load on the liver. Going Vegan with most foods based on nut oil is probably storing problems for the future. So glad about these ideas.

    Zuppa is pronounced with a long u, think "Zoo", so "zooppa toscana". A great Italian recipe that is already whole food plant based (just leave out the oil) is "fave e cicorie", a simple fava bean puré with sautéed hickory. Love from Italy :)

    Made this today, and it is excellent! Did not miss the sausage flavor at all, and the cashew cream adds a lovely creaminess. Perfect soup for the upcoming winter months.

    Thank you so much for the smoked paprika and ground fennel seed nugget. It was a hit. I was in the middle of making the zuppa from another recipe and it was some what bland. But the addition of the paprika, fennel, and nutritional yeast changed the taste and smell of the dish.

      @@errorerror1337 white peppers actually do exist! I’ve had them. Like white bell peppers but there are spicy white pepper varieties too

    I just made it and it was delicious. I had to change the recipe a tad because my daughter’s digestive system can’t handle kale 🥬 so I put it in the instant pot and steamed it in the vegetable broth, then puréed it and added it immediately to the onions and garlic. The soup came out green but it did not take away from the delicious flavor at all. I’ll be keeping this as a favorite soup 🍲 now. Thank you so much! 😋

    I make this soup and yours looks great. My understanding is it’s typically a white bean soup and potato but I’m definitely going to step it up a notch with the fennel and cashews. Thanks for the great idea!

    I made this tonight, and was so disappointed I didn’t have any fennel. I made it without and it was still soooo good. I also made your ranch dressing with dill. It was so good too. Thank you so much for your thoughtful recipes.

    Whoa! I made this recipe almost immediately! I swapped spinach for the kale (because I love spinach!) and my husband's reaction to the first taste could be heard throughout the house! Good thing I made a double batch because everyone wanted more!!! This will be a monthly meal for sure in our house!!! Thnx Jill!!!

    I made my own version of this soup 2 weeks ago and I used the fennel and a dash of liquid smoke to give the sausage flavor and it worked. I'm so happy I stumbled onto your channel :)

    I made this yesterday but only half in case we didn't like it. My husband took a bowl to work and texted me this" Make some more of that soup. It tasted better the second day. " Never thought he would like fennel. Dang that soup is rib stickin'..😁

    Hi Jill, thank you (and your family) SO much for making all these wonderful (extremely helpful) videos with delicious, healthful, nourishing foods to help people learn about and enjoy wfpb cooking. I can imagine it takes a lot of research and hard work putting all the facets of these videos together. I'm sure there is A LOT more involved "than meets the eye."       Thank you so much Rebecca 😊 You are right, there are so many factors in making a show like this one. Luckily we all love to eat so when I have to make these recipes over and over and over to perfect them, no one complains. Producing the show is a whole other level of complexity. We have just learned to be multifaceted.

    Instead of cashews, put protein of mashed white beans. It will also make it creamy and added protein

    I made it today for lunch, I didn’t find fennel even at Whole Foods, but used the Italian new spice mix from Trader Joe. It was absolutely delicious, even my husband who is not a huge fan of my vegan cooking polished two large servings. Thank you 😊

    I made your recipe this morning and it is so darn good, that it's hard to wait until lunchtime to eat it! I used the exact recipe you gave, minus the white pepper. Darn if I couldn't find it up here in the Scottish Highlands! (love your recipes, keep them coming)

    I love Zuppa Toscana soup. I would always get it at Olive Garden and this is very close to Olive Garden without the oil and sausage. I agree the fennel is what gives the sausage the taste. I will definitely be making this again. Thanks for sharing. You also mentioned you use fennel as a digestive aid, how much Fennel do you take?

    This one is on my to do list for awesome soups! However, I make my own salt free veggie stock/broth so the sodium content not so high🤗

    I use a wooden or ceramic spoon for eating soups so it's not as hot. It's smoother in the mouth too than hard metal.

      Depends on your blender. If you soak the cashews ahead of time it’s easier on your blender😀 if you have a Vitamix or Blendtec then no need. I soak mine for an hour if I use my Nutribullet.
