    Hello friends! In this video I present to you an ancient Tuscan soup recipe. Delicious soup with black cabbage, savoy cabbage and beans is a perfect lunch or dinner solution for the whole family. I cook it very often in autumn and winter. A healthy, filling and totally vegetable dish! This delicious soup is suitable for vegans and vegetarians. Just cut the vegetables and cook in the pot! I used fresh beans but you can use cooked ones to save some time. Try this fabulous Tuscan vegetable soup recipe and let me know what you think!
    Ingredients:
    - 1 onion
    - 2 cloves of garlic
    - 2 carrots
    - 1 stick of celery
    - 1 bunch of black cabbage
    - Half cabbage
    - 250 ml of tomato sauce
    - 4 cherry tomatoes
    - 1 chilli
    - 1 sprig of rosemary
    - Salt and pepper
    - Olive oil
    - Parmesan (optional)

    Ciao, sono Toscana, hai fatto un bel minestrone e sarà anche buonissimo. La vera ricetta Toscana si chiama, Ribollita o a Lucca Zuppa. Dopo aver fatto la minestra, si tagliano fette di pane di qualche giorno e si fanno degli strati, pane e minestra che deve essere brodosa. Si prepara la mattina perché tutto si deve insaporire. Sembra difficile ma non lo è. Ciao dalla bella Italia.

      La Lucca zuppa si chiama
      La Frantoiana…e si aggiunge fagioli borlotti e pochissimo pomodoro..
      La zuppa Toscana si fanno con farro senza pomodoro ..
      E quindi la ribollita è ri-bollita.. 😉

      @@fjvie questo non lo so. So che la mia nonna coglieva tutte le erbe selvatiche poi con le altre verdure tra cui il cavolo nero fagioli e pane faceva una cosa divina. Noi siamo di Lucca.

    I tried your recipe, and it's so good. It was my first time to encounter cavolo nero, and I was so excited to taste it. The soup is rich in taste and flavor thanks to cavolo nero cooked for about an hour. Cavolo nero is a very unique vegetable you can get good soup from. In Japan, we have similar vegetables called Katsuo-na, Bonito fish leaves we use to make new-year special soup with Japanese rice cake in it. The leaves taste like Bonito fish after being boiled. Thank you so much for letting me touch a little bit of your traditional food from Toscana , which has been handed down from generation to generation for about 5oo years and will be for coming centuries for sure.

    500 years old? This must be one of the first uses of potatoes and tomatoes in Europe. Columbus only came to the Americas in 1492.

      @@RicettePerfetteOfficial Yes that's true, my family does variations of this. My father is Friulano and he uses potatoes, my mother is Calabrese and she makes it with beans and dandelion greens. It is one of my favourite dishes!

    Siamo partiti male, il pomodoro è arrivato in Italia dopo il 1560, in quel periodo è stata introdotta anche la patata, ma ci è voluto più di un secolo per essere considerata commestibile.

    I made almost the same recipe lat week not knowing about this one.I love soup in the cold winter months... nourishing and good for you. We don't have black cabbage where I live but I use spinach..and also add a tablespoon or two of red wine...so good Thank you.

      Spiacente per te, ma NESSUNA ricetta tradizionale toscana invernale prevede l'utilizzo del pomodoro: in Toscana, fino a 30 anni fa il pomodoro, d'inverno, non esisteva; così come non esisteva la passata, se non quella prodotta dall'industria. Solo a metà degli anni 60 i meridionali immigrati hanno iniziato a produrre in casa la passata, "importando" letteralmente i pomodori perini (San Marzano). I primi "pomodorini" (Piccadilly o Datterini) si sono visti dagli ortolani non più di 20 anni fa. Questo perché il pomodoro tipico toscano (l'unico che c'era, il rosso costoluto) è totalmente inadatto a qualunque tipo di conservazione. Nelle ricette toscane c'è sempre e solo concentrato diluito, tanto che in Toscana lo si chiama direttamente "conserva". Poi, personalmente, non metto le patate nella zuppa di cavolo, dato che, se la devi conservare in frigo, le patate prendono un sapore cattivo. Detto questo la ricetta, effettivamente, si discosta poco dal minestrone che si usa per la zuppa di cavolo da ribollire

    Stati Uniti! Questa è una ricetta meravigliosa. Mio padre è di Firenze - e la maggior parte della mia famiglia italiana è ancora lì. Some "twists" to this: use leftover rice instead of potatoes (add them towards the end). We also sometimes use Cardone (Cardoon) with or instead of the celery. Black Kale is easier to find in the U.S., and is similar to Black Cabbage for those of us in America. I HAVE to make this for the coming cold, snowy weekend! Mille Grazie!

    OTTIMO video!!! Una ricetta che mi piace molto: questa, è più o meno la ribollita (come ho fatto anche sul mio canale, forse la più classica zuppa toscana). Il pane è un elemento importante, perché uno scopo della zuppa era proprio recuperare il pane diventato troppo duro. Magari, 500 anni fa difficilmente pomodori e patate potevano essere parte di questa zuppa...

      Gli europei hanno visto la prima patata nel 1537; quindi è da escludere che 500 anni fa fosse coltivata in Toscana. 😁

    This looks very delicious, but I must admit I doubt tomatoes and potatoes were ingredients simple peasants would have had access to 500 years ago. Those plants were just being discovered in the Americas and it took quite some time to make them available to the simple folk. From what I know they were considered highly toxic, too. It wasn't until the end of the 17th century that tomatoes were included in the diet of southern Europe, and it took until the late 18th century for potatoes to become widely accepted.
    Cabbage, onions, beans and turnips were probably the key ingredients. Nevertheless, this looks very nice and the presentation is very pleasing, too. And no offence - I was just quite surprised at the title.🤩

    I have to question the authenticity of this recipe since I am not so sure that tomatoes , let alone cherry tomatoes, were around in Tuscany some 500 years ago.
    Still , a great recipe and I will definitely try it.

      No tomatoes nor potatoes before the early 1500s and it took a while for folks to trust those foods anyway. - so maybe 400 years?

    Most products in this wonderfull recipe arrived in Europe from Meso and South America in the mid 1500's. Then, potatoes, tomatos, corn and beans were unknown in Europe. Walter Raleigh introduced 'patatas' to Ireland in 1598 but it took nearly four decades for the potato to spread to the rest of Europe.
