  • Zuppa Toscana is Olive Garden’s most popular soup. This one-pot, homemade Zuppa Toscana recipe is hearty and loaded with Italian sausage, kale, bacon and potatoes.

    ZUPPA TOSCANA ITALIAN SOUP INGREDIENTS:
    ►6 or 8 oz bacon, chopped
    ►1 lb Italian Sausage (The "Hot" variety)
    ►1 medium head (10 large cloves) garlic, peeled and minced or pressed
    ►1 medium onion, finely diced
    ►4 cups (32 oz) water
    ►6 cups (48 oz) low sodium chicken broth
    ►4-5 medium russet potatoes, peeled and chopped into 1/4" pieces
    ►1 medium/large kale bundle, leaves stripped and chopped
    ►1 cup whipping cream

    I absolutely love this soup from Olive Garden. I have to get it every time I go, so I decided to try this recipe. I mean it was SPOT ON!!!! If you follow the directions exactly as explained in this video, then there’s no way to mess this up!!! Great job! Thank you!!

    I made a few updates to this recipe which I personally believe improved it slightly and may be a touch more accurate.
    1. Leave the peels on 3 of the 5 potatoes, actually Zuppa has a lot of the peels still.
    2. Use regular chicken stock not low sodium, (still won’t be as salty as real Zuppa but it definitely adds to it)
    3. Use slightly more cream (cup and a half.)
    4. I boiled it for about 25 minutes to reduce it and enrich the broth.
    Anyways, I’m just an idiot who likes to cook but maybe you’ll find these tips helpful!

      NO NO NO !! Always use low sodium chicken or vegetable stock ! USA has too many food factories using excessive sodium, phosphates, bicarbonate, in preps ! Reason why America's number one in the world in heart disease !! 💔😡

    My wife and I go to Olive Garden to enjoy Zuppa Toscana, even we're not Italians. (I'm Hungarian and my wife is Thai)
    Today we decided to cook the soup ourselves at home. I accidentally found your recipe by chance. Went to the store, bought the ingredients, and off we went.     i used your recipe as a “guide,” and it came out delicious. i added broccoli stalks and some cannellini beans to it. have a family member that does not prefer dairy, so i puréed a can of cannellini beans and used that instead of heavy cream and used nutritional yeast instead of parmesan. thank you for the base recipe.

    I made this without potatoes to keep the carbs and calories low. I went with cauliflower, mushrooms, 1 cup of chopped zucchini and half a medium eggplant cut into bite-sized pieces (added toward the end of simmering so still a little firm). I will be making this every week this winter. It was outstanding. I used fresh 1/2 and 1/2 . Warm the 1/2 & 1/2, mix in a level tablespoon of flour and then add some warm soup broth to the dairy mixture before adding all to the soup. Don't boil it and the dairy will NOT curdle. Natasha's beet borscht is also amazing as is the French onion soup. It was like the now closed Top of the Sixes Restaurant at Rockefeller Plaza in Manhattan, NY. Natasha is the real deal - World Class! Thanks, Natasha!

    This looks so yummy! I can’t wait to make it!
    I have a tip that I do with onions especially because they make me cry, but works with other ingredients too. When chopping onions for a meal I chop an extra (or more) & freeze the extra ones (1 chopped onion/baggie) and store in my freezer. This gives me a break from tearing up or can come in handy if I don’t have one.

      I used to work for subway when I was 19, and their trick was grabbing their onions and sticking them in their walk-in freezer for 15 minutes. We would then grab them and chop them. TEAR FREE, works all the time. I do this at home too.

      Soak the onion in water for 5 mins before cutting it and also grab a piece of chewing gum and chew for the duration of working with it! You have been life hacked!

    Natasha, I made zuppa toscano soup last night. Cooked cubed little red potatoes in my instant pot in chicken broth x 5 min w/ manual release; cooked thick cut bacon in air fryer (350 x app 15 min). Combined with Italian sausage, onions, garlic in dutch oven brought to simmer, subbed 10 oz fresh spinach for kale, cooked gently app 5 min, then added cream. Served with a sprinkle of chopped bacon pieces (too hungry to grate parm) on top and it was sooooo good.

    Yummy, this is one of our favorites too! I add a little flour with the bacon grease to make it thicker, like a chowder instead of a soup. Both options are good! And FYI: Plain coconut or soy creamer works perfect in this recipe for those of us who can't have milk.

    Hi 👋 Natasha I made this soup and I added Swiss chard instead of kale just because I love Swiss chard. The soup came out amazing. When i saw you had a recipe for Zuppa Toscana I had to try making it. We don’t have Olive Gardens where I live in Canada. The only time I get to have some is when I’m visiting Florida. I always have 2 bowls because I don’t know when I will get the chance to eat it again. I’m so happy I came across your recipe. This recipe is definitely a keeper. It taste exactly like the Olive Garden soup.

    The only change I made was to use Italian sweet sausage instead of hot sausage (I'm a wimp when it comes to spicy stuff....) and it was delicious. Best soup I ever made! I think it would also be good with cannelli beans instead of the potatoes, gonna give that a try next.
    UPDATE: I did make this again with cannelli beans and chicken instead of sausage. I also added sliced carrots because they are pretty and I used just chicken broth and 2 cups of half and half. So I guess this can no longer be referred to as Zuppa Toscana, but it sure was was delicious!

    I made this plant based with vegan bacon and sausage. I used some vegan cream cheese and some oat milk in place of cream.. also added a bit of white wine vinegar.. I saw some other recipes that had vinegar in the recipes. The little bit of acidity added so much. Also added a generous amount of Italian seasoning and lemon pepper. So good!!

    I was working for olive garden about 12 years ago. I moved back to México but here it's almost impossible to find an olive garden restaurant, so since I came back, I haven't eaten this soup. I didn't think I could find this here. I'm going to do it soon. Thanks for sharing.

    I made this today with cauliflower to be low carb instead of potatoes. I used spinach instead of kale because I didn't have any. I also didn't use bacon. I added crushed red pepper, 3 cloves of garlic. It was AMAZING. Eating it now.

    Only thing missing is a little bit of crushed,dried,hot pepper flakes. Just seems to give it that little zing.

      I absolutely 100% agree that red pepper flakes absolutely makes this recipe. The sausage by itself doesn't *quite* provide the level of "zing" that I'm looking for. This is a great recipe and video though

      I've made it with both and I prefer the texture of the Kale, and it also seems to hold up better.

    I love this recipe. I recently accidentally bought a pre-cooked sausage: dartagnan smoked andouille sausage. I decided to try it in this. I cubed it and threw it in at the end of the bacon cooking.. just long enough to release the oils.... holy cow it was next level.

      Not heavy on flavor.? Hmm... I would say add some seasonings.... but i cannot share my recipe because its wayyyyy better tasting than this one frim looks of it.
      HOWEVER--> This is a basic
      ' base soup recipe.'
      Start here then add more stuff.....
      Be creative 👩‍🍳 🍲 🍗

    One of my favorite soups to make! Anyone who trys it, is hooked! Love fresh kale from the garden. If you have picky eaters, you can cut the kale up really small and add it with potatoes to make it softer. Also I've used regular breakfast sausage ( roll kind ) in place of Italian sausage, and it comes out amazing!

    This is the only soup that my husband likes and one day while we were at Olive Garden he said we have to learn how to make this at home. I found your recipe online it made it for him and it was like he fell in love with me all over again 😅 hahaha Now it's a number one request in our house. Making it at home is so much better because I can have control as far as the amount of meat, more is better ! 😋 Thank you ❤️

      @@Natashaskitchen I made a huge pot last night; I used the hot turkey Italian sausage instead of pork. Added lots of kale and onions and garlic. He loved it as always 😜 even I kept dipping the ladle back into the pot for "taste tests" 😂

    This soup is so dang good! The only thing I did different was I used regular chicken broth not low sodium and I used an additional half cup of cream. And at the end I used a good 2 tsp’s of salt and about half a teaspoon of pepper. It came out PERFECT. Not too salty at all. Thanks Natasha! I’ve made several of your recipes so far!

    My family's favorite as well. I like the trick of cooking bacon in same pot. I have found a workaround from buying premade chicken broth, which can get expensive. I often boil pork ribs for 2h until they are soft, then grill them quickly with a glaze. The resulting broth makes for perfect base for the soup, just make sure to skim off the scum and excess fat before use. Saves money and super tasty!

    I so wish my husband wasnt a picky eater cause i love making food with greens in it but NOOOO someone acts like a kid lol, so i can never make yummy things like this! Its soooo hard.

      You can always skip adding the kale or set it aside to add to your own dish, the heat in your bowl will cook it enough.
