Shopping List:
1 lb hot or mild Italian sausage
1 onion diced
3 cloves minced garlic
6 cups chicken stock
1 cup heavy cream
5 slices bacon
2-4 russet potatoes
3 handfuls chopped kale
2 tbs better than bouillon roasted garlic
1/4 cup parmesan cheese
salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes
Directions:
In a large pot over medium heat, cook bacon. Remove bacon when finished and reserve for later.
Next, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
Add onion and roasted garlic base to the drippings in the pot and cook until soft, then add garlic and cook until fragrant, 1 minute more.
Add chicken broth and potatoes and cook until potatoes are tender, about 20 minutes. (Fork tender)
Stir in kale and heavy cream and bring to a boil. Then, reduce to a simmer and let cook until leaves are tender and bright green. Season with salt, pepper, garlic, onion powder, Italian seasoning, and red pepper flakes to taste. Garnish with shredded parmesan.

Just made this never had it before but it’s fire. Paired it with some of the box red lobster biscuits. The hardest part was trying not to eat all the bacon waiting on the potatoes lol
Hi, my name is Sabine and I live in Toronto, Canada. I have never been to Olive Garden so I never heard of this soup. I made it yesterday and it is so delicious. Thank you very much for sharing this recipe; I am a soup fanatic, I am adding this one to my repertoire.
I make this soup all the time, even in the summer. I use crushed red pepper in mine to give it a kick. I put it in when I'm browning the sausage. You don't peel the potatoes. Just give them a good wash then cut them with the skin on them and in the pot they go after washing them again. Russet Potatoes 🥔 is recommended for this recipe. I don't use processed ingredients. Everything is fresh. Garlic cloves (minced), chicken stock or Knorr Chicken Cubes is good to use. It's a very easy soup to make. I use Kale as well. Everyone has their own way of making this soup.

Well exactly like yours, but with heavy whipping cream. l love heavy whipping cream in anything possible. Also, I always want more cheese when I go to Olive Garden but feel pressured to tell them to stop too soon. 😆

My favorite way to cook kale. Add a copious amount of veg oil to a saute pn
Add a copious amount of veg oil to a saute pan saute until tender. Add more oil if necessary. The oil helps the kale slide out and into the trash can.
I eat this soup all winter, for weeks at a time. Love it.
I like to add a piece of Parmesan rind to my Italian soups as they are cooking. It’s so good!

Omit the potatoes or swap with cauliflower and you have a really nice keto friendly meal too. ;-)

I think most grocery stores have it (my Brookshires does).
I like making palak curry with kale, arugula, even brussel sprouts or asparagus. I just toss whatever I have into a blender and by the time all the spices hit it no one is the wiser.
This soup was fantastic. I used broccoli rabe instead of kale, as I think it has more flavor.

I substituted the cream with coconut milk and I added a splash of dry sherry and went to soup heaven baby! I always use coconut milk in place of milk because it adds way more flavor.

Since I work night shift, I browned the sausage and then threw that along with the rest of the ingredients into a crockpot to cook for 6hrs while I slept! It was ready to go by the time I woke up. I took some to work and my coworkers killed it!

That Roasted Garlic Better Than Bouillon is MAGIC. It is full of out of this world rich deepening flavor. Honestly, anything you make tastes like it’s been cooking for hours when you add that. It’s unbelievably delicious 🤤♥️

Genuinely curious, what do you use it for? Other than what Mr MIH did in the video above? I bought some tonight and am not sure what to do as Ive never had the need for garlic broth.
Beautiful recipe. Love it. Always remember that Italians drizzle a bit of extra virgin olive oil when serving a bowl of homemade soup. It’s a finishing touch. Regardless of olive oil used in the recipe, the incredible flavor of raw olive oil along with grated cheese (I prefer Romano cheese) just completes the flavors. The taste of olive oil changes when heated so this drizzle adds great authentic flavor. Love your passion for flavor!
One of my favorite soups. I love soups with sausage. I add cannelini beans in mine. I'm not sure if it counts as zupa tuscana but it's what I like. I need to make me a big pot of this. 😋
I put beans in mine too. And some red pepper flakes for some heat!

So low low carb and no sugar as much as possible 🤷🏼♀️ I do soup with chicken I don’t like the smell of sausage 😦and I use my own Turkey broth from the thanksgiving Turkey that I made 🤷🏼♀️green onion kale and spinach goes to the soup for sure !i am going to use cheese this time see how it comes out 😊cauliflower for potatoes and broccoli for extra goodness 😊
Great tip: add the cream to individual servings if you plan to have leftovers. It will not freeze well or store well if you add cream to the whole pot

I'm a potato and kale lover so I add way more kale and new and gold potatoes for that potato happy profile.
For non kale lovers try with baby kale or spinach added to the bottom of your bowl, then label on piping hot soup to wilt your greens. Just know putting spinach in the soup why cooking will make the spinach soggy. It doesn't hold up in this soup.
This is one of my favorite soups and I make it almost exactly the same way all year round. The only thing is I'm on low carb so I leave out the potatoes and add celery and extra kale. My husband even loves it
Cut up some chayote squash in lieu of potato and it’s a perfect fake out while doing low carb/keto.

I was on keto and used cauliflower instead of potatoes and it is delicious. My family members who were not keto loved it as well. I have made it with potatoes since, but I prefer it with cauliflower.

So funny this popped up today - going to my brother's house for Christmas tomorrow, whose Christmas Day tradition for the past few years is take out from Olive Garden, soup, salad and breadsticks, and it's always this soup. A few years ago, I found a keto recipe that used turnips instead of potatoes, made it and asked the fam which one they liked better. I already knew the homemade version was much heartier, and they did like it. But they like the convenience of not having to cook on Christmas Day (and I already cooked most of our Thanksgiving meal!) so Olive Garden it will be. But believe me, I will be making your recipe for me and my son next week!! Thank you and Merry Christmas!!

I love kale too, I tend to have it for breakfast sautéed with some red peppers and onion. Goes well with scrambled eggs and side of bacon. 😊

This looks like a good recipe - very similar to something I make all the time. There were a couple of red flags that I would caution potential cooks about. Number one, if you use the Better than Bouillon, any kind of BtB, you should be very aware of what a salt bomb it is, and perhaps use low sodium chicken broth to avoid your soup becoming overly salty. Secondly, if you decide to use half-and-half, instead of cream, be absolutely sure that you do not let the soup approach the simmer, or you’ll just have a curdled mess. Cream won’t do that.
It's addictive, my daughters are picky eaters, they were eating it late night. We started freezing it to eat later.

To much responsibility for the kale to offset the fat from the bacon, the sausage, heavy cream. But for sure it tastes wonderful 😂

Always looking for something diff. I never heard of this soup, but it looks good..I love potatoes so I may try this. But wanted you to kno what else you cld do with Kale tht is delicious 😋make kale chips! cut it up n roast it, put your favorite seasonings on it n when they come out they are crunchy like chips. I used to use another copycat recipe every winter but stopped making it when my son stopped eating pork😢. Tried turkey sausage and it just isn’t the same. Gonna try this one and eat it by myself.
