Until I learned how to make a stupidly tasty vegetable stock (Vegetable broth if you're in the US), nice soups needed chicken or beef stock. The 'secret' ingredients that make a genuinely delicious vegetable stock are parmesan rinds and roasted veg (esp roasted tomatoes), these add lots of umami - so vegetarian but not vegan.

Love the simplicity of this channel - not talking or pushing yourself as a RUclips personality, just simple, honest cooking, You deserve all your success and more!
The egg and yoghurt mix does cook slightly with the residual heat of the hot pot after it is removed from the heat, and thickens the soup into a creamy consistency . However, It is important not to reheat the soup on the cooker as it would make the broth crack into small lumps ( i.e. the eggs will scramble).
@@natashacollier5248 I you really have to reheat it, then do so on very low heat stirring consistently with a wooden spoon until warm enough to eat, never bring to boil or the eggs will scramble and the soup will "crack" into lumps..
Made this today and it was tasty! The entire house smells incredible. After reading through the comments I cut all cooking times down by half, used broth, omitted the green pepper (upsets my stomach)and increased the yogurt to one cup. The bread was tasty too! Thank-you for the incredible recipe!

What a fabulous recipe. I have an egg intolerance so I mixed 1 tblsp of cornstarch in with the yogurt instead of the 2 eggs; it worked out just fine. Bon Appétit to everyone who tries it out!

I made this yesterday for our lunch for the next day. Yesterday I also baked some milk chicken and served a cup of this veggie laden soup along with the chicken, mashed potatoes and a gravy. Both were delicious. Since the milk chicken makes such a flavorful gravy, after the chicken was deboned and our meal completed, I added the leftover shredded chicken and gravy right to the soup. I also added a few of my own spices for taste and used water with bullion for a richer flavor. In the end, it was a home run. Hubby commented several times on it and he rarely does that. Use this soup as is or add your own mix of veggies as mentioned; shredding the carrots is what made this soup so fantastic. Thank you for our new favorite chicken soup.
@@doumkatekz Milk chicken is my favorite chicken dish. There is an enzyme in milk that help tenderize the chicken. I usually sauté chicken thighs and leg parts or a small chicken in a Dutch Oven, then sauté an onion and fresh garlic in the same pot, add about 2” of milk and cover the way you would a pot roast. I cook it in a 325°-350° degree oven until done. If the milk curdles, no problem. The flavor is what you are after. When the chicken is done, cover while you thicken the gravy after removing any fat. I use cornstarch and milk for my thickener. I got the idea from watching videos. It is so succulent and full of flavor. I usually save the leftover and add them to a homemade soup or make a chicken stew. It is unbelievable.
Just made this soup and the cheese garlic bread. Added minced garlic and herbs de province to the sautéed vegetables. Also substituted chicken broth for the water. Delicious. Even my husband who does not like vegetarian food loved it. Topped soup with shredded Parmesan cheese, which took it to the next level. The crusty cheese bread paired perfectly with the soup. My only suggestion would be to have a link to website where I can print the recipe ( with a list of ingredients and then separate directions). It was difficult to follow the directions. Thank you for sharing your recipe.
"Even my husband who does not like vegetarian food loved it." Because your soup wasn't vegetarian. You added chicken stock which makes it non-vegetarian, and you admit it impacted the flavour.
Thank you so much ,dicing the carrot is a great idea . Using chicken broth instead of water a great idea too . I would add cream but not eggs . Everyone to their own

What a beautiful soup. My favorite way to add carrot to soup is to grate them. My husband hates carrots in chunks, and will pick them out. When I add them as grated rather than sliced, he never complains. Some of the carrot is absorbed into the broth enhancing the richness. So delicious and healthy.
I love soup. Yours looks delicious. Many restaurants in my area don't have soups in warm weather, so I make a lot myself. I will surely try your recipe.
In txt description you forgot the loaf of Baguette or other toast you use for the baked herby cheese snacks. Love the principle of an autumn- soup- would prefer personally to use more Celery instead of capsicu.- and maybe use a handful of frozen garden peas!
I like everything about this, including the potatoes - I would use either chicken, beef, or my preference - vegetable stock instead of plain water. What would soup be without a large head of fresh peeled garlic finely chopped and sautéed along with onions - keep an eye - they burn quickly. A very creative recipe and will try yogurt along with it next time. Stew is such an artistic, as well, as a culinary adventure in the kitchen. I prep all the vegetables the night before as well as either sautéed chicken pieces or beef chunks also. Put it all together the next day and smells great and tastes even better! It can be frozen for later consumption if needed! Although I'm single, retired, and "poor" - it's fun to make and more fun to eat!
Ellerinize sağlık 👏👏👏 as I'm on keto diet I'll substitute potatoes with celeriac and skip the vermicelli or add Konjac noodles (0 calories). Tonight, I made this verbatim to the recipe EXCEPT.... I added half of the bell peppers raw to the soup but the other half of the bell peppers I roasted and then added. This soup is WONDERFUL!!! Thank you for sharing. I'll be making this again and again and again!!! 😋😋😋😋😋😋
Roasted peppers and tomatoes are both delicious. Try them in a spaghetti sauce -- what a difference.

I made this soup last night for my German husband and he loved it! Thank you for your recipes, I love them too
I love the way you show how to make a delicious soup without talking!!! You music, hands and the veggies do all the talking for you. This is genius and FUN! and delicious. Thank you.
Lo
It looks so delicious. I wish that I could have a taste of it. I might just try this recipe. Because, I'm a soup lover. Thanks for sharing
Ich als vegetarierin liebe solche Rezepten und koche ich nach .. Vielen Dank 👌💚💐
This looks fabulous. So comforting. As fall has set in it will be a must in our house. Thank you for this simple wholesome recipe.
Made this today, so delicious!! I tempered the eggs & added to soup while still on heat, had a little curdling, but it was still yummy & so flavorful. I will get it right the next time! Everyone loved it!! I will be typing out the recipe!! Thanks for sharing.
This recipe reads like a symphony of flavors coming together! The intricate steps, paired with the delightful combination of ingredients, makes me eager to dive into my kitchen and try it out right away. Your emphasis on cleaning the vegetables with soda and the added touch of mint and parsley gives it a unique twist, taking it up a notch. Those toasts sound like the perfect accompaniment to the rich vegetable soup. Thank you for sharing this masterpiece. I can almost smell the aroma just reading through it. Bon Appétit to everyone who tries it out!
Don't do it. Awful
Where did she added mint?
Your presentation is good. I like the way you organising the preparation of ingredients, it makes cooking looks like fun and rewarding. I can tell that you have passion for cooking and cooking with love. I am sure it tastes delicious, thanks for sharing!
Just said that! I was so relaxed watching it. Beautiful job! Think the chef needs her own channel with exact production and direction management.
What is milk chicken? I have never heard of this.
"Even my husband who does not like vegetarian food loved it."
Because your soup wasn't vegetarian. You added chicken stock which makes it non-vegetarian, and you admit it impacted the flavour.
Instructions are very easy to follow I find.
Yes chicken broth instead.of water
@@maureenhammack9826 Or vegetable broth.
@@dianedeferrari3888 yes , broth instead of water was my first thought and definitely garlic. A little nervous about the egg/yogurt mix
Thank you so much ,dicing the carrot is a great idea . Using chicken broth instead of water a great idea too . I would add cream but not eggs . Everyone to their own
Wow! This soup tastes as good as it looks! This is my dinner tomorrow night! Texas, USA
This recipe looks wonderful, and think it would taste so good. I also liked how you made the toast. I will be making this meal soon. Thank you so much.
So glad to see this recipe with no store bought broth! Did not know about using yogurt /eggs. Thank you!💐
сьогодні приготувала Ваш супчик, дуже смачно вийшло. дякую за чудовий рецепт =)
Nice. Id probably toss in some garlic as well
Can't wait to try this.. always looking for good vegetarian recipes! Vielen danke!
Muchas gracias la sopa se ve deliciosa muy bueno especialmente para el invierno divina gracias
I made this today. Was a bit bland for me, so I added chicken stock powder and fresh minced garlic. Poured it over grated cheese in the soup bowl. Now it's yummy.
Soup looks delicious. But i get scared abt the raw egg in anything. Can i skip the egg or toral egg mixture, or yse yougurt only?
@@annettekawesa4914 The hot soup will cook the raw egg.
I was wondering how it would taste with chicken broth instead of water. Thanks for answering my questions without my having to ask the question.
The taste is beyond expectations, so glad I tried this recipe, thank you for sharing this recipe ❤
wow! I'm in love with your format! ❤️🤯👍
I love how every word of the captions and the list of ingredients is in the Description! I don't have to write a thing just take pictures if I need a list.
The finished food is presented beautifully at the start so I know what my goal is and whether it's worth it to me to watch.
The process is clearly and satisfyingly illustrated with no wasted time.
Thank you! I can't wait to try this recipe! :-)

Simple recipes, simple format, good music... It doesn't get any better than that! Herzlichen Dank!
Your recipes always look easy and delicious and unique . Thank you!! This and one of your chicken and potatoes recipes are my absolute favourites
Love this recipe and the addition of egg and yogurt adding protein make it perfect! The color is beautiful and the creaminess puts it over the top. I love your recipes! I eat soup all year long and this one is a keeper for sure. Thank you!
This is my new favorite soup!
I absolutely love all ingredients.
Delicious 😋
I will add some Broccoli
Cauliflower
Spinach greens next time
No me gusta la sopa de verduras pero esta se me antoja mucho. Yo pondría a cocer el fideo junto con las papas y el perejil para no cocer tanto las verduras. Muy rico muchas gracias
This is like a food meditation. I could watch it just for relaxation.
Hi there, how are you doing today? Hope you’re having a peaceful day 🥰🌹
The presentation looks nice, watching you slowly prep and cut more veggies in between sautéing, but my friend who is still learning to cook tried this and ended up burning the onions and carrots. I told her it is always best to prep everything before hand and have your ingredients at the ready. Prepping as you cook takes years of practice.
Con absoluta certeza, es fantástica. Gracias. Desde Bogotá Colombia.
Looks delicious. I will try it without the egg mixture.
I just made the soup and the bread....WOW, I love it! Tastes like real home cooking - because it is, but I don't cook very often - and so easy to make. I added 3 cloves of garlic for a little kick. :D I didn't have mint and I would have added cilantro if I had had some. Thank you so much. xo
Спасибо,изысканный вкус
Właśnie zrobiłam ta zupkę. Faktycznie bardzo dobra, jednak wydaje mi się, że bez jajek i jogurtu jest smaczniejsza. Doprawiłam też bardziej. Polecam !😋

I co ??? Wypróbowała Pani tę zupę bez jajek i jogurtu ??? Pozdrawiam.
The aroma must be tantalizing. My taste buds are working overtime watching this. Very healthy and satisfying soup.
Thanks for sharing. Exactly how you did it verbatim. Came out wonderfully well. Some for dinner and a container of it in the freezer for a cold fall or winter day or afternoon meal. It was so very good and filling. I didn't add as many potatoes with the noodles but it was so good. Really enjoyed it.
Die Suppe sieht so perfekt für den Herbst aus. Ich kann es kaum erwarten, es zu schaffen und meine deutsche Mutter mit etwas Neuem zu überraschen. Vielen Dank für das Teilen dieses Rezepts.

Hi there, how are you doing today? Hope you’re having a peaceful day 🥰🌹
I am eating this right now! Realize I forgot the vermicelli. Oh,well. It is DELISH! The yogurt adds such a subtle, delicious, creamy tang. I honestly can't say enough about how great this is. And the video is perfect. I have subscribed.
Did you use the raw egg? How is that safe? I am wondering if I missed a step where it was cooked.
@@oppsendless3814 I do use raw egg. I never worry much about that, honestly. I get my eggs from a friend with chickens and clean them well before I use them. If you are nervous, though, just cook the soup for a bit after you've added the yoghurt/egg mix.
I will try the soup I liked all the ingredients in the soup except the yogurt and the eggs I wouldn't put eggs in yogurt in the soup and I would use less water to make it thicker I do love the toast with olive oil and herbs on it that looks delicious
I tired this soupe and everyone liked it....thanks you so much
What was the measurements for the seasoning you use. I want to make tonight in the pressure cooker
We made it and LOVE it! We’ll be making it more often!
Looks delicious and healthy. I’m going to make this soup. Thank you!
Healthy and delicious. I could eat this every day, too. Thank you for sharing your recipe.
Oooooh I made this recipe last night & it's thee best noodly soup I've ever made! Great recipe, thank you 💚
Love adding sour cream to soup too, adding just to the portion being served, to cool it a bit and make it creamy. Yesterday was the first snow this season here in Denver. look forward to some warm delicious soup 🥣
Superb recipe, tasted gorgeous, you don't get this veg soup in a tin, after making it the second time the tweaks I made was, added all the peppers, more pasta, as I was using margheritini soup pasta, to bulk it out more, as there is plenty of liquid, to boost flavour 2 cloves garlic grated, and 2 knorr vegetable stock pots, the eggs and yoghurt make this soup special, never would have thought about adding that to soup, but it works and adds a nice consistency to the finished soup,
No meat veggie soup looks delicious 🤤 I she'll do it today, thanks much 😁🥰🤟

@@jbgirlbakerstreet thanks, I didn't know about that either
What a beautiful soup. My favorite way to add carrot to soup is to grate them. My husband hates carrots in chunks, and will pick them out. When I add them as grated rather than sliced, he never complains. Some of the carrot is absorbed into the broth enhancing the richness. So delicious and healthy.
I would like the recipe
I love soup. Yours looks delicious. Many restaurants in my area don't have soups in warm weather, so I make a lot myself. I will surely try your recipe.
Im going to try this one. Thanks for a very well done video.
This soup looks for any day to eat. I will make this for my fiance' and myself. Thank you
In txt description you forgot the loaf of Baguette or other toast you use for the baked herby cheese snacks. Love the principle of an autumn- soup- would prefer personally to use more Celery instead of capsicu.- and maybe use a handful of frozen garden peas!
Celery is very nourishing! Yes
Que rico me la voy hacer esta semana 😮😋😋😋😋saludos desde España 🇪🇸 🎉
Before keto, I used to cook a similar soup with sweet potatoes instead of regular ones. Give it a try, it will be even more delicious 💕👋
And my dressing was egg yolk whipped with milk, that's the substitute for cream in the french cuisine. You can add this to every soup you make.
Sweet alleluia 💕🙏🏼💕
i like your ideas!
I’m going to make this delicious soup tonight 😋
Looks delicious 😋 and colourful.
Just one question when you added the egg/yoghurt 🥚 mixture at end does the egg mixture need cooking again on heat? Thanks
I wanted to know this too - also would the egg mixture curdle if it was reheated.
I was wondering about that too. The only person I've ever seen eat a raw egg like that was Rocky.
subscribing from hawaii. i also have a different way of cooking this soup. it also end up well. the preparation is so clean and neat. the best thing is, you use all fresh ingredients. so colorful. that bread is heaven! let's eat!
