- a MASSIVE thank you to @TheRisdene for this lovely recipe for Lemon curd - it's been years since I've had this and oh boy it was delicious. The recipe is so easy and so quick in the Cosori Pressure Cooker (any pressure cooker will do the job) just 10 minutes and voila! you have your own Lemon Curd at only £1.23 (as of March 2024)

2 (or 3) lemons
115g/1/2 cup of sugar
60g butter, unsalted & melted
3 medium (or 2 large) eggs
Melt the butter and once cool, add the juice and zest of 2 lemons (if you’d like the lemon curd to be really tangy, add juice/zest of a 3rd lemon)
add the sugar and then add 3 medium (or 2 large) eggs. Probably best to use an electric handheld whisk as it takes some time by hand. It will look separated for a while, but will come together.
Pour the mixture into an ovenproof dish, cover with foil.
In the Pressure Cooker, pop the trivet and 1 cup of water into the PC bowl and place the ovenproof dish inside.
Pop the lid on and choose Pressure Cooker function, disable Keep Warm, ensure PC is on SEAL position.
Click the time to 10 mins and press start.
Once the PC has finished, leave it for 10 mins or so to naturally release.
Once the 10mins+ are up, remove bowl carefully (it will be hot) and let the lemon curd completely cool.
Whisk until a smooth consistency and pop into a pre-prepared jar.
Pop sterilised airtight jar into the fridge, it will thicken further.
Store lemon curd in the fridge for 1 to 2 weeks, can be frozen for a month or more, defrost in the fridge before using.
You could use the lemon curd as filling for a cake, tart or pie, or simply spread on toast

Huh! I am using up the fridge contents because we are about to go on holiday. So this mornings breakfast was lemon butter spread on a wholemeal wrap rolled up. Hubby said “ I could have this for dinner you know, “. And here you are making lemon curd, such a coincidence. Great recipe.

I've just had really bad news being disabled my daughter take my gorgeous cookerpoo Bailey to the vets for me, he had been poorly for a few days I expected him home with medication but sadly he had to be rushed to Petmedics Animal Hospital in Manchester as he was a very poorly boy. It had been discovered with blood tests he was diabetic n urgently needed to be on an insulin drip. Within 2hours we lost him poor baby he wS gorgeous.ypu have really taken my attention for a while with your lovely looking lemon curd, never had it for years n years nut will be soon.

I’ve just made this in my Instant Pot. Worked brilliantly. My grandsons are coming over tomorrow evening after they’ve finished work and I’m going to make them a lemon tart. They’re always looking in the fridge for goodies.

Bring 500g of blackcurrants to a simmer with the juice of 2 lemons, stirring to release the juice. Simmer 5-10 minutes.
Push through a fine sieve into a large bowl.
Add 125g unsalted butter and 450g granulated sugar.
Set bowl over pan of simmering water and stir until butter has melted.
Take off heat and wait until blood temperature.
Pour in 4 large eggs (beaten) through a sieve whilst whisking.
Return bowl to above the simmering water and stir until thick and creamy.
Pour into sterilised jars.

Fantastic recipe. Thanks for making it Kerry. I have recently bought an Instant Pot and I think I will have a go. I have a recipe for a lemon curd cake which incorporates the lemon curd in the mixture before baking. I use shop bought curd so it would be nice to make my own. I wonder if I could substitute the lemons for oranges. Some of the supermarkets used to do an Orange Curd but that seems to have disappeared. I would like to put it in a chocolate sandwich cake! I think perhaps the quantity of sugar would need to be adjusted otherwise it should be the same.
Most of the shop bought stuff has yellow colouring added to get the yellow colour that's seen in many shop bought Lemon curds.

Evening again, Kerry, wow, love lemon curd. We made the lemon pie yesterday, Harrison doesn't like lemon cake because he had one before and it wasn't nice, 2 pieces later he soon changed his mind 😂😂. One of the small cake companies round here make lemon curd empire biscuits, and they are a game changer she puts a wee sprinkling of coconut on the top 😋😋 oh I might need to get a pressure cooker 🤔 That looks proper nice & thick, how I think lemon curd should be. I remember years ago I made a chocolate cake with lemon curd filling for my uncle long before I had the boys, and in fact, before I met Colin 😂 . I love lemon curd and lemon butter so much! When I make it, it's still quite quick. I reckon the usual way of whisking the mixture over a double boiler would take roughly the same amount of time as waiting for the multi cooker to come up to pressure? You're basically making a custard but with lemon juice and melted butter I suppose, and if the butter gets cold I think it will naturally separate from the lemon being fat and acid .... Hence whisking it in a bowl over a pan of simmering water until it thickens. All of this is just me musing and guessing if course 😂. I bet it tastes the same however it's done 😁❤️

Same here Mick, one of the few things I distinctly remember from my childhood. Mind you we were very lucky, had a patch of land nearby that was a wild overgrown garden we called 'the old ladies' who we had decided had died by being bulldozed while in the house (which had in fact been knocked down in the dim n distant past) macabre imaginations! Anyway, bonfires were a regular thing on this patch and we would nick a potato from our respective kitchens to throw in the bonfire. Hot black jacket potato straight from the embers of a fire yum (no parents hovering about either😂)

Hello this is my diet version! It does need powdered artificial sweetener though.
Ingredients
•
⅓ cup of fresh lemon juice
•
Rind of 1 lemon
•
1 egg
•
4 - 5 tbsps of sweetener
Steps
1
Warm juice and rind in pan
2
Whisk egg and sweetener in bowl
3
Once juice is warm, slowly (very - to avoid scrambled egg!) drizzle juice into egg whisking all the time.

Whisk for 1 minute
5
Return to pan
6
Heat mixture stirring continuously until curd thickens and coats whisk
7
Put in airtight container and store in fridge

I think that's the reason I'm not a fan of lemon cakes etc because of lemon curd in the 60's when we were basically forced to eat whatever was put in front of us Kerry,waste not want not as we were told
Ah Ricky, I completely understand - this is the same for me with rice pudding, I used to have to pinch my nose and force myself to eat the schools rice pudding as the dinner ladies wouldn't let us sneakily try and get rid of it. To this day I cannot touch the stuff, and I've had requests to make it 🤢
