BUDGET busting QUICK CHICKEN stew

- one of the great suggestions in my community post a few days ago was recipes that used leftover food and since this is a budget channel, that makes perfect sense.
So here is a classic, chicken stew using the leftover meat from a Sunday roast and even better, 5 minutes and its done! Pressure cooking hasn't come easy for me, having grown up in the 70s and 80s, when my Mum had a beast of a pressure cooker that made horrendous noises, essentially a loud and frightening beast of pan, with massive metal top handles that were meant to stop it exploding.
Anyhoo, I think the more modern PC have moved on a lot since then, and the COSORI PC is sleek and easy to use.

25g butter
Leftover chicken
1 onion
1 bay leaf (optional)
1 leek (optional)
splash of wine or cider (optional)
2 cloves garlic, minced
2 medium sized carrots
1 large potato (floury)
1tbsp wholegrain mustard
2 tbsp plain (all-purpose) flour
1 1/2 cup/200g approx savoy cabbage
1 chicken stock
600ml chicken stock water (from boiling chicken carcase)
salt & pepper to taste
Melt butter on Saute, add onion and cook until soft.
Add garlic (& bay leaves if adding) cook for 1 min.
Stir through the carrots, leek and potato (& the chicken stock cube) - coating it in the buttery juices and leave to cook for a further few minutes.
Scatter over the flour and stir, leave to cook for 2 mins.
Splash in the wine/cider if using, simmer for a few minutes then pour in the stock liquid.
Pop the leftover chicken into the pan.
Give everything a good stir, cancel Saute and press Pressure Cooker Function.
Close/lock PC lid, put on HIGH, disable KEEP WARM function, check on SEAL and adjust time to 5 mins.
Press START.
Once finished, either leave to naturally release (do nothing for 10mins+) or move slider to VENT. A lot of steam will release.
Open lid, add Savoy cabbage, return to SAUTE and simmer for a few minutes or until cabbage is cooked.
Serve with buttered rustic bread

I take as much of the meat off the carcass and set aside. I then put the carcass and bones in my instant pot and add water. I then pressure cook the carcass for thirty minutes, the bones will be soft and much of the collagen will be in the stock. When this cools it is a jelly. Now proceed with frying of your vegetables including the cabbage and onions etc.,add the stock and seasonings, simmer,add the chicken ,it's already cooked. At this point I add suet dumplings. This eliminates the hour of cooking the carcass and over cooking the already cooked chicken and this meal can be ready in about an hour.

OK...I give in.... cant hold out any longer no sirree Bob..yep...I'm a sucker for a gadget!!!! I'm swapping out my slow cooker n my redmond multi cooker for a Corsori pressure cooker. I used to find old pressure cookers terrifying...but you have convinced me!! Wow!! A whole chicken stew..( stew cooked on hob..casserole in oven! Xxx) in 10 mins...yep I'll have me some of that! Hi Mel, you won't regret it, the Cosori which I have does so many things, searsaute, slow Cook, soup, rice, etc, etc. It is perfectly safe as well. I bought it from Amazon, think it was about 90 quid then, not sure now though.

@@melrob5 I'm going to try sous vide cooking in it soon, I got a couple of thickish pork chops from the butchers, apparently it makes the meat tender and keeps it really moist. Well that's the theory 🙂🙂

I simmer chicken carcass with bay leaf ;thyme; celery stem ; black pepper corns ; parsley and onion and carrot,it makes a nice stock , love your videos and have learned a great deal from them

Hi kerry I loved uour chicken soup it looked yummy nice for a freezing cold day I bet the was no left overs .a stew is cooked on the stove top and casserole in the oven well that's what j was taught at school by our cookery teacher I think the first thing she taught us was no running in the kitchen cos you could scald someone who's carrying a hot pan or got something out the oven .it annoys me even you see people running round in the masterchef kitchen love fran xxx

Hi Kerry, i thought you would have done the stock in the pressure as well. It looked really tasty. I think i'll try cabbage in mine next time. What i did one time was, i'd made the stock and i went to drain it, i used the strainer but forgot to put a dish underneath so i lost half of it down the sink.

I do the same with the carcas, then add a leek, onion, grated carrots, swede and a cup of white uncooked rice to make chicken rice soup. Then a good handful of chopped fresh parsley at the end.

Very tasty looking Kerry,I normally cook my chicken in the pressure cooker with a chicken stock cube as Carol doesn't eat the skin so no need to crisp it up so I then use the stock from that for a chicken stew or soup, another great recipe video Xx
Evening Kerry, I love making chicken rice soup with the chicken carcus 😋😋😋 I don't know why I've never thought of a stew before. Oh, I used a savoy cabbage this week, but it was to make coleslaw 😂. I use the 'broth' button on the Cosori pressure cooker for 30 mins, then strain, put the broth back and add one whole onion, stick of celery, couple of carrots, potatoes, 1 chicken stock cube and one veggie and half a cup of long grain rice. Pressure cook for 4 mins and 10 min natural release. Take out the onion, potatoes, most of the chopped carrots, celery and some broth and blend it with the stick blender (don't blend the rice). Then put it all back, add the chicken pieces and test the seasoning. Serve with some fresh lemon juice and pepper and some crusty bread. Delish.

I got that same pressure cooker after seeing yours.I love them for making soups and stews ,Gulash etc...The soup looked tasty.Is there a reason you did not bung the cabbage in with the rest?......I am really enjoying your channel.

I have a chicken carcass in the fridge just waiting for this recipe! 😊. Kerry would you only do the first part on the hob the day before you make the stew or could that also be made in the pressure cooker which is how I normally make my stock for soup when there is hardly any meat left? I’m sure it can but I wonder if it is possible for the meat to be too stewed! 😂. May have a go and report back! Sally ❤
Do you know Sally I think that's a brill idea, pressure cook chic carcus/onion and water as if on the hob and just transfer to colander as usual. I def will try that, will save an hour simmering on the hob! You are a genius 😃💕💕

Could you do that in the pressure cooker do you think. That’s taking your meat off the bone I mean. Ah so it’s. Ore like a chunky soup really isn’t it. Looked nice, I may have popped some dried or fresh herbs in there if I was making it,
Does it matter stew / casserole it will taste good anyway
From my Sunday roast, i regularly, particularly with chicken/turkey, strip from the bone, or chop/ slice lamb, beef or pork, all good for adding to: stir fry/ curry/ casserole/ stew/ pasta dishes, etc. I usually comply with the vegetarian version/ method for making whichever dish then add the pre-cooked meat into a wetter than usual (for the recipe) sauce then tip in the cold/ prepped meat; the wetter sauce should slightly cover everything, and poach the dish, until the sauce has returned to the regular consistency; then serve, and enjoy.
