BUDGET BOX: how many meals can I make out of £1.50?

  • after the amazing meat reduced bonanza, I forgot to buy loo roll and walked past a few £1.50 boxes filled with produce.
    The challenge I've set myself, is how many meals can I make out of the box. Today it's roasted veg (with pork shoulder steaks) and tomorrow I am planning to roast more veg & some of the sweet potatoes but turn it into a soup. After that I would like to make a passata/marinara that will form part of a cannelloni meal. What could be a fourth or even a fifth?! maybe sweet potatoe fries ~ any suggestions welcome....

    Roasted stuffed peppers, a stew or casserole, cheese & onion potato pie with grilled tomatoes. Sweet potato wedges with a chill tomato dip. The list of possibilities are endless. Happy cooking 😃

    My Kerry that was good to watch . What a great find, you could put a lot of people to shame how you try to do things, good on you. If i get " cheap" peppers i like to make soup with them.

    What a bargain. You could do a caramelised red onion and feta cheese tart using a roll of ready rolled puff pastry? Caramelised red onion relish. Red pepper and sweet potato soup. The tomato and pepper marinara sauce sounds good.

    Yes, here in Canada, the olive oil is ridiculously priced. I paid almost double what I did last year. I've been told for years about how good olive oil is for your health but I'm switching back to butter as well. Cheers!🥰🖖

    On wow just watched the pigs in blankets in pastry they def came across fab u less. Have you ever tried a egg and bacon pie in the air fryer myself and my wife started using in Dec she takes cakes and bread and we use our oven now very little, thank you for your videos we love sitting watching them so much take care.     Love your videos ,I live in northern Scotland shop at lidl but never found bargain box like you did wish I could though as I’m very much like you trying to get good food at reasonable prices ,I just try to do the best I can with what I have

    Hi Kerry I had some peppers that were on the verge ??!! So I chopped them up and froze them. They were great. 2 bags different size pieces foe different meals. Then froze some tomatoes, chopped up. Grand xx

    Lovely - roast veg in the air fryer is great. If I'm doing a slow cooker meal I quite often just give the veg/meat a quick roast in the air fryer first to get a bit of colour on it! Oh, and if you're looking to change up your diet a bit - the 'Zoe' channel is worth looking into. Spin off researchers from Imperial College (so not crazy youtubers!) who go into what regular people can do to change diets, ingredients etc. Worth a look anyway 🙂

      @@budgetcookingukYeah - I first came across them during covid-times when they were focussed on that. But I think that was never their primary focus - just came about at the same time they were developing their "let's check a lot of people and see what we can figure out" app. They seem like a decent bunch - not flogging dodgy supplements or whatever else you often find on youtube!

    Those Veg Boxes are absolute delight.
    Folk where I live according to shop are reluctant to pick them up goodness knows why.
    I often end up with a couple and nothing goes to waste from usual steam veg, roasted, veg, soups, stuffed peppers, tomato sauces and tomatoes in a sandwich down to cherry tomatoes to just eat as yummy along with raw peppers... Oh Ann not forgetting depends on box a lovely fresh salad...
    A box of rainbow colour veg bursting with flavour and such a blooming good bargain. 😋

    Spanish tortilla. Curry. Pasta bake, veg loaded and then cover with cheese so the boys will eat it.

    Bargain! Stuffed peppers? I love a mixed pepper pasta sauce! Maybe thinly slice sweet pots to mske homemade crisps? Healthy snacks for the boys..😂❤

    I make roasted veg burritos with either some sort of meat(mince beef or chicken etc) or with lentils (I got the idea from Frugal Jo)

      Oo that sounds delicious Maureen 😋😋😋 we are visiting family and have just had a lovely nachos with mince/veg n rice/sour cream and all the rest of it - a feast! The layered nachos would do very well in an Airfryer, hmmm

    Great bargain box, love your roasted vegetables, unfortunately I can’t cook in the base of my Airfryer but I’ll try in a foil tray. Ratatouille with your onions, peppers and tomatoes 😊

    My Italian mother in law used to cook the pork chops in tomato marinara sauce on the stovetop /hob for hours. Luckily you could use your Corsori Insta pot. The pork falls apart and taste great on it's own or over pasta. Another idea is sausages/pepper and onions sliced. You could serve on a roll with some marinara sauce. Love everyone's suggestions. They're suggestions help us all.

    Evening Kerry, I've seen others with these boxes but haven't seen them in our lidl when I'm in (although not in there very much). Absolutely fantastic for the money. You could blanche the veg and freeze it. Omg, canelonni is my favourite. We had your chicken tikka kebabs tonight and with 3 chicken skewers with red pepper & onion on top of lettuce, cucumber, and a WW wrap and it was only 3 points which was amazing. I lost 1lb today, but I'm delighted as I lost and not gained. What about veg lasagne and that's using the marinara sauce twice. Sweet potato fries 😋😋😋. That looked bloomin delicious 😋.     Hi Kerry, that was a great box from lidl. Roasted veg is yummy and so we're the pork steaks. Look forward to seeing what you come up with next. Is it marinara you're thinking of? The price of olive oil is astronomical now, I've been using butter a lot as well. ❤

    I only use olive oil so it´s making things more expensive now.I heard from a Doctor..Dr.Berg I think.. on here ,that the other oils take about six months to leave your system..pretty scary.

    I've being shopping in Lidl for as long as the local store has being open, November 2019, and they have never had any of those boxes for sale. I've never bought Olive oil as it's expensive, even when the price was lower, I buy the two litres of frying oil for £2.99 as I make my own mayonnaise it's a bit dearer than the veg, rapeseed, oil but cheaper than the sunflower oil I used to buy.

    Hi Kerry. No garlic in roast veg??? Teehee...I sneak it in..Suz isnt that keen...😂 If you make passata and add black olives n capers..it become Putanesca.... translated means tart or wh%res sauce!! Yumm. Xx

Today I made waffles from scratch in airfryer...oooh...yum....Greek yoghurt n stem ginger for Suz...butter n brown sugar for me...plus turkey curry in Corsori pressure cooker...in 10 minutes!!!!!     olive oil is expensive now because they said bad weather has wiped out a lot olive groves and reserves are running low - seems a lot of america still gets it cheap but i guess, maybe, they grow olives locally??
    I'm tending to use Lard where possible for cooking
    my local aldi & lidl don't do those boxes but then I also don't drive so no point shopping there as not dragging shopping home on two+ buses

    Kerry, I too am trying to give up processed food and eating more healthy. The FIRST thing I stopped buying was ALL seed oils - they are deadly! I know olive oil is really expensive - but what price health? For roasting I've gone back to good old lard.

      Ah I do love lard lol, you know you're right, it clicked when I realised per ml olive oil is cheaper than butter per gram🤦‍♀️even at current prices - it's just the short term affordability £1.69 or £3.99, esp when you've a fixed budget and every penny counts but! I will squeeze it back in and use the butter less, the cheaper option albeit less obvious (hope that makes sense)😄👍💕

      It’s cold pressed oil that is healthy. If you can find a version of rapeseed oil that is cold pressed it will usually be cheaper than EVOO and will be produced in uk.

      Mine do the £1.50 boxes occasionally, its never constant - maybe worth asking the staff? It's always stuff near or on sell by dates, always veg/fruit

    did you know that if you cook your potatoes and leave them over night in the fridge, the starch will change , better for your stomach

      Rapeseed oil is very good but look at the bottles ingredients labelled Vegetable Oil....Sainsburys own brand IS 100% Rapeseed Oil..! Very much cheaper than the 'posh' bottles of Rapeseed oil...this is a little tip passed on to me about a year ago....who knew?
