Thank you so much for choosing my suggestion from the previous video, this is exactly what I was looking for - I'm biased but this is one of my favorite Budget Eats episodes and I'm totally using the flavored rice meal prep next week.
If you wanted to make this a series I know I wouldn't complain - vegetarian or vegan meal prep, meal prep on a bigger budget (still within a modest budget like $40-$50), gluten-free meal prep, all microwave meal prep, Asian-inspired meal prep, you get the idea.

I'm from the Caribbean, when peeling green banana, green plantains or any produce that stains your fingers, we use cooking oil to coat our palms and the knife that we're using. This helps to prevent staining.

Agree. She is very very creative and inspiring on how to use rice and beans, my absolute favorite food. If you buy/grow fresh herbs and dry them, it can make a whole world of difference.
June should really consider making a Budget Eats cookbook with all of her favorite Budget Eats concoctions, honestly. And obviously sell it for $25 to keep the Budget theme intact.

I've been struggling with mental health, since I was in a motorcycle accident in March. I used to cook to cheer myself up, but couldn't use my hands for a while. When I'm feeling the absolute worst, I would watch June cook and plan what I would cook when I could. Now that I'm back on my feet, I listen to June while I cook in my own kitchen. Thankfully, my mental health is improving along with my physical ability. Thanks to June and the folks who produce Budget Eats! Y'all are wonderful.
I adore the realness of this show. Scorched wood cutting board? Have it and use it. Grating carrot stubs? Never do ( snack for me). 90 sqft kitchen with no hood vent in the summer? We sweat in small kitchen solidarity.
All of these! Plus the fact that she is real about the fact that sometimes it's just darn boring and can feel like a chore, instead of smiling telling us what a breeze it is to meal prep.
Finally someone announcing to world, that getting grease off plastic is hard, hate the plastic usage in weekly prep videos. S much environment risk and harder clean up.
I think dawn dish soap 10x platinum is the best to remove grease from plastic and all other dish ware

I agree. I adore the series, but it seems like it takes so much out of our hero. There must be a way to make it easier on her. But it does really prove the point, the budgets can be so low because her labor costs are through the roof :(
Yeah I also noticed that 'all I want is an equitable workplace' sign on the fridge...haven't checked if it's in other videos so might be a coincidence but I hope June's getting all the rest and renumeration she deserves

I love love love June's honesty. There's enough "perfect" videos. But the reality is that cooking takes a toll. And that's ok. It's hard work! Her candid comments throughout the video make me love her (& Delish) even more.
June is the best person I have found to watch on utube. I would follow her to other platforms if needed.
Just such a fun series. I really can't emphasize enough how much this has changed my approach to cooking. I have been able to stretch groceries, think outside of the regular meal box, and just embrace the weird when it comes to food.
Honestly this is what meal prep means to me. Preping some ingridients, being creative and eating fresh food daily. I dont know anyone that would eat the same meal over and over through the whole week, plus the prepared meals get grosser as time passes!
Also pro tip (maybe you’re already using it): when microwaving rice add a glas of water alongside the rice as some of the water will evaporate and keep your rice moist.

I never thought of adding a cup of water next to the rice! I always just added a splash to the rice itself. I'll definitely try that next time, thanks for the tip 😁
I love how real budget eats is...your kitchen gets messy, it takes longer than you think and plating for aesthetics is annoying when it comes to washing the dishes. Never stop, June. This was great. The creativity was still off the charts. That corn/risotto pudding was like a poor man's version of a Milanese risotto that has saffron.
The "risotto" actually reminded me more of a savory pork congee! It looked delicious.

Your spice cupboard overwhelms me, but it gave me a couple of ideas. How about a clean out the spice cupboard episode, finding ways to revitalize some of those tired spices we all seem to hoard.
Or a how many spices can I buy and use and store properly for $30?
You throw things in so confidently because you know what flavours will be emparted, I look at the saffron and juniper in my spice drawer and wonder why I have it. So yeah, a don't be afraid of your spice cupboard would be helpful. Much love
YES THIS. As I watching, I would be like "oh yeah cumin and coriander that's cool, I'm tracking, wait what's hing? how does she come up with these spice mixtures???" It helped me realize that in cooking, the spices are very much like paints would be for an artist and I'm sure a lot of June's ideas for combinations come from intuition that's been ingrained by just cooking a lot and eating a lot, but I'd love to get a deep dive into it!

Would love to see a "budget eats - travel edition" where June creates a picnic basket one day (then hangs out at a park with Aaron) then maybe it's the perfect roadtrip snacks (and then Delish sends her and Aaron on a weekend away), then the perfect weekday hike mix.
It’s the starches of the plantains that oxidize and stain your fingers. I’m from D.R and sometimes I see some family members coat their hands with a bit of oil before peeling them. They have always told me that the starch will stain your clothes ( not sure how true this is tho )

If u wash your hands with salt the “glue” of the plantain is going to disappear… also if u put the plantain in water (u can season the water so your plantains taste like something else) and keep it on the fridge is going to stay fresh and not brown and dry

In CR its called Mancha, and it is part of a liquid that the plantain drips when being peeled, doing it under water will prevent that from happening.
I took some inspiration from this show for our dinner last night. Had leftover carne asada beef so I threw some canned refried beans in a pan with the leftover carne asada cooking liquid, once they were smooth I threw in the carne asada that had tons of onion & cilantro of course. I took leftover corn tortillas & sprayed them with oil & put them under the broiler. Transfered the carne asada beans to a bowl with shredded cheese & mixed together added more cheese on top to melt with some diced tomatoes, green onion, avocado chunks & sour cream. The corn tortillas turned into perfect little tostada shells you could top or break into chips & basically make scoop nachos

About To Eat does something similar! The host will work through like an absurdly big amount of one ingredient (like 20lbs of eggplant), using it in different ways

Love it June. My recommendation for Budget Eats would be an episode where you feature Prepper Pantry food items. It has become such a trend and people are looking for creative ways to use their 'stockpiles'. You have already done such great variety with many of the staples so I think an all prepper pantry episode could be cool. Oats, Wheat, Rice, Beans, Honey, Canned Meats and Veggies, Dehydrated Foods, Freeze Dried Foods, Pressured Canned and Water Bath canned items, etc.
Hoarders are calling themselves “preppers” now? Lord help us all.

My favorite Budget Eats so far- love the food prep vs. meal prep. I will be making a few of these (or variations with what is in my fridge/cupboard). Give June a raise- we need this kind of genius, especially in this economy.

The firmness of the pressure-cooked bean is a real problem. I noticed the same problem in slow cookers as well. Lucky
for me, I ran across an article addressing this issue, and for some reason (it has to do with the presence of steam) if you cover the surface of your beans with a sheet of aluminum foil, the beans will come out perfect.
June cooks like I do...clean out the fridge, toss a bunch of rice and beans in the bowl, and eat a happy, warm, cheesy bunch of mush. She spices it better and presents it better. And I love it.

I usually go for an hour in the instant pot with beans. Just so they get good and soft, especially if they haven’t been soaked. Love ya June ❤️

So fun to watch! June mixes knowledge from various cuisines freely, which is liberating. About the spinach, once it starts to get a little iffy or right before, blanch it and keep it in the fridge to prepare other dishes with it, such as blended soups, gratins, vegetarian pâtés like a Marais Poitevin farci, etc.
I don't know the science behind the plantain oxidation on the hands but my St.Lucian granny always taught us to put oil on our hands prior so it doesn't stain our hands. It works

As a college student, I'd love an episode with only 1 stove burner (and a decent time limit, if possible). I know the food pantry video had similar restrictions, but it was with the food pantry ingredients which limits the options available.
Hi June, your videos inspire me. I just spent the last two days prepping for next week's heatwave. Everyone's favorite store (Mango Rico) had two sleeves of garlic for $1 this week, so of course I bought two. Then my roomie bought two more! They were all in a use immediately state, so I now have two quarts of peeled garlic in my freezer. Wow did that take forever, but also fulfilling to have SO MUCH garlic ready to use. I wish I had thought to confit some. Next time. I hear you on the packaging issues. Those designers deserve a special place in the afterlife next to people who create kitchens for LeBron James when most women are 5"4'.
Rice and beans are the base of Brazilian food. We eat rice and beans everyday, sometimes twice a day. It's a staple food, eaten by the poor and the rich.
But lately rice and beans prices are ABUSIVE. Brazil is suffering from one of the worst inflations in history. Some of us are not having access to eat the food we call "poverty food" here in Brazil, which is rice, beans and eggs.
So I started following some Junes rules. I use bean broth a lot, use it yesterday to make my rice more rich. Also yesterday I was doing sweet potato grilled skin on my toast maker.
I loved watching Budget Eats cause I like to use the ingredients to their full extend. Now I'm using June's techniques to survive.

Hi June. When handling plantain, it helps to put a little oil on your hands so that the sap doesn't stick on your fingers. You can use any edible oil or even butter. Also, to prevent them from browning, you can put them in water with a little salt mixed in so it won't oxidize. It won't affect the taste.
I just learned about an easier way to peel garlic when doing a while lot like this... nip the top and bottom of and microwave for 10seconds... it slides right out! For those of us without June's perseverance superpowers

If you trim the top and bottom the skin will slide away without microwaving.
@@alijane6675 I have not found that with my garlic. I hate using the microwave and avoid it whenever possible so will usually opt for the crush.. but when peeling a few heads at a time the microwave technique makes all the difference
Put them all on a baking pan, smash with a skillet, separate out from peels.

One interesting trick I learned about onions is if you cut it and then put it in a bowl with water, it'll take the sting out. So like I'll cut it in half, put the cut half down in a bit of water, and let it sit. I usually go overnight, not sure the minimum length.... but when I pull it out and cut it, no crying! Works with every onion ever, promise :D
Budget eats: Sorta Chopped. Not with a time limit tho. But have Aaron go out and buy the ingredients for the week. June must craft meals from the assortment.
Hey June, I keep my salad greens in an air-tight container with a paper towel on the bottom and top. Check and change the towels when they become wet. This makes them last so much longer.
She did it with the dill. Those bags of greens are sometimes deceptively lulling us to think they'll stay fresh if kept in them.
Since I've met you , almost nothing go to waste. We eat totally from scratch: from peanut butter to our delicious chicken patty. No cans, no preservative, etc... Thanks june!

Spinach -rice (spanakorizo) along with cabbage-rice (lahanorizo) and leak-rice (prassorizo) are staples in the greek cuizine since they are so easy and cheap to prepare and with a piece of feta they're basically a complete meal! Loved this ep as always :)
