  • The last meal from the £1.50 Budget Box, so four meals/recipes created from that bargain vegetable box. I am pleased I managed to make 4 meals/recipes.
    First time stuffing peppers and they were surprisingly lovely. Slight fail using light cheddar - never again!! it's like plastic.
    The new potatoes from the Budget Box were sprouting but I pulled them off, washed the potatoes and roasted them with thyme - delish!

    Ingredients:
    bell peppers, I used yellow and orange cut in half - insides removed
    100g Cous Cous (enough to fill 4 halves)
    2 slices of bacon, crispy & finely chopped
    1 red onion, finely sliced
    handful of spring onions, the greens
    grated cheese for the topping
    butter or oil to fry the onion etc
    (you could vary above depending on what’s in your kitchen, a bolognese sauce would go very well)
    Cut the pepper in half and remove the insides (seeds) no need to remove stalk, wash under tap and set aside. Melt the butter and fry the onion, spring onion greens and crispy bacon bits. In a bowl, put 100g cous cous, add seasoning if you wish and pour in just boiled water (100ml) and cover, leave for 5ish minutes before fluffing up with a fork. Add the fried onion/bacon mix to the cous cous and mix thoroughly. Spoon into prepared peppers, pushing down and filling to the top. Sprinkle the grated cheddar on top, season to taste and pop into the Airfryer
    Bake Setting for 10-15 mins at 180c/350f (adjust times depending on your AF, always check as AFs vary in cooking time by a few mins or so)
    I had mine with roasted New potatoes on the side.

    I have to agree that does look very nice, my sort of food for sure. I like them with a salad. Nice having new pots roasted sometimes nice sometimes not think it depends on the potato. How is your diet of a kind going. Hope your feeling the benefit. I am like you enjoying veg dishes but also meat dishes . Just really cutting out carbs where I can or reducing right down. Have lost about 2stone in total. Times it went back by a few pounds.
    ,But that was due to having birthday and treats at Xmas. but been strict over past 12 weeks,

    I always parboil my peppersbefore filling them. That way they cook all th way through. Halve and empty them before boiling.

    Looks lovly. Welldone. I love stuffed peppers. You mention the peppers. Needed a bit longer. !? I parboil mine. Halfed. in.microwave. fir few minutes. Before filling them. & find thats helps cooking time. !, ❤

      ❤ I just half them. Empty. & cover with water. Only Need 3/5 mins. Let cool a bit. & fill. Ready for A Fryer. Enjoy

    I love stuffed peppers and make them a lot cut as you have done. I always add a drizzle of oil over the top allowing it to drizzle down the peppers which I will have placed on tin foil in the air fryer. I find a longer slower bake works well and gets the peppers nice and soft with some caramelised edges. All nice with a few added dried sultanas or raisins in the stuffing mix.

    Hi Kerry, lovely meal again. Can I just ask why you put the peppers on bake setting and not roast? I am never sure which setting to use for cooking different foods. Perhaps you could do a video on that xx

    I'm sure it was lovely but for my taste it all could have done with cooking a bit longer and it just looked a little bit dry, I'd have added some kind of sauce to it. However well done on using that fab box of veggies, what a bargain! xx

      Thanks June😀👍💕 that's true, I did say that re cooking for a bit longer for a more 'well done' roasted pepper during the taste test, it's tricky when you cannot see the bottom nor be able to turn it upside down during cooking. Was very tasty😋

    Hi Kerry if you can find them you can also stuff the Really large tomatoes, if you've any leftover in your cupboard you can always use a pack of the more 'exotic' stuffing mixes, or if you've got them throw some golden sultanas into your cous cous

    They looked great... I prefer top and sides to be soft but bottom crunch on peppers to give texture.
    A favourite filling is left over rice especially if I have done a Chinese Special Rice day before or if I have plain boiled rice left I throw in Indian Spices and whatever in fridge.
    Those boxes are such good value.
    It is now 1am and after many years of night duty and being a natural Owl I am wide awake so I have pea and ham soup on while I iron and catch up on You Tube.
    Lucky in morning I can do 8 to midday sleep and all will be well 💜

    Looks delicious Kerry I haven’t had stuffed peppers in years..would the peppers be softened if you part cook them first then add the filling for the remaining cooking time? Your potatoes looked amazing

    Hi Kerry, I hope you're well.
    I liked the look of that dish! When I make couscous I always put a chicken stock cube in as well. Not sure if it's the right thing to do but tastes good so can't be too wrong!! Maybe mix some cheese in with the couscous before cooking may help it not get too dry??
    I'm growing bell peppers for the first time. They're looking good so far so it they survive I'll be trying this. 🤞😉

      Hi Kerry. Yes I got a greenhouse last year so trying peppers. That said, it does say they can grow outside. I'm guessing a sheltered sunny spot and a decent summer!! 🤔🤣🤣 They're slow to grow from seed though, needed to start February indoors. Might be worth seeing what the garden centres have though.
