Eggplant parmesan sandwich ....champion style 😆

2 small eggplants
approx.16 Oz of mozzarella cheese
approx.8oz of parmesan cheese
2 eggs
1/4 cup milk of choice (we used grassfed)
full fat
2 cups italian bread crumbs
1/4 tsp of oregano,paprika and blackpepper
1 loaf of sourdough ...check to make sure your sourdough has no yeast....or support local bakery to guarantee true sourdough...just a little FYI .🤗
