- Kick off your morning with the ultimate breakfast sandwich. This recipe features a delectable sprat or sardine salad, perfectly complemented by fresh tomatoes, crisp lettuce, and aromatic tarragon, all layered between slices of golden-toasted bread. Experience a gourmet breakfast sandwich that combines simplicity and mouthwatering flavour in every bite.
Ingredients:
* Bread - 4 slices
* Eggs - 4
* Whole grain mustard - 1 tsp
* Tomato - 1
* Lettuce leaves - 4
* Yogurt - 100 g
* Sprats/Sardines - 80-90 g
* 1 tbsp parsley
* 1 tsp tarragon
* Pepper
Preparation:
1. Boil the Eggs: Boil the eggs until hard-boiled, then slice two pieces of bread.
2. Prepare the Sprats/Sardine Mixture: Place the sprats in a bowl and mash them with a fork. Add the yogurt and whole grain mustard.
3. Add Tomato: Remove the core of the tomato and dice it finely. Add it to the sprats mixture.
4. Mix in Eggs: Peel the eggs, chop them into large cubes, and add them to the sprats mixture. Lightly mix and season with pepper.
5. Toast the Bread: Heat butter in a skillet and toast the bread until golden brown on both sides over high heat.
6. Assemble the Sandwich: Spread the mixture on the drier side of the toasted bread. First, place a lettuce leaf, then top with the sprats mixture.
7. Finish the Breakfast Sandwich: Close with the second half of the bread, press slightly, and cut.
