Hello friends! Today I present to you a very tasty and easy to make recipe. Baked eggplants with basil pesto, cherry tomatoes and cheese is a vegetarian dish very rich in flavors and aromas. They are an ideal solution for lunch or dinner. When I prepare these delicious eggplants, I can't stop eating them! - 3 eggplants
- 200 g (7 oz) cherry tomatoes
- Basil
- 1 clove of garlic
- Abundant olive oil
