I made these this weekend. Frying brings out the sweetness and takes out the bitterness…you said you didn’t try them yourself and just decided to form an opinion…that makes you a BONAFIDE HATER…try again 😂
I love that you fry the breaded eggplant first, thats what I do also!.. It seems like most recipes skip the frying /oil and make a "healthier" version but to me that ruins the whole dish.. I make eggplant parm very similar to the way you do, but one thing I do is after slicing the eggplant I squeeze the moisture out and place between 2 paper towels. I also top mine with nice, melty, golden brown mozzerella.
I'm probably the only person I know who orders this with all sauce on the side, the crisp and the cheese with the hot sauce you spread yourself is the way to go.
Forgot the most important part after cutting salt them to get the bitterness out. Then wash the salt off them after 10 mins

Salt to get the bitter liquid out first rinse pat dry then SEASON bread and fry
