    Forgot the most important part after cutting salt them to get the bitterness out. Then wash the salt off them after 10 mins

    I made eggplant parmesan once. Though it tasted alright, I ended up making them rather soggy. I think I'll try it again, though. Your version looks really good.

    So you make them crispy then slop sauce over them so they go all moist and not crispy anymore!

    You had eggplant dry out because it has too much moisture in it before you actually cook it, so it stays firm and not soggy

    Definitely not Italian. You need to salt AND press them to remove moisture and bitterness. 3/10 without even tasting it.

      I made these this weekend. Frying brings out the sweetness and takes out the bitterness…you said you didn’t try them yourself and just decided to form an opinion…that makes you a BONAFIDE HATER…try again 😂

    I love that you fry the breaded eggplant first, thats what I do also!.. It seems like most recipes skip the frying /oil and make a "healthier" version but to me that ruins the whole dish..
    I make eggplant parm very similar to the way you do, but one thing I do is after slicing the eggplant I squeeze the moisture out and place between 2 paper towels. I also top mine with nice, melty, golden brown mozzerella.
