Tomato Caramel Panacotta

- I wanted to make a desert that looks like the famous 'Insalata Caprese' which is one of my favorite summer salads.

Ingredients:
For your Panacotta:
600gr Cream 35%
100gr Milk 3.5%
60gr Sugar
2tsp Vanilla Exctract
10gr Gelatin sheets (soaked in lukewarm water for 7 mins)
For Your Tomato Jam:
1kg of very mature peeled tomatoes (preferably the ones you use for sauce)
400gr Sugar
1tsp of Vanilla Extract
1tsp on fresh Lemon or Lime juice
a pinch of salt
Blend all except Lemon Juice and boil to reduce. When you have the right consistency, remove from heat, add Lemon Juice and stir. Immediately place them on sterilized jars, close with a sterilized lid and turn upside down on a towel for a whole night.
Caramel Sauce
80gr Caramel
5tbl spoons warm water
