Bacon Wrapped Meatloaf

Delicious Bacon Wrapped Meatloaf stuffed with Tomato and Mozzarella, served with Oven Baked Onions.

Ingredients:
For your Meatloaf:
600gr Ground Beef (low fat)
400gr Smoked Bacon Strips (medium thickness) for wrapping
50gr finelly ground Bread Crumbs
1 Egg
50ml Olive Oil
40ml Water
1tsp Dijon Mustard
1.5 tsp Salt
1.5 tsp Sugar
1 tsp Smoked Paprika (dusted)
For your Filling:
120gr Mozzarella
2 Tomatoes (medium sized)
For your Sauce:
500ml Beef Stock
150ml White or Red Wine (good quality)
100gr Smoked Bacon
1tsp Sugar
For your Onions:
6 large Onions (red and/or white)
Half of your Sauce (recipe right above)
Water to make your sauce thiner (make sure to add more water every time your tray gets dry)
