At this point, beating the fourth wall is kind of a requirement for a show so the creators can snap at the toxic fans or the haters who never gave it a chance without doing it via Social Media. I prefer it when it is done for meta humor or to poke fun at themselves, but now I can't find anything animated that doesn't have at least one episode or scene that is just the creators throwing a well deserved fit.
I don't think this is technically breaking the fourth wall. It's meta humor, yes, but the characters aren't actually showing awareness that they're in a TV show.
This is not breaking the fourth wall as they don't directly aknowledge they're on a TV show. What they did in this scene is called leaning on the fourth wall. They made comments that make sense in-universe but are definitely supposed to apply to the show out of universe too, so leaning on it, without really breaking it.

One of the best things about Gravity Falls was how well Alex Hirsch understood the mentality of his audience. You can tell he was just as big a fan of shows he grew up with as we are of Gravity Falls.
This right here. Every Gravity Falls fan knows the struggle when you have to explain how Gravity Falls is NOT JUST FOR KIDS. Excellent fourth-wall humour. I love how they subtly poke-fun at the show itself, using the show! This show is certainly one of the best shows of this generation.

Mabel's got skills xD
Enderdemonator well to quote Mabel,
"Nothing is stronger than the power of...Mabel."
