PSMF Cinnamon Buns Keto Carnivore Friendly

- Thanks for watching my video! The base for the batter I used for the cinnamon buns is PSMF bread which is Maria Emmerich’s protein sparing modified fast bread recipe. I had made a batch that I took half and made hamburger buns and use the remaining half for the cinnamon buns.

For the whole batter I used
380 ml of liquid egg whites
A dash of cream of tartar
60 g of egg protein powder
1 tbsp confectioners swerve
* I did add a tablespoon of confectioner swerve for the top layer of the cinnamon buns. I meant to add it to the mixture before I started the cinnamon buns but forgot. I definitely will add it at the start next time.
Cinnamon bun filling
1tbsp butter
1 tbsp Brown swerve
Few shakes of Cinnamon
Cinnamon bun topping.
I sprinkled A little bit of brown swerve and cinnamon.
Cinnamon bun glaze
3 tbsp Of confectioner swerve mixed with a splash of cream.
My bake time in my oven was 315°F for 10 minutes and in the oven, kept in the oven after it was shut off for 20minutes.
This recipe was so good! Probably one of the yummiest things I’ve created in a while. My daughters loved them as well. Let me know if you try them🤗

A Canadian keto cook yay!!!! At least metric measurements. Subscribed! Thanks for this, I love the PSMF cinnamon buns. I made Maria’s recipe recently, iced them with a cream cheese icing. We didn’t eat them all and they went quite hard, so I cut them up into chunks…cream cheese icing and all… put in the bottom of a small casserole dish, poured a mixture of 2 egg, cinnamon, about 60 ml HWC and powdered sweetener to taste over top, sprinkled cinnamon and baked 20 mins….bread pudding!! It turned out so good. Can’t wait to try this, I’m on my way to the kitchen right now! (Keto 4 years, goal 3 years, 63 yrs young, healthier than ever in my whole life).

For our cinnamon roll icing, I use cream cheese, heavy cream, vanilla and a little sweetener. The cream cheese is such a small amount it doesn't contribute significant carbohydrates but thickens the icing/glaze and adds a good flavor when paired with a little vanilla! ^_^
Yummm Cream cheese frosting is so yummy. I made some thing else tonight cinnamon roll-ish Maybe I should add some cream cheese to my frosting. I was just trying to keep the fat content down but I can’t put it up that much right😉🤗

I've been chomping at the bit to get the time to make these. I was wondering what the texture was like. If angel food cake and a cinnamon bun had a baby, this is it. You did not dissapoint! Thanks so much for generously sharing this recipe! Now I just used plain egg white powder instead of the fancy Jay Robb stuff, which is kinda pricey. I also added 3 tablespoons sweetener and about 2 teaspoons vanilla to the batter. I will definitely be making these again and again. Shhhh...don't tell anyone, but I might have eaten 4 of these babies back to back! I was pleasantly surprised.

If you like chocolate, top with this mix; 2tbsps coconut oil melted add 1 tbsp sweetener and 1tbsp cocoa powder.

@@ydelrod The bread has 1 total carb. Cinnamon rolls would depend on the sweetener that you use.

Maria's filling; FILLING:
¼ cup butter flavored coconut oil (or butter if not dairy free)
2 tablespoons Wholesome Yum powdered Monk Fruit Allulose
1 tablespoon cinnamon
2 egg yolks
Happy to report that things are just " KETO KRAZEE" 'round here lately. For example, a guy on my bowling team's so charged up on the Carnivore lifestyle he's been talking about hitting a couple of farms in the area for some old fashioned cattle rustling. He says there's an abandoned old "roll though" car wash just outside of town we could probably buy on the cheap and convert into a slaughterhouse and butchering facility. My father-in-law retired years ago as a professional in-store steak knife pitchman and demo man. He's thinking about getting back in the biz - maybe going door to door. Rumor has it that somebody got the vegan yuppie down the street to actually try an 8 oz. ribeye last weekend and after two bites, his man bun started smoldering and fell right off, and he's stopped wearing plastic Crocs. Some of the wives have been trying to find out where they can get hold of "meat dresses," like the one Lady Ga Ga wore to the Grammies a few years ago. Who knows - one or two of those dresses, with an onion corsage may make an appearance at the high school prom next month.

I had an idea for the cinnamon bun...load the butter/cinnamon/sugar mixture into a small plastic bag (ziplock comes to mind), cut the corner off and pipe the cinnamon butter onto the egg batter in a swirl pattern. Maybe not cover it up. It would look more like a regular cinnamon roll, but mostly would distribute the cinnamon evenly. I'm sure it would sink with baking, but might be interesting.

@@ketocarnivoreishcrys3446 I will, but first I need to finish my week (at least) of no sweets at all to try to break my craving cycle. I am determined to master this PSMF bread, because I love the texture and taste, and if you butter before toasting it is fantastic. Thinking that buns might be more forgiving than a loaf.

I was using carton egg whites, used 1/4 t. cream of tartar/white (saw this is as a max recommended amount), and tried piping a butter/cinnamon/sweetener paste on top. Did not go as expected...it didn't sink in at all! I really expected it to. Instead, it just sat on top! Next time I might push the tip of the bag into the whites so I force the mixture to go down into the bun. Also...I always get a dry flaky crust that is so fragile it falls off...do you? Wondering if there's a cure for this.
How did the butter mixture pipe out of the bag? I haven’t minded just sprinkling the sugar and cinnamon on top and skipping the butter all together.
Do you mean your bread has a flaky crust? If so yes that seems to be happening to me too🤗
Super yum! I use room temp butter, swerve confectioner's and heavy cream or half & half. The butter works like cream cheese as far as thickening it. I think some maple or salted caramel extract would be a yummy addition! Damn, I'd eat them all in one sitting! LOL.
Do you think ghee could be subbed for the butter in this recipe? It’s the only dairy my kid can tolerate.

Hi thanks so much! I’m sorry I don’t know the macros I never did work them out 🙈 I do plan to add that to my recipes I just haven’t gotten around to it yet. I’ve been following Protein Sparing and just know they are low in carbs and fat🤗

Have you tried to refrigerate or freeze them and then re-heat? If so, do they hold up?
So I do keep them in the refrigerator. I have not tried to freeze them yet although I’ve heard from others it does work🤗

Hi I just subbed. Can you tell me why my rolls felt a little wet in places? I cooked them longer then 15 mins. Will they be ok next day in fridge? What did I do wrong? Tia
From what I have learned the batter doesn't like anything wet/liquidy to be on it. It makes the bread soggy. Try adding more of the batter to counteract that.
Does it taste eggy?

I’ve never had the cinnamon buns come out dry because they’ve always been under cooked for me versus the bread and the buns. I have been playing around with adding yolks to my mixture. I’m not sure if you’ve watched any of my more recent videos but it seems to make it a lot more soft and tastier🤗

@@backtoasimplelife it won’t work with egg yolk. There’s a bagel recipe you can use the yolks for, or lemon curd or, hollandaise sauce. Make an eggs Benedict burger! They are amazing.
@@TheVinegarden It most certaily does work with egg yolk. How did you miss Crys' comment that she has been experimenting? And then how did you miss her videos showing her results with using egg yolks? Game changer!

I thought carnivore diet only used salt for seasoning?
There are many versions of carnivore. Some eat any animal products..including dairy. Some do beef salt and water..or lion diet. Some do BBBE, beef, bacon, butter and eggs..that's my current version. Some do "dirty" carnivore, allowing spices and sweeteners. It just depends on what is working for your body..
