You should use Keto Carnivore Crys' recipe. She calls for an egg yolk, and it makes a big difference! The yolk would be folded in last. Also, I would recommend 2 tsp of the nutritional yeast, allulose to sweeten the dough, and either 1 tablespoon vanilla flavoring or butter vanilla flavoring. These changes make it more like traditional sweet dough. I've been making all kinds of danishes with this dough, and they are awesome, and even my non-keto family agrees. I have made cherry (a mock cherry pie filling made with cherries and cranberries) cheese, strawberry cheese, lemon cheese, and plain cheese danish with a glaze. YUM. Next I am working on peanut butter, chocolate glazed cream filled doughnuts.
I agree Crystals recipes of keto carnivore cry’s are amazing! Her fix for the crumbly and dry upper is to brush the dough with melted butter after it has baked for half the time … so so good!! Haven’t tried the danish yet but make several patches of her bread every week and it comes out delicious every time… tastes like a brioche in my opinion… especially on the same day!
That all sounds amazing! In this case I was channelling my Mom who never sweetened her dough, only what went on top and between the the layers of yeast dough. But yes, I will try your suggestions!

Made these tonight and used 1/2 isopure zero carb vanilla and some stevia bc I was almost out of allulose and everyone loved them and ate the whole double batch. I didn’t even get to make frosting for them before they were gone!

I used 1 1/2 times your PSMF pizza dough recipe and left out the nutritional yeast. I put it in a 9" x 3" round baking tin for 30 minutes at 325 deg and the texture was absolutely cinnamon roll-esque. I made a simple whipped cream frosting. I found slicing the cake in half and icing the middle and top made a lovely layer cake. I plan to make again, cut some ridges in the top like the pizza crust and make a cinnamon crumble and icing for the top. Thank you for these wonderful recipes. So delicious and satisfying!!!
You can get allulose from Wholesome Yum, shipped from BC. The powdered is out of stock right now, but the crystallized stuff in a coffee grinder works great too!! :)
You can replace cream cheese with Laughing Cow cheese and if you sweetened it, you wouldn't know the difference. My daughter made Pumpkin cupcakes and needed cream cheese for the frosting but used Laughing Cow cheese instead and we all actually prefer it.
I made a similar recipe the other day from a different channel. I love your idea of piping it into the circles. I think that would work much easier than what I tried. And, letting them soften will probably be preferable to what I did. Thank you for scaling down the recipe for us. :)

I could totally see using those as toast right out of the oven topped with scrambled eggs and bacon. Maybe sausage made with cream cheese and cream, melted into a sauce/gravy. Season up the sausage gravy how ever allowed for your diet. They could probably be a quick pizza with cheese and pepperoni and sausage. Then put some in the refrigerator for danishes. These have double duty possibilities. 🙂I love this recipe. So fast and easy.
Yes, I've heard her say that too but for this recipe I am not making a loaf and these come out perfect for the buns. Even with the loaf of bread when I do the egg whites at the end, the loaf is softer and moister the next day if I keep in the fridge.

I made these today and added vanilla bean powder and extra sweetener. I love the nutritional yeast in my savory buns because it reminds me of sourdough, my favorite bread but I do not include it in my sweet breads. Love this bread! 😋
I saw another RUclipsr make PSMF bread and she put the egg white protein powder in after whipping the egg whites. She said if you whip the egg white powder too long it'll give the bread a styrofoam texture. I've never made any of these, but hoping to this weekend once my egg white powder arrives :)
I started out doing it the way you said and it was always too dry, and didn't make much difference in the texture. I'm seeing so many different ways to do it!
I haven't but I googled it and they might look alike in appearance but the butter and sugar in those! These won't be quite as deluxe but they sure are a treat on those low fat PSMF days!

Haha, that is a little late! But the good news is these danishes are only 33 calories and 1.5 carbs. Plus whatever you add to them, I do about a teaspoon of cream cheese with some swerve.
There is a trick to fill in the batch into the bag: you have to fold the edges generously, than hold it in one hand, and put now the batch into the opening (a quite good amount of the batch, but so that your foil that is folded down fits about). You will see that it is easy and with far less mess ;-)

I think the cheese would melt while baking depending what kind you put in there. I left mine plain so I could decide what to top it with depending on if it was a lean fat day or a regular day. You could do mascarpone instead of cream cheese.
You can add that! I was just learning back then, I do all sorts of different things now with the bread, I'm not as afraid to add things anymore (Fear of Egg White Fall) 😂

You can definitely do that, I was trying to copy something my Mom used to do by keeping it separate. I just made a batch yesterday where I baked I made little swirls in each one and filled the dents with the swerve. It was sooo good that way too! On a non PSMF day I would make them and add a butter/swerve mix.

For the bread it's easier to slice it when it has cooled down but can then be eaten right away. I'm going to have to redo this cinnamon roll video because now I'm able to make them bigger and fluffier as well.

I honestly couldn't find cream of tartar in my local store and I made my first few loaves of PSMF bread without it! So to me it's not essential but it does help the whites stiffen up faster. I have heard some people use vinegar to replace it but I don't know how that works, might be worth googling!
Do you let them sit in the oven as they rest? I know you do it for the loaf of bread but I do not know if that is what we should do for the cinnamon rolls.
Any of the flat breads I make like the rolls and pizza breads, etc I don't bother letting them sit in the oven. The reason for resting in the oven is so the loaf doesn't fall and since this is not a loaf I am not worried about it falling! I hope that clarifies it!
If you prefer them soft, you can reheat them in a covered pan so they steam a bit? Otherwise, if you reheat in the oven just watch them closely as they can go from perfect to burnt in no time!

I'm glad you did a half batch! Sometimes I want less and have trouble figuring out the ingredient measurements, etc.
Try using pasteurized egg whites for your icing istead of water. It is what bakers use and also used for royal icing 😉

If you flip your metal baking sheet upside down, 2 silicone mold sets will fit just fine on the back. Works just as well.

@@karenbradley2657 Eggs can be warm or cold, I just took them straight from the fridge. To make the 6 buns I made would be 4 egg whites. If you don't have yeast that's ok, it just adds some flavor. Thanks for watching!

For the bread it's easier to slice it when it has cooled down but can then be eaten right away. I'm going to have to redo this cinnamon roll video because now I'm able to make them bigger and fluffier as well.
Why did you use egg white powder vs regular egg whites?
I used both egg whites AND egg white protein powder. The egg white protein powder helps with texture otherwise it would be just merengue.

Can I use something in place of cream of tarter?
I honestly couldn't find cream of tartar in my local store and I made my first few loaves of PSMF bread without it! So to me it's not essential but it does help the whites stiffen up faster. I have heard some people use vinegar to replace it but I don't know how that works, might be worth googling!

Yes you certainly could! Sometimes I channel my Mom who always sprinkled the cinnamon on top, it was never in the dough!

Do you let them sit in the oven as they rest? I know you do it for the loaf of bread but I do not know if that is what we should do for the cinnamon rolls.
Any of the flat breads I make like the rolls and pizza breads, etc I don't bother letting them sit in the oven. The reason for resting in the oven is so the loaf doesn't fall and since this is not a loaf I am not worried about it falling! I hope that clarifies it!
I do not have a microwave. If I reheat buns in oven will they get hard/dry again?
If you prefer them soft, you can reheat them in a covered pan so they steam a bit? Otherwise, if you reheat in the oven just watch them closely as they can go from perfect to burnt in no time!
