I cut up some of the chicken thighs and used some of that lemon sauce as a kind of chicken soup, it was really good! I had no idea there was a greek soup like that!
I made the Lemon Thyme Chicken Thighs in the Instant pot and just wanted to say how delicious they were. My husband raved. I doubled up on the amounts so have them for today as well. I served them with Maria E's PSMF Cookbook's "Chicken Fried Rice" made with egg whites on page 32. Topped with a few green onions and a bit of parsley throughout, so it's more keto, but felt it needed a bit of colour. I I was pretty amazed that it was actually very good. As an aside, take a look at the photo on page 32...strangest looking chicken "breasts" I've ever seen. Haha Lol :)

I've grown very fond of mustard! And if you thin the mustard with some ACV and olive oil and use a reasonable amount that makes a nice sauce for PSMF as long as you measure it to account for the fat.
I was searing some pork loin this afternoon and all the fat I added went to the sides of the pot since the Instant Pot liner isn't flat on the bottom. I added more fat, but you'd have to add a LOT to cover the bottom. How does anyone else deal with this?
I used the macro calculator on Maria Emmerich's site. I do find the calories a bit low and doing 2 PSMF days in a row is tough. So in August I plan to do PSMF on Mon/Wed/Fri, I think that will be more sustainable for me.

I try her calculator am 5.1 68 years and it give me 154 gram protein but in her notes It says 5 feet at least 100 gram protein and add 5 gram for every inch so I do 120 gram PSMF day ! 154 not visible ! After coming from 2 meal a day !

If you happen to have any MCT oil, the best one I made so far, I added 1 tbsp and the mayo was spreadable right out of the fridge. Which I loved!

make a dip with fat free yogurt. Or dip in mustard? BTW, these are so full of flavor I have never felt the need for a dip.
