Tony Northrup tested this, resolution wise, the 15 Pro resolves around the same detail as an 8-10 megapixel camera (i.e. less then the 12 megapixel A7S III once you remove the artificial sharpening). As for the lenses, you are getting 13mm f/10, 24mm f/6.3 and 77mm f/24 (120mm f/21 on the Max) fixed aperture equivalents to full frame.
This is somewhat academic but I found it quite fascinating: despite the sensors and technologies seeming like they couldn't be more different on paper, in practice, you can apply the same crop factor calculations. You get an image uncannily similar to taking an image on an A7RV at 35mm F/21 and then cropping 70% of the image out to match what the iPhone's 15 Pro Max tele lens does. 70% because the crop factor here is roughly 3.54x.
Similarly if you take an image on the wide lens on the iPhone at iso450, it should equal 24mm f/6.4 at ISO3200 on FF - ISO formula is ISO*(CropFactor*2) - and wow, it does! - same exposure, same field of view, same depth of field, similar detail (if you resize the FF image down to around 8 megapixels and upsample to match the same image size), though iPhone has more aggressive noise reduction out of the box (try it if you get a chance!).
So there's no inherit advantage in DOF, or resolution or low light performance or anything else. But knowing this, if I do want a lot of DOF I set my 24mm on the ZV-E1 to around f/6 (or 16mm at f/4 on APS-C). A full frame 12 megapixels still resolves more detail than 48 on the iPhone (both in photo and video), but there are more situation now where you can use the iPhone.

Thanks Pascal. Really well done. Very informative. I had purchased a 1TB iPhone 14 Pro Max a couple of months ago. And it's a great phone too with great cameras. But my ISP is starting a new mobile service and for their customers to sign up for that they offered a $500 discount on any new iPhone. And it didn't require a long contract but only month to month with the phones unlocked after 60 days. So that was too good of a deal to pass up and I bought a 512GB iPhone 15 Pro Max for $899. I'm intersted in shooting in Apple ProRes log, but also just being able to record to an external SSD or get any videos off the phone quickly with the USB-C port is great. It took me 3 1/2 minutes to transfer a 6GB video off the iPhone 14 Pro Max. But transferring the same video off the iPhone 15 Pro Max took 19 seconds. :)

Advice from a IT guy: 4TB of SSD, Gen 4 PCI is around 300$CA, so 220$US. With a 30$ case, it's more or less 2x cheaper than a crappy Samsung T7. You can have 2TB SSD for 99$CA, even. It's probably faster, more realiable, you can always change it when it breaks (which it will because of read/write operations). And even crappy 30$ cases have heat dissipation.
Stick that to a cage, boom. Light, fast, reliable and cheap storage for the 2TB/h log footage.

Subscribed ! Question(s). Can a 1tb iPhone 15 bypass the need to film with an SSD on the camera body and just off load the 1TB to the SSD when it’s full? And then you’d just need a 1tb iPhone and an attachment for an ND filter and use Blackmagic and internal LUT? If so I’m getting one today!
