You're not the only one. lol
These look great. What you've really made is "speculaas cookies." They're German/Dutch spice cookies that are made during the Christmas season. They usually include cinnamon, ginger, nutmeg, cloves, cardamom, and white pepper. I know a lady who has won many blue ribbons for her speculaas cookies. Her secret: Mix the dough and allow the cookies to sit in the fridge for at least 24 hours. This allows the spices to bloom and develop more flavors. It's a kick-ass cookie for the fall and winter months.
Watching chef John videos at night is such a bad idea...I'm always hungry by the end.
+
It's not our fault he uploads them so late.
+ (you a Vlogbrothers fan Kura?)
David Zhang I know 😔

hello world! Right!
Going out to look for ingredients :D

Looks good! I might mix in some pumpkin puree with the wet ingredients for a moister cookie, and to pumpk up the flavor.
Dear John,
Thank you for #blessing my subscriptions with these. Not all heroes wear capes.
You guys are the wookies of your cookies!

I'm right on time for once in my life
Yes! I made pumpkin spice snickerdoodles with my ESL students last year. It will be super helpful to have a video this year of the process that I can show my students.
SO GOOD MY MOUTH IS FLAVORING
Legit Fry Sugar, spice, and everything nice, these are the components of a mouth well flavoured by the famous pumpkin spice snickerdoodle cookie. To have your mouth flavoured by chef John is an honour. Be grateful humble fry.
Chef John, I love your videos! I find your voice calming and I love to watch your videos at nite before I go to sleep. They relax my mind and help me think of something I will cook the next day. Thank You for all the great recipes and all of the great instruction. :)
To be honest, this is the one recipe I half expected to see chef John throw a dash of cayenne in. You wouldn't taste it but it would add to the kick of the cinnamon.
The mitochondria is the powerhouse of the cell.
Hannah Morris you're the scientist Chef John always wanted to be
chef john i made the tiramisu mousse and it was amazing
Yes Chef John! I love snicker doodles... the combo is great!
If you know anyone going to Mexico, ask them to bring you back a bottle of real vanilla from there. It's night-and-day from the grocery store fake vanilla from here, and costs less than the 'real' stuff sold here. It's one of the best gifts I've ever gotten.
Now we can make oodles and oodles of snickerdoodles!! Pass the milk. Good recipe Chef John.
You are the Google doodles of your pumpkin spice snickerdoodles.
THIS LOOKS SO GOOD AND IM SUPPOSED TO BE SLEEPING
NoChin Asian Same. Now I'm fantasizing about cookies.
Chef John, these are actually quite spectacular looking.
This recipe makes so much sense!!!!
as a barista, pumpkin spice is the bane of my existence, but these look goooooooood 🤤

@ChefJohn...please stop stalking my wife and I. You published your fritter recipe the day we were talking about getting fritters AND now we just came from a class where they had store bought pumpkin spice snicker doodles. We said how you we could make them better and BAM! You drop a recipe on us. Humbly your fan, James.
Actually Chef John there is a great coffee beer made in Houston called Rocket Fuel. It's by a local brewery called 8th Wonder and it's a great mix of beer and Vietnamese coffee. You should try it if you can.
ive been craving cookies all day... looks like i found the right ones to make :D
They look amazing chef John!! I definitely going to try them
I'll be using this for the upcoming holidays!
Room temperature is pretty cold here in the winter! I usually end up microwaving the butter very carefully so that it's easier to cream
You're absolutely right about coffee and beer.
I'm a sucker for snickerdoodles. This recipe is a definite must-do for Halloween!
Wow havent even watched yet and they sound and look amazing
BACK AT IT. THANK YOU CHEF.
Happy Fall, John!!!! Thanks , James!
"will power is not your strong suit" 😩 CHEF JOHN KNOWS ME!
I always use a sturdy fork to cream the butter and sugar together.
Love it
This looks amazing 😊
no cayenne pepper?
you should really do live cooking every month or so. I'd love to cook along with you :p
mmmmmmmmmm I can hardly wait to try these...I love your videos!
I love you chef John
chef, could you do a pumpkin or butternut squash pasta recipe?
Anyone else try to mutter "snickerdoodle dough is done" to themselves midway through?
Chef.. your Snickerdoodles looks absolutely beautiful...I want me one... :)
Chef John how about Pain Au Chocolat? I am unable to master this, c'mon could be an amazing one!!
Snickerdoodle dough is done
Snickerdoodle dough is done
Snickerdoodle dough is done
;)
Chef John heard my pleas for a pumpkin spice recipe! My inner teenage girl is ecstatic
1st time I'm not in the 'notification squad' I've lost my sweet tooth.
IMA MAKE DIS. THANKS CHEF JOHN!
When I cream butter and sugar by hand I use a pastry cutter. I may have to use it tomorrow to make those cookies.
Oh yeah! Definitely gonna eat the whole pan!
I think I'm early. Those look so good 😋
Omg they look so yummy
Cannot wait to make these!
What a great idea
"Which I will try to explain on the blog post." "I don’t see what the big difference would be either way"
Good enough explanation for me.
Yum!! Great cookies for autumn! 😍👍🏻
Could you add pumpkin to these?
I love snickerdoodles!
How on earth are there already 8 comments, this was uploaded literally 50s ago jeez

As a homebrewer and general beer nerd I applaud you for calling out pumpkin spice beers. They have turned fall into the dead zone of seasonal beverages.
Fight the good fight, Chef John.
pure joy
Love your channel.
Making those tonight 😄
Those look really awesome!
Cookies !!!! Yum,yum,yum
I have a very serious question..... you always record the intro? or you just add the name of the recipe...cause is ON TIME in every single video
Looks good!
hello chef. so at 1:00 you said baking soda+cream of tartar=baking powder. does that mean baking powder is a substitute for those 2 ingredients? I can't find cream of tartar anywhere in stores nearby
Kimilisaaa Films
I would substitute both the soda and tartar in this recipe with 1 tsp of baking powder. That's generally the accepted standard. It would be nice if Chef John put that in there though
Kimilisaaa Films you should find cream of tartar in the baking aisle. Maybe with the spices. It's used for meringues and other desert recipes.
I have found cream of tarter in the aisle with all the spices in fact, because it's often made by several of the same companies, same size containers, and so they're tossed in with the rest. If they arrange it by alphabet I've seen it either in Cs or Ts. .
thank you for showing .
giving cookie dough a nap in the fridge is a must.
they look beautiful to me
John, what would happen if you used melted butter? would the texture of the cookie not come out the same?
Oh my dear Heavenly Father
I'll be making these this weekend with my son, my 2 nephews, and my niece! What's the yield on this batter? I'll check the blog!
Hi Chef! This recipe looks gorgeous, but that doesn't come as a surprise, since all of your videos do.
BUT I have a question concerning the vanilla extract:
could you maybe do a video on your technique? I think, the time until christmas should still be sufficient to make some.
Because Winter Is Coming and we all need to prepare - with vanilla extract!!
Very Nice!
Great recipe Chef John also quick question what type of baking tray is that you use? I ask because I noticed the cookies didn't stick on the tray like other baking trays.
David Marrero I was wondering the same thing about that French tray insert.
What it is?!
David Marrero he uses a silicone liner inside his baking pan. You can also use parchment paper.
David Marrero It's a Silpat mat but parchment paper does the same thing.
MARRY ME CHEF JOHN!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
Get in line.
Chef John, 1-100(100 being the best) how good do these taste?
why didn't you put this up 5 hours sooner! I made a pumpkin cheesecake when I could have made these instead. Guess I know what I'm doing tomorrow during the debate!
surprised there was no pumpkin puree..
ayy lmao Pumpkin spice doesn't mean there actually had to be pumpkin in the recipe.
I thought the same ^^ still looks good !
I thought the same ^^ still looks good !
I thought the same ^^ still looks good !
But pumpkin is the best part of pumpkin spice.
I take it 3/4 of a tsp of baking powder will work if you don't have cream of tartar?
no pumpkin on the pumpkin spice cookie ingredients?
thank you!
could you chill this dough overnight?
YES
7:26 holy shit lmaoooooo
.....i cannot unsee....
OMG yummy
Can I use just parchment paper instead of that silicon baking sheet?
Can I use more cinamon instead of pumpkin spice?
Still wondering why nutmeg is the only one of the "warm" spices that needs to be grated freshly? Why not grate cinnamon or all spice freshly as well?
Dip in cool whip or whip cream....!!
Who would down vote this?!?!? Those people must be seriously disturbed! hahaha
