My mum starts roasting folks on the spot if it's less than delicious. But her food also hits super hard like crazy💀. It took me 3 whole years of refining my hand and learning French techniques then implementing them to indian cuisine to surpass her slightly.
Vish’s naan looked the best ngl. I’m Kenyan 🇰🇪 and I’ve had many a butter chicken and naan in my day and his looked the best in terms of presentation. It was the most doughy, but I think that is favorable to mop up the sauce and chicken with from the dish.
Doughy implies that it's dense, which you can't really tell without a close-up. It was probably thick but airy inside, which is my favorite way of having naan since it lasts longer than thin naan.
When "too much garlic" is the only thing you can fault a dish, you know it's a winner. There's no such thing as too much garlic by the way. Your girl will simply have to enjoy the garlic with you.

Nah he's Punjabi, as one myself that's the extent of flavorful Indian food for us 😂 Gujarat is pushing it tho. A tad too sweet for our palate. That's not to say there isn't good food in other parts of India. There definitely is, but it suits a very different palate. Punjabi food isn't everyday food for lots of people because it's too heavy on spices, but for us it's everyday food.

You’re supposed to cook down the tomatoes and a bit of onions until mostly dry, then blend them together and add heavy cream after. The sauce needs to simmer for awhile to release the flavor of all those spices.
