they actually don't speak japanese. as it was addressed in the first episode, rimuru's appraisal skill helps him understand whatever he hears, and make others understand whatever he says. so they're all talking in their own languages.

Not that that matters though since as long as rimuru is still alive he can just make veldora a new body and move his soul + memories that exist inside rimuru back to veldora. Pretty much veld is immortal as long as rimuru is still alive

Nobody in this world can just automatically learn and understand languages unless they have a skill that has that type of function. Rimuru is capable of understanding and speaking the language of the Otherworld because he spawned with Great Sage, a high end analytical skill. The only way Veldora would be able to learn Japanese was if he read his memories enough to interpret the language, or he was taught by Raphael via the soul corridor.
