    My mother in law flew in this evening and I made this amazing recipe and she was speechless. I want to thank you for your channel. My parents were from Madrid but sadly passed when I was young so my connection to Spain was cut. Watching your videos and cooking for my family makes me feel close to our culture. Thank you

    Yes, those asparagus bottoms can be kept for making stock or broths. I love this one-bowl meal of asparagus soup. So easy.

    I love asparagus soup!
    This recipe is different from the recipe that I know, so I am excited to try your recipe!
    Tip- keep the bottom cuts for broth!
    Remember that thin asparagus is best as thick is tough and stringy.

      I agree with everything you say, except for the part about thin vs. thick asparagus -- thick asparagus can be luscious and tender, but you may have to cut off a larger part of the bottom stem. (More for your next veggie broth!)🙂

    An unusual, beautifully simple recipe giving a starring role to a spring veggie that's usually relegated to playing the "sidekick" to another dish. I love the way this recipe lets the asparagus speak for itself -- you don't even need salt & pepper (although I always add a little bit of both when I sautee onions) for the flavor to shine. The egg and bread give a protein and carb boost that make this soup a full light meal, especially on a warm spring day -- you could add fruit for dessert. Thank you as always, Albert!

      It IS good, but it's kinda heavy and not nearly as Spring-y as this one. Porque no los dos? Right now, asparagus is about as good, and as inexpensive, as you'll ever find.

    I made this soup today and it was very nice! The asparagus were very thin, so I used two bunches of the bottom stems for the soup, and the tops as the side dish for oven roasted chicken. Win/win! ¡Gracias por la receta! 🤗

      EXCELLENT decision -- cream of asparagus is OK, but it sort of negates all of the light, delicate Spring-iness of the veggie itself.

    This was delicious! I wasn’t sure about the bread in there but wow! I served with additional olive oil fried baguette pieces for added crunch. Phenomenal! I’ve been eating those little croutons for days now 😂

    Very good, did supper last night and lunch today :) I did sauté the asparagus for about a minute , before adding , any suggestions for an alternative to asparagus , when its out of season ?

      That's an excellent question. Maybe broccolini? Or is that too brassica-ish? Here's another idea: parsley root. If you julienned the roots into the size and shape of the asparagus stalks, I bet that flavor would be very good.

    Definitely will try this…I’m a little hesitant about the bread being soggy / mushy (!?) Maybe adding the bread just before serving (?) Anyone have a suggestion / idea…Or maybe the bread part of this recipe will turn out just fine.

      I think frying the bread chunks first, and then letting them cool down while you make the rest of the soup, hardens them enough that they don't mush up.
