I made this, and it is good with the water base. But I would recommend chicken stock or broth to bring this to another level. Very simple evening dish or when you’re stomach isn’t feeling 100%. I love the soft-cooked eggs!
Sounds great! Much love :)
Agreed
I made it with a vegetable stock, delicious, and I think you're right about it being an ideal light meal if you have an upset stomach.
Was just thinking the same but I think a vegetable stock would pair better with the garlic. Also it definitely needs to be thicker, so I would add more bread or some flour to the stock.
Excellent point - this soup is perfect for when you're feeling injured, ill or just in need of extra comfort.
The idea of using browned bread as a soup ingredient has my imagination working. I want to try this.
I love that other nations have egg soups too! I thought us Chinese were the only ones with egg soups.
I had this as an appetizer in a Spanish restaurant in Berlin nearly 40 years ago. I liked it so much that I ordered it for dessert.
lol....Much love :)
Oh man, this looks yummy!
This is super useful for me, I, as a broke student in eastern europe, never would have thought that I could be making healthy and delicious meals using just few ingredients.
Thank you so much! :)
Much love :)
You can afford saffron? I can't. 😅
Saffron is for colour
@@frostneedle Saffron probably isn't _just_ for colour, but leaving it out is probably not that big a deal.
@@frostneedle as a dude from arguably Eastern Europe as well, safflower (not nearly as good but dirt cheap, may add pinch of tumeric for closer taste)
As a non meat eater these recipies have added a whole new dimension to my cooking...👏👏👏 great work Alberto
Happy to hear that! Much love :)
non meat eater LOL, do you also wear a mask alone in your car???!!!
Back in the 80’s I found a similar recipe in a Frugal Gourmet cookbook. He used hearty breads and a couple tablespoons of paprika besides the garlic, then put the Dutch oven in a hot oven to bake the eggs. Interesting variations!
Sounds great! Much love :)
That's called 'Sopas de ajo'
This is such an unusual, simple, lovely recipe -- it would be the perfect appetizer course for a spring dinner party! Just add or subtract eggs to equal the number of guests. Watching this video makes me wish I lived in a little house in a village in Spain, with a small back yard where I could welcome friends to share this soup. Thanks, Albert!
Much love :)
Well said!
Super cool recipe! So few ingredients-it really makes it unique
This is a great soup, I have had it before, and I will have it again. And again..
Much love :)

I Love Spain! Such wonderful people and incredible food!

Your recipes are ultra easy to follow. I have tried two of them already. Super easy, super delicious, super fast to make and no meat ! :)
Great to hear! Much love :)
I tried this yesterday. It wasn't bad, but not my favourite. I probably added too much parsley into the paste, so the flavour was probably not as advertised. I'll definitely try it again. I haven't got the eggs right yet either. I left it in just little too long.
Love this unknown recipes.
Much love :)
So simple but looks so very delicious. I'd sure be tempted to add more eggs, and some toasted buttered baguette on the side, but I'm usually into excess 😊
Sounds great! Much love :)
This soup was made at home when I was very young and I kept remembering it for years. Fortunately I found it with you, thanks.
Much love :)
loooks good!!
thanks again!! :)

Awesome soup. My fathers Aunt would make this soup for us when we visited them in Bilbao Spain.
Much love :)
That looks really good, and super simple ingredients everyone should have on hand, Bravo!
Bravo! A great new soup recipe! Thanks so much.
Much love :)
Yeps your so right 🙂
My this looks tasty!
I do something similar, but with chicken stock, and then add a handful of fresh spinach to each bowl before adding the poached egg and the broth.
Adding the fresh spinach ups the protein and vitamin/mineral content considerably. I sneak it into lots of soups and stews for that reason. I love fresh spinach but really dislike the flavor of cooked spinach. When added in smaller quantities and with more flavorful ingredients I don’t find it objectionable. I think I will be trying it your way as the original recipe will not fulfill my requirements as a balanced meal. I don’t have the physical energy or financial resources to make large meals so one pot meals are a necessity. Thanks for your input!
Sounds great! Much love :)
That was Excellent! Thankyou!
Happy to hear that! Much love :)

I noticed watching this that the word humble negates the idea of wonderful smells. 'they served a humble soup' .. I wouldn't have ever pictured this.
Lovely. It's on the list ☺️

Rebeca Linares comes from Spain, so it's an alright country by me!

Many years ago I had a wonderful garlic soup in Nerja Spain. It was a darker soup and I think it has some peas and carrots? The waiter cracked the egg into the soup bowls right at the table. It was so good. I will have to give this version a try.
Sounds great! Much love :)
Delicious I just made well done 👍
Happy to hear that! Much love :)
I love how not even the oil that the bread and garlic are fried in is wasted!
Yes! Much love :)
Agreed, this is an incredibly efficient technique
Yeah... makes more sense to fry them in the stockpot though... then just add the water to it and use the one pot
@@Michaelkaydee okay that's smarter, thanks for sharing!
Olive oil which had garlic cooked in it is absolutely delicious! Throwing it would be a crime!
As a Spaniard I can say that this is not the typical spanish garlic soup at all. I didn't know this was a thing in Ronda, but I can tell you that in the rest of the country the garlic soup has a ton of bread, not always fried, a lot of smoked paprika instead of the saffron and never, ever, lemon juice.
I'm Ukrainian, in my family we sometimes prepare this soup, but call it just a chicken bullion. Add egg just like you, smashed garlic, a little parsley and dill and toast some bread and you're good to go! It was always a dish for those days you catch a cold or if my mom had some excess chicken broth while cooking some other more complicated soup (soup culture is going strong in Eastern Europe, soups are our staple food). Never knew Spaniards cook it also! Considering the similarity in ingredients, I suppose it came from a single source in history, or it just came from the Mediterranean to us
Much love :)
Very simple and truly good! Greetings from Houston TX! 😎

This.....was......so......good!

Nice soup, I did make it and it tasted sublime

I loved Ronda!! It was a special place.
Absolutely! Much love :)
Mmh it looks delicious 😋

Yum!
Thank you! Much love :)
Had this for lunch today, it is very good. I made mine with a slightly thin vegetable stock but otherwise as per the recipe, I'll certainly be making it again. I used my mortar & pestle to be authentic but it's a lot of work to get the paste as smooth as shown so next time I'll be whizzing it through the small processing bowl on my stick blender. 10/10.
p.s. my wife was did not want an egg but thoroughly enjoyed it just as a stand alone light soup.
Happy to hear that! Much love :)
Excellent. I added some asparagus from the garden into the paste. 👌
Sounds great! Much love :)
I'll add some velveted fish awesome .
Wow!

A great way to make a lot out of a little!

Albert: *_"Dang"_* delicious!😋 Again, simple and I have all of the ingredients now - yes, except the baguette.
So guess what's on today's grocery list. Thanks again. (Fan from San Francisco, California.)
Yes! Much love :)
OMG I want this!
Do you know how many times when wanting soup I was like, but I just want the broth- and nothing else?
And the soft-poached egg is just perfect.
Much love :)
Sopa una de las cosas muy buenas en España pero está está riquísima tiene un aspecto muy bueno

She used green onions, cilantro an made arrapas that you break up and put in there
Like crispy fry bread. My new fav soup
Sitting in the serving bowl It's so beautiful to look at it's almost shame to eat it. LOL

Water and salt... yum!
SARCASM ? DON'T KNOCK IT, UNTIL YOU'VE TRIED IT !
I had a version of this with paprika and garlic
This soup reminds me of one my husband invented. He uses chicken broth, light spices, and an egg. I'm tempted to add a little onion (just a tad) and use chicken broth.
Seeing that think. Everywhere live people.
a certain dish called Polenta if made correctly tastes like delicious water, too.
