Thank you for showing both the trimmed and untrimmed fabric. I like to use mini charm squares with the 1" hexies and it's a bit of a pain to trim them, and I know in the past I didn't always, so I was trying to figure out if one way was the "right" way. Just seeing you doing it both ways made me feel better!
I do this 21/2" square way , with thread basting and press the resulting hexagon, no central glue though, then remove the paper insert and then sew the pressed hexagons together. It seems to work very well. We often find our own techniques without necessarily obeying the rules!
