Can't you just use specific AOV's for the passes?

To gain control of each asset / foreground vs background objects etc.. you will need to generate separate render passes.

I am trying to create an absolute override for the cast shadow and it does not appear in the right-click menu. I also tried to middle mouse click and drag to the property editor and that doesn't work either, any suggestions? I am using Maya 2018.5 and obviously they have changed this from your version.

Why there is no ready made pass in Maya like specular Pass, ao pass etc instead of creating pass

    You are missing the point...
First: collections should be groups of different geometry, not using them just to name them same as the pass...
Second, you don't do it like that!
When you deselected shadows, in your character, you killed all the shadows in the scene! Didn't you noticed that?
Most of this is fine, but is wrong from the start... No hard feelings! It's just not good.
