The Coronation Quiche recipe is very unusual in that along with spinach and cheddar, the recipe includes broad (fava) beans. Unusual perhaps, but the flavour is actually very nice, especially when you use fresh tarragon. King Charles III and Camila, Queen Consort recently announced that Coronation Quiche is the official signature dish for the Coronation.

INGREDIENTS (from Mark Flanagan recipe)
Pastry
125g plain flour
Pinch of salt
25g cold butter, diced
25g lard
2 tablespoons milk
Or, if buying, 1 x 250g block of ready-made shortcrust pastry
Filling
125ml milk
175ml double cream
2 medium eggs
1 tablespoon chopped fresh tarragon,
Salt and pepper
100g grated cheddar cheese,
180g cooked spinach, lightly chopped
60g cooked broad (fava) beans or soya beans

The quiche looks nice, but I absolutely hate beans. My personal preference would be spinach, mushrooms, onion, and bacon bits. I also like Gouda.

I didn't have spinach in my aunt's guarden, so we made the quiche with chard, onions, mushrooms and chedder on the night before we saw the coronation on live TV

Never thought to put beans in a quiche! I usually put spinach, onions, asperagus, brocoli and red pepper 😋😋

Thank you. Excellent instructions and tips. This quiche is a great meat alternative which is important now. And it's nutritious and economical. Egg prices are up in the US as well, but this recipe is only 2 eggs per pie.

I made this quiche for the coronation and used canned but drained cannellini beans and pre-baked the crust empty and it was quite tasty.

I have tried my best with quiche; but the family have implored me to cook the thousands of Malaysian/Chinese foods that are so widely known,and leave this quiche to others. My sister in Nottingham is making one for her street party, they like it. So each to his/her own

@@GuillermoandSarah Chicken or beef often with potato pieces are used to make the delicious Rendang Curry - keeps well and better the next day - many recipes around - never any left when I make it. Coronation Buffet must have for this Malaysian family living in Sydney.

There isn't really an egg shortage in Britain, you can get eggs easily, they're just significantly more expensive than usual.

Excellent recipe. When I use spinach, I trim the stem out. It’s time consuming but well worth it.
I thought about the stem as she was preparing it, I agree I would remove the stem.
M Chapman, the stems on this spinach is very tender so no need to trim. If the stems were tougher, agreed, best to trim.

I make a great quiche with swiss, ricotta, sour cream and heavy cream. Then I add black olives, asparagus, spinach and red peppers. It’s excellent.
Most shops where I live are out of stock in eggs. Love eating Quiche yummy 😋

Minus the tarragon & fava beans, this looks good! They definitely like to work harder not smarter though, as I don't understand the need to pre-cook the spinach. Spinach cooks in seconds. It could just cook with the quiche in the oven. I would think pre-cooking it would make it very soggy and tasteless, but I've heard that's how the Brits like their veggies.
@TiaCatR, it depends on the region. The spinach we buy in Canada needs to be precooked. We aren't in Britain and we don't like soggy spinach either.

I couldn't find fava beans, so I subbed in mukimame. I never thought about adding beans to a quiche before, but they added a nice texture contrast.
That was a great idea geo herb. Actually on the original recipe on the Coronation Toolkit it mentions soy beans as an option, which I think I'd what mukimame are! I've never tried those. Sarah

Thanks for the video, cooking this for the coronation lunch with family. Think the main controversial factor with this, as well as the egg shortage in uk, is that it is a complicated dish to make it comparison to the original Coronation Chicken recipe which is cooked chicken mixed into a sauce based on mayonnaise, curry powder and handful of raisins

No tarragon to be found at supermarket, used parsley instead. Didn't take the skins off the beans either but we didn't find them tough. May make it again, though it was expensive with all that cheese, cream and eggs.

Could Lima beans be substituted for Broad/Fava beans, which pretty hard to find ?
Catherine Henry, yes, that would be fine. Just mind that they have to be cooked before you put them in the quiche. Check the frozen section of the shops too in case they have fava beans there. We used frozen beans.

There is no shortage of eggs. I gave away 26 boxes of 6 on behalf of a local supermarket yesterday. All free range, but I wouldn't buy any other anyway. Remember - egg wash unless you want a soggy bottom!
Yes! We mention that in the video. We didn't do it, but we should have! Fortunately though, no soggy bottom here. Mainly because we got all the water out of the spinach before adding.
I haven't seen an egg shortage either in West Midlands. I get mine from a lad who delivers to door from farm shop. Got almost 3 boxes and having 2 more on Friday, free range £2 a box. Be making the quice for Sat. A bit unsure as usually do with bacon and onion but i'l give it a go.
I’d add frozen peas instead of the broad beans. And I’d add ham and maybe asparagus instead of the spinach.
You could do that, but then it wouldn't be the same recipe. Why not try it this way?
@@GuillermoandSarah To be honest, the broad beans don’t make it sound very appealing to me. Sounds more like a recipe that would have been made during the Depression or during rationing.
Why did you not stem the spinach removing the tough stems before cooking?
Hugh Porter, the spinach we used doesn't have tough stems. It's not baby spinach, but the stems are quite tender. So no need to remove the stems.

What should I substitute for the tarragon? It tastes like licorice and I hate licorice!!

In Herefordshire you pass half a dozen houses selling fesh eggs at £1.50 per half doz on the way to the supermarket. You never see white ones in the shops do you?

Une quiche c'est facile à faire, chaud ou froid c'est bon.... C'est un repas un peu trop simple et ordinaire pour un couronnement... Cela fait cantine, et les épinards faut aimer ça.
Geneviève Taulier, c'est vraiment une perspective française. Ce sont les cultures tellement différents (France et Angleterre). Nous reçevons plein de commentaires que c'est trop compliqué à faire et ne vaut pas la peine!! Pour les anglais ce n'est pas trop simple et ordinaire, c'est trop compliqué! (En général je veux dire, bien sûre.)

The only thing that tells me it's controversial would be some articles calling it vegetarian. Eggs, butter, lard, cheese are animal based and not vegetarian. Having veggies does not make it vegetarian.
v alexander, you're right, definitely not a vegetarian meal. But that's not what the controversy is about. It's because there is currently an egg shortage in the United Kingdom, so many people can't even find eggs to buy and when they can they are very expensive. Also, the recipe calls for lard, which people who eat Halal and Kosher can't have.
Eggs, butter and cheese are vegetarian but not vegan. Lard is most certainly neither but it does give the pastry a delicious texture!

I just looked at BBC goodfood recipe and the video shows that the case is obviously egg washed but the description doesn't. Also the amount of tarragon is staggering so thank you for your take on it a much better video of how to make. Thank you

I'd have been interested in trying this recipe if it had used traditional English measurements rather than the Continental ones. Pretty sure I can make a spinach, cheese, and broad beans quiche using the normal measurements, though.
Opinionated, we took the measurements from the Coronation Toolkit UK government website, so I guess it's standard now to use the continental measurements!
@@GuillermoandSarah Yes, I understand. Britain was forced to go along with a lot of European practices that I hoped would be withdrawn after Brexit. Milimeters and milli-litres don't have a human reference point, so they're always going to be awkward. Pounds and ounces, pints and quarts, inches and feet make vastly more sense because they are, in fact, *sens*ible, and therefore meaningful. That's just my take. Of course, it doesn't matter one whit because sense, common or otherwise, is no longer part of our discourse.

Lise, not a historical reason. It's because they are in season now in the UK and it makes sense to use local, seasonal ingredients.

I was taught to make pastry just like this at school 60 years ago, lard for texture , butter for flavor . The only issue should be if your vegetarian or vegan .
A tin is best for pastry , ceramic is pretty but the pastry isn't as good.
C.A.K. Marriott, we're going to post a video on making the quiche in a large baking tray / cookie sheet for serving many people. A tin is ideal but not everyone has even one. We had to borrow ours from our neighbour!
