I just made this and I gotta say - this was the BEST guide ever. Your pointers on the cheesecake made it so creamy and decadent. I was soooooo nervous about the topping - mine came out much lighter but once it started to cool down the flavors started to come together and began to shine! I was super nervous about leaving the cheesecake in the oven but it came out absolutely perfect. I would say my crust doesn’t look as beautiful as yours but it was my first home made graham cracker crust! Thank you so much!

With the dismounting of the cheesecake, I line the sides as well as the bottom of the spring form pan with parchment paper, never have to worry about unmoulding. Looks like a great recipe to try :)
We tried this recipe from your website for my dad's birthday a couple years ago!! It's INCREDIBLE, the most delicious, decadent, perfect autumnal cheesecake in existence! Better than the costco pumpkin cheesecake! It's so good and so worth the effort to make it!
gorgeous.i don’t have the clean kitchen or the beautiful hairline to have a yt channel, but I make processed sugar free things a lot. it typically involves cooking medjool dates (and some figs for that brown sugary flavor) with water until they all soften, and i emersion blender it all together and use that in pecan or pumpkin pie. or anything really. i remove most of the water and add my wet to blend. milk…vanilla…whatever is in the recipe. i have this idea that natural sugar coupled with their natural fiber is easier on the body. (i had my first heart issues after eating my homemade maple syrup pecan pie). i do gluten free baking also because of heart issues (my wife makes amazing sourdough bread…but we would eat it like crazy) if you want a nice texture/flavor replacement for muffins/pancakes/cookies/biscuits…i use 1/2 c almond flour, 1/4 c buckwheat flour (not actually a wheat), 1/4 c oat or rice flour. buckwheat has a nice texture, but a heavy feeling and not the greatest flavor…the others have a weird texture alone, but almond contrasts well, and the proteins in the rice or oat flour give a nice ‘gluten’ feel. sometimes i add an extra egg for binding (muffins and pancakes especially). feel free to experiment if you ever wanted to try. i’ve done a lot of different combinations and like these the best. pizza crust is a difficult one to get. it involves thee flour mix and something called dosa - a fermented rice and lentil mixture. and a little potatoe. of course there’s store bought, it they often have a looot of weird cheap starches and binders that have weird textures and make me feel uncomfortable. oh man, i made some dark cocoa date rum balls garnished with a little mint and sea salt last christmas that were addictive. im super experimental and intuitive in the kitchen, so i havent been exact with my measuring to give recipes, but just want to point you and others in a good direction if they want to try. (i just bought a new scale, so maybe ill try to be more precise).
Yes, being from Florida, Southern with a Beach vibe, key lime pie and pecan pie are my favorite desserts, cheese cake is a close 3rd, so I agree, this combo would make me walk barefoot on hot glass to eat it...the cheesecake, not the glass 😋

so i'm from the netherlands, and my boyfriend is from the UK. i always really enjoy baking and cooking and i enjoy making cheesecakes aswell. my boyfriend LOVES cheesecakes so whenever he's coming to my place i would make a cheesecake for him and he would just consume it like he hadn't eaten in days lol knowing/having multiple different cheesecake recipes is going to be a lot of fun

My home was built in an old pecan orchard in central Florida so I have all these pecans and have no clue what to do with them other than a pecan pie or cookies now I simply have this amazing cheesecake pecan pie I’ve made three and handed them out to friends so they can let me know if I did a good job or not they all raved and I gave them your channel lol now I just have to give them pecans which that isn’t a problem I have enough to go around to three or four states lol good baking and thank you for the wonderful recipe ❤
I always line the bottom of my springform pan with parchment. Just cut a square piece off the roll a bit bigger than the size of your pan. Lay the parchment over the bottom without the ring on, then put the ring on the pan like normal and close it. It so easy to get the finished product off the bottom.
Looks amazing! When (if) my caramel gets cooked too much, ( when I'm making wrapped caramels) I just add a bit of extra cream, or milk and then I have delicious caramel sauce for ice cream or dipping apple slices!

Lately I got myself a Braun stick blender and made Nigella's peanut butter cheesecake (and also the peanut butter from scratch). Turned out a stick blender is the perfect tool for making cheesecakes because it doesn't whip a lot of air into the batter, and you don't need to scrape the bowl (actually I recommend using a large measuring cup instead of a bowl for this) as often.
A huge measuring cup, as John's cheesecakes are big, twice the size of a standard cheesecake in my country. I make half of his cheesecake recipe and it comes out 23 cm/25 cm (can't remember which) cake size.

I like that style of water bath. I've burned other pans while using aluminum foil and a plastic bag to avoid water getting in cake. I wonder in that style will also work for a flan.
@@cres334 I made this as well. The topping was my favorite part! It can sit out for a good 6-8 hours before it gets really hard. I set my leftovers in the fridge for the next day and it got really hard (and difficult to cut), but otherwise, it stayed nice and soft for a good while.
I grew up with two pecan trees in the yard and got sick of them so early in my childhood (have you ever had to shell buckets of pecans in one sitting?). But I gotta say, this almost makes me wanna give 'em a try again.
I bet that pecan caramel mixture would be great on ice cream, too! (It would likely make even cardboard taste good!) Btw, the closest equivalent to graham crackers in the UK would be digestives.

Hi, I love your site. So many beautiful recipes! Many years ago when I worked in London we used to go to a little Italian deli and buy coffee and a slice of cheesecake to die for! It didn't have a biscuit vase but a fluffy sponge one. It had sultanas in the cheese filling and I think there was a hint of lemon. It just amazing and I have tried to find it ever since but to no avail, well nearly to no avail but I did find one which looked a bit like it but it was a culinary disaster! I followed that recipe to a tee and I am not a bad cook but it was horrible. As you are so good at things like this I wondered if you had a recipe for that cheesecake. I've looked through your site but couldn't find one.
I made 2 of these cheesecakes on my first try and served them to twenty people... And they absolutely loved it, it's been a few days now and im still getting compliments on it. The only thing i changed was add 2 more tablespoons of melted butter to the crust since i was having trouble making the walls and it made it alot easier. I also do not know how john made it look so easy to cut i was having alot of trouble and only 1 in every 3 slices looked pretty... But that didn't affect the taste so who cares!! Amazing recipe will make again
you prob already know since you have so much experience with kitchenaid mixers but just in case you didnt know this but when you tilt up the head of the kitchenaid you expose a screw in the "neck" and if you turn that screw a little it effects how low or high your attachments go on the bowl
This cheesecake came out perfect 🤩! Thank you so much. Edit- The cheesecake was difficult to cut, but tastes delicious. My partner suggested putting the caramel pecans on the crust after baking, then the cheesecake mixture on top. I may try it next time.
That seems to me that it cd make it even harder to cut, like reinforcing candy cement. I’m going to try both methods. But maybe we shd all double ck that we’re using sharpened knives (very carefully) to get thru. Tk u for sharing yr suggestion.

I also do not know how john made it look so easy to cut i was having alot of trouble and only 1 in every 3 slices looked pretty... But that didn't affect the taste so who cares!! It's possible that he used an European/English butter (which you can find in the store) which has much less water content than our American butters.

you prob already know since you have so much experience with kitchenaid mixers but just in case you didnt know this but when you tilt up the head of the kitchenaid you expose a screw in the "neck" and if you turn that screw a little it effects how low or high your attachments go on the bowl

Edit- The cheesecake was difficult to cut, but tastes delicious. My partner suggested putting the caramel pecans on the crust after baking, then the cheesecake mixture on top. I may try it next time.

That seems to me that it cd make it even harder to cut, like reinforcing candy cement. I’m going to try both methods. But maybe we shd all double ck that we’re using sharpened knives (very carefully) to get thru. Tk u for sharing yr suggestion.
