    Made this cake today. I didn't use pecans since I didn't have any. Didn't have crushed pineapple either so I used fruit cocktail in light syrup instead. What a cake. Absolutely scrumptious. Light and moist inside. Thank you!

      I made a different recipe and it tastes like a subtle banana nut bread. What does the cake actually taste like traditionally? I was imagining a stronger pineapple flavor.

    You need the clay discs that go in your brown sugar. You'll never have another lump. It is just magical.

      I use marshmallows too…..I make my own brown sugar (so easy) and it’s always, always super soft with no lumps 👍🏻

      I just throw the end of a bread loaf since my family never uses it. Brown sugar never clumps.

    I would make this, but my partner requested a homemade lemon meringue pie for Easter dinner. I always made that for my father’s birthday and wish I could send one to Heaven for him…. I love your videos and have your new cookbook preordered on Amazon!!

    Hummingbird cake has been my number one bake over the years.of pastry chef .Only one item l changed was adding a 20oz can of crushed pineapple with cream cheese frosting. Happy baking!!!

    I love the acknowledgement of going to "the bad place" when making cakes. So often they're delicious but not looking as nice as we envision and that's okay. ❤❤

    When I was little girl, my mum was super strict about cakes and desserts. When I left home at aged 19, I remember going to a bakery and buying a slice of hummingbird cake with a mile high of gorgeous whipped vanilla cream topping . 32 years later and I still remember it like it was yesterday. What a joy! Brink back the classics!!!

    I love that cake. I took the idea and added coconut and layered shaved chocolate in the middle of the cake layers. I called it a tropical dream cake. It's so good. But how could it not be. I used yogurt in it as a milk product to add what yogurt adds 😁 which is a tender crumb. I'm a cookie and ice cream girl but this cake and a few others are to die for.

    This is my husband's new fav! I replaced 1 teaspoon of vanilla with 1 teaspoon of maple flavoring and also added one-third cup shredded, sweetened coconut. Love it! Thanks for sharing this recipe.

    I made this today for my son’s 18th birthday cake. Thank you so much, it was a huge hit, and so so delicious. Everyone raved and I got so many compliments from my son’s friends. I’m feeling pretty cool 😎 I even got to share some factoids about it being a Jamaican Dr Bird cake. So fun.

    This is perfect for an Easter dessert. Love this cake. I am also making a yam pie instead of using pumpkin. It uses so less sugar due to their sweetness. Same spices and other ingredients as you would for pumpkin pie.

    This was my mom’s favorite cake. She passed in 2018….I found the recipe she’d had a year later. It’s the same as your recipe. I’ve made it several times. There was a few times I over mixed it and it didn’t come out quite right. Now I know what went wrong.
    This is now MY absolute favorite cake! ❤ Thank you for sharing this delicious cake recipe and tips.

      @@itzsheena5941Pastry Passion in Sovereign center makes a delicious one and my great aunt made a wonderful one too. Many people eat it as banana cake and didn’t know the correct name because my mother would just call it a full house banana cake 😂 based on the taste.

    This cake reminds me of my childhood. My mom made this cake and when I got older I would help her make it, along with a Lane Cake. Awesome video.

    John, you should try freezing your bananas. Keep the peel on. Freeze for a few months, thaw and squeeze out the fruit and as much juice as you can. The juice is almost like liquor. I do that for all my banana breads.

    I'm Jamaican and yes, we do call humming birds, Doctor birds as well. I make this cake and a carrots cake every year at Easter, I just make it in two layers and reduce the cream cheese frosting, it's amazing.

    This is my very favorite cake and I've been making it for many years. I do everything in one bowl lol, because I hate extra dishes. I do mine differently, as many do, but the outcome is always fabulous and everyone's favorite desert. Thanks John, you're the best ❤

    I have been searching for the Doctor Bird Cake my mom used to make for years. Watching your video, I thought this sounds just like it. Then you mentioned it's also called Doctor bird. The only thing different is mom used to put a few chopped maraschino cherries in the cake. She may have made it in a Bundt pan and poured a glaze over top. Either way I'm very excited To have this recipe. Thank you

    Just pulled this out of the oven. I made 24 cupcakes and 2- 3/4th cup small cakes. They're adorable. Can't wait to frost everything tomorrow morning. Well, now there's 23 cupcakes. 😅

    O M G! I just made this but did cupcakes (it made 24 plus three 4 inch cake layers) and they are absolutely divine! I have never had or made a hummingbird anything until today and this is out of the ball park delicious 😋

    Hi John, I love all your scrumptious recipes. I have tried quite a few and they come out great every time. There are many different kinds of hummingbirds one of them is a doctor bird which can only be found in Jamaica and it is also the Jamaican national bird. One Love ❤🎉

    This looks appetizing. I fully understand the butter vs. oil. I am not a fan of oil in cakes, though.
    I am more likely to substitute applesauce or banana.
    Not a baker or cook by any means. I understood that eggs bring body and rise to baking. I am willing to admit I am wrong. My wife enjoys your channel. She has been mentioning this cake lately. Now I know where the seed was planted, so to say.

    Chia seed gel is the best binder to use instead of eggs. Just take 1/2 tablespoon Chia seeds and mix with 3 to 4 tablespoons water and let sit for ten minutes to become jelly-like.

    Do you have any suggestions on high altitude (5000’) for this cake? I wasn’t sure with the addition of fruit the altitude will affect it as dramatically as a non fruit would ( like a sunk center).

    We had a very similar recipe we ate growing up that my grandma used to make . She called it “cake that doesn’t last” because there were never any leftovers.
    She always made it a day or three in advance because she said it tasted best after it sat a couple of days

    Yes you've made my decision as well!! I love every component of this cake so I know I'm going to adore it!
    😊 I was thinking about adding some orange zest to the cream cheese buttercream! I typically use equal parts of butter to cream cheese and I like that ratio. Of course it's going to depend on how much sugar you end up adding, when it comes to how soft it is. Obviously the temperature of your room matters as well. What do you think about adding orange zest. Too much??
