I made this and though I was only able to refrigerate it for about 14 hours, I can say without hesitation that it is the best cheesecake I have ever had. I have made many cheesecakes but have never produced one that was so faultless. No cracks/fissures, no dry edges, perfect and beautiful coloration. I will likely never make another pumpkin pie. Thank you so much Chef Jean-Pierre.
Just a few words to express gratitude to chef Jean-Pierre. I recently celebrated a birthday and, for dessert, I asked my wife to prepare this pecan pumpkin cheesecake. I helped her a bit, just so I could get my hands into it. Well, it was a major hit with family and friends, including my 100 y/o mom. We had homemade pumpkin purée so we used that or course. My wife loved the detailed instructions (and video). Merci Chef ! 🙂

I made this for Thanksgiving and it was a smash hit! Multiple people said it was the best cheesecake they ever had (and I agree!). I followed all the steps and it came out picture-perfect. My family has a sweet tooth so I also made a salted caramel and amaretto sauce to drizzle on top. My family thanks you! The only thing I don't agree with is that you said it's a 12/10. It's at least a 15/10!
On a scale of 1-10 I give you a 15......I purchased a Kaiser Springform pan over 30 years ago in Germany- on sale no less- and still use it today. It definitely will be used this week again for your amazing pumpkin cheesecake.

I love the details about the moisture, cleaning the knife between cuts, etc.. Truly brings, what I believe is the most important part of cooking, the love for the people you cook for onto the plate. I’m just a home cook, but really do believe that level of care puts everything you cook over the top. For me it really does let me put the love for my family onto the plate.

I just finished making this, thank you Chef for a great holiday recipe. For my taste, I added 1/4c more dark brown sugar and 1tsp more spice. It really changed the taste. I'm glad he told us to taste it before baking.
Made this Pumpkin Pecan Cheesecake ..... Yummmmmmmm !!! I won't be buying any more Costco Pumpkin Cheesecake. I watched the video twice and read clear through the instructions twice. I still missed one step. I forgot to spray the paper sides and realized it when I had the pan about half full of the batter, so I made sure it sat in the refrigerator a few hours longer than the instructions said. Lucked out, I guess..... It came out almost as smooth as yours without pulling any chunks away. I was so relieved. Must tell you how much I enjoyed making it and the comments from people I served it to. I enjoy your program tremendously and you always make me laugh. My mother made everything from scratch and so that's how I learned to cook, but even at 78 I still have learned a tremendous amount from you and I am so grateful.. We live near the Oregon coast and fish the Rogue and Umpqua rivers for Salmon. I have used your butter slathered salmon recipe too and you're right it is delicious. I think we have about 50 lbs in the freezer and another 20 pints canned. I'm always on the hunt for new ways to use it. We so enjoy learning from someone who loves what they do.

I wasn’t able to make such nice slices with the skin on like you did but that’s ok. Following your temp guidelines and resting it like you said, the breast meat was super moist, skin was beautiful golden brown, it was just perfection. I made this today for tomorrow’s Thanksgiving meal. My crust was too wet (not sure what happened), so I added more graham cracker crumbs until I had “wet sand”. There was a lot of crust and batter. I had enough for the 9 inch pan plus a smaller spring form. I followed the instructions exactly and the bake looks fantastic. Nice height and color, no cracking and a slight dome. I’m hoping everyone loves it!
Oh my gosh, this tasted so good! The pecans totally made it super special❤. I made this today and it was a huge success. Everyone loved it, even though it didn't get the complete chill time. Chef, we love you, and the things you make. A little clean up tip, is to put your sugar r brown sugar in LAST. As you put your other, messy ingredients in, place some of your sugar in the messy ingredient bowl, the sugar will stick to the other ingredients, and you can remove the sugary ingredients COMPLETELY from the bowl. This is WONDERFUL, for cream cheese, sour cream, butter, etc. This is close to Lindy's, from New York. Keep up the good work.

I made this today for tomorrow’s Thanksgiving meal. My crust was too wet (not sure what happened), so I added more graham cracker crumbs until I had “wet sand”. There was a lot of crust and batter. I had enough for the 9 inch pan plus a smaller spring form. I followed the instructions exactly and the bake looks fantastic. Nice height and color, no cracking and a slight dome. I’m hoping everyone loves it!
Oh my gosh, this tasted so good! The pecans totally made it super special❤. I made this today and it was a huge success. Everyone loved it, even though it didn't get the complete chill time. Would definitely make this again. I am looking forward to having this with coffee tomorrow morning. Thanks for sharing such an awesome recipe 😀

A little clean up tip, is to put your sugar r brown sugar in LAST. As you put your other, messy ingredients in, place some of your sugar in the messy ingredient bowl, the sugar will stick to the other ingredients, and you can remove the sugary ingredients COMPLETELY from the bowl. This is WONDERFUL, for cream cheese, sour cream, butter, etc.
