I had never heard of French silk pie until I went to Chicago to visit some cousins when I was in middle school. We went to the Pie House and my cousin told me to order it. I thought I had died and gone to heaven. I had never had anything so delicious before. It is the best pie that has ever been invented.
While trying to find a French Silk Pie Recipe for my boyfriend for Thanksgiving, I had about 10 tabs open with every recipe that looked good. Your tab was the second one that I opened and played. Needless to say, I just deleted all of the others because I have found THE ONE! Thank you for your wonderful instructions and especially your fun personality 🥰
I made this pie for Thanksgiving. It was a total home run! I made 3 pies, pecan, apple using 4 different types of apples and this French Silk. This pie was gone by the next morning. I will definitely make it again!

I've had French Silk Pie from Denny's way back when it was the best, topped with chocolate powder. Instead they changed it to chocolate drizzle, it didn't taste the same. Thank you for your recipe, I can't wait to give it a try. But, instead of chocolate curls, the powder.

French silk- is a thicker, buttery rich ,creamier, luxurious texture that sort of chalks off when you put your fork in, it’s impressive in every way. Chocolate pie is easier to make with less steps. Both are chocolate and tasty but this French silk is like eating dessert at a fine restaurant. I’ve made this pie. I added some finely chopped chocolate pieces into the finished silk mixture of egg, chocolate, butter, vanilla and whip cream before pouring into the crust- which, I used crushed thin Oreo cookies and melted butter instead of a butter pie crust be used here, once the crushed Oreos are well mixed into the melted butter it is equally spread and pressed into the pie pan and baked for about 10 min at 400 degrees. Cool it, fill it with the silk mixture and the chopped chocolate folded gently in, then top with the final whip cream and shaved chocolate. You won’t be sorry. Basically- Oreo cookie crust, French silk filling With chopped chocolate Topped with whip cream and shavings. It’s delicious and decadent.

@@rea5690 You’re welcome. Also, with this recipe I doubled the unsweetened chocolate that is melted and then mixed into the egg and sugar, because I prefer a thicker filling. So, instead of 4 oz I used 8 oz to melt. When I used his recipe I was trying to re-create a French silk I’ve had, and it had a density to it that we really like, which is why I doubled the chocolate to 8 oz. It’s just really good.
Will have to try this version of the recipe. My French Silk recipe entail creaming the butter and sugar, adding melted chocolate then mixing in 3 eggs -- one at a time for 3 minutes. Don't add whipped cream to the mixuture -- just on top of the finished pie. And yes the eggs are NOT cooked -- been using this recipe for over 25 years with zero issues. Believe this is also Martha Stewart's method too.
can confirm that this one is a winner, made a chocolate cookie crust instead of the traditional one but followed the filling recipe to a T and I was hearing compliments for days!
Me too, and, I folded some smaller chopped chocolate pieces into the silk after the whipped cream, before topping with the whip and shavings. It’s so good.
Thank you for this recipe. I made a pie this weekend and it was very good but the flavor is off from the French silk pies I fell in love with as a kid. I believe that tempering the eggs changes the flavor and that Ghirardelli chocolate tastes much more traditional than what what I was able to get this weekend, Guitard. I also prefer using egg whites to lighten the filling instead of cream. Finally, I think the cream and additional sugar made the filling to sweet. All said, though, it was a great pie. Thanks again. On to the lemon bars. 😅

My recipe is slightly different. The butter and sugar and mixed together until light, cooled melted chocolate added and then the eggs are beaten in one at a time, beat 5 minutes after each addition. Recipe doesn't call for whipped cream to be folded in, but I like that. My boys made it for Thanksgiving for years. Their cousins would call a couple days before Thanksgiving to be sure they were making the pie. My youngest son's mother-in-law didn't like the pie because of the raw eggs (she cooked for schools and no raw eggs were allowed) and that plus being so rich it went out of favor, except for my brother-in-law who would eat it any time I made it. I'll try with cooking the eggs to 160 degrees, I would love to make this pie again.

I made this over Thanksgiving and it was great. One thing that happened was i think my eggs took too long to cook over the steam and by the time it was done, there was little crumbs of cooked egg in the egg & sugar bowl. Luckily i caught this and strained it out and it was fine. One other thing was that i found to be way too sweet. Like, straight cake frosting rich. I think next time i make it i'll cut the sugar in half. The texture was amazing though.
