Overwhipped egg whites? Save them by the addition of one egg white & a quick whisk by hand. Better to use one more egg white than starting over with 8.

This was insanely good. Only difference I did was 8 oz bar bakers unsweet chocolate 🍫 in the microwave with heavy cream (carefully) and I used confectioners sugar in the cream with vanilla for topping plus crushed Reese’s pieces (all I had) topped. My goodness was it amazing. Thanks!! Def making this again as a mousse
That's a Chocolate Mousse Pie and it looks heavenly. My Mom always made a chocolate cream pie that was made with cocoa, but was made more like a warm pudding...sooo sooo good!

For an egg free version, whip one quart of whipping cream to use later, add one packet of gelatin in to a small amount of water over a double boiler and get it all melted, then add some cream and chocolate to make a ganache and fold that into your whipped cream, when it sets it's just like mousse from bakeries in those little chocolate cups, it would be great for this. I use dark chocolate and it's hard to say how much, maybe between 1 cup and 1 1/2 cups, depending on how rich you want it to be. The gelatin prevents the mousse from melting when it's left out or as you're eating it and gives it a much more wonderful texture overall.

Since both my taste buds and culinary memory are now addicted and acclimated to that particular pie, there is no turning back. The "silk" in "French Silk," I believe, belongs to the amount of butter one adds to the chocolate. There are many "copycat" versions of that particular Baker's Square pie. The closest I have ever found is the recipe from Cook's Country. It uses one stick of butter in the chocolate elixir, added one tablespoon at a time. Silk! When I graduated college and taught in a small rural town, and was forced to get a Master's Degree from a zillion miles away ... I detoured for this pie.

It is particularly important to use weighed measures (grams) for solid ingredients in baking and millilitres for liquid measures. I've used basically this recipe over the years with a slight difference. You get the flour/butter consistency right, put in the liquid then pulse again which alters the consistency some more. I remove the dry ingredients from the food processor into a big bowl then add the liquid and consolidate.
Thanks for the foil inside the crust to keep the crust from sliding while baking tip! I feel a life transformation coming on, hehehe. I have been making pastries since my Mama started me out with tarts when I was 3, and I’ll be 61 this year! Like I said, life transforming!

I tried to use a second pie plate but it didn't work. Thing is my niece won't eat pie crust, but she will with my strawberry pie because it's a shortbread cookie. I do that just for her but buying a crust would look and taste so much nicer. This is really going to help me bring my A game next year. Thank you, you dear man you! Sorry this was so long.

Looks like a great recipe! Mine is a bit easier -- cream together softened butter, sugar then add melted chocolate. Then add 3 eggs (no separating) 1 at a time, beating for 3 minutes each. After chilling, turns out nice and firm (versus runny) for eating. Any chocolate silk pie is GREAT!!

French Silk pie has an infamous place in my past. I was VERY pregnant, alone (hubby was stationed elsewhere while I was stationed in Florida), and having insane cravings. On my way home after work one day, I passed by a "Village Inn" restaurant, which is known for its pies, and stopped to get my chocolate fix. I went home, sat down in the living room to try to put together the crib I had bought, and started feeling sorry for myself. I grabbed the French Silk pie and ended up crying and eating until I just laid down on the floor and feel asleep. I awoke filled with shame and a slight tummy ache, but overall, I felt better. Hormones and really do a number on ya!

If you're worried about the raw eggs, there are pasteurized whole eggs on the market. They're a little more expensive, but they behave just like other eggs and worry free.
@@Rnmiller_01 absolutely. Regular eggs are actually very safe, but because of a problem we had over a decade ago people are still really nervous about them. I think it is a "better safe than sorry" kind of deal.
Hi I thought I'd mention that if you're measuring liquids you should be using a glass measuring cup, and the flat topped edged ones are for things like flour, white sugar ect. that way you can take a straight edge and level off your flour for example. I absolutely love your videos though.
Haha, I have my girl friends ask the same thing about me, (I'm a at straight female) for my cooking -not baking I'm terrible at baking. They're funny. One says if ever her husband and my boyfriend die we should get married-just the married part for marital benefits-such as taxes, health insurance, etc- and not physical/sexual things. Because being married doesn't entitle you to sex, and doesn't have to be included as part of marriage.

When I make my french silk pie, sometimes I use an oreo crust. Because there's never too much chocolate!
I always use a graham cracker crust with my french silk pie, it's always a hit. But Oreo sounds good too!

Looks like a great recipe! Mine is a bit easier -- cream together softened butter, sugar then add melted chocolate. Then add 3 eggs (no separating) 1 at a time, beating for 3 minutes each. After chilling, turns out nice and firm (versus runny) for eating. Any chocolate silk pie is GREAT!!
How long would this pie keep for? Looks delicious!
I highly doubt the pie will last long enough to spoil.

French Silk pie has an infamous place in my past. I was VERY pregnant, alone (hubby was stationed elsewhere while I was stationed in Florida), and having insane cravings. On my way home after work one day, I passed by a "Village Inn" restaurant, which is known for its pies, and stopped to get my chocolate fix. I went home, sat down in the living room to try to put together the crib I had bought, and started feeling sorry for myself. I grabbed the French Silk pie and ended up crying and eating until I just laid down on the floor and feel asleep. I awoke filled with shame and a slight tummy ache, but overall, I felt better. Hormones and really do a number on ya!

If you're worried about the raw eggs, there are pasteurized whole eggs on the market. They're a little more expensive, but they behave just like other eggs and worry free.

@@Rnmiller_01 absolutely. Regular eggs are actually very safe, but because of a problem we had over a decade ago people are still really nervous about them. I think it is a "better safe than sorry" kind of deal.

I react to raw eggs unfortunately but you can pasteurise them yourself if you need to
Hi I thought I'd mention that if you're measuring liquids you should be using a glass measuring cup, and the flat topped edged ones are for things like flour, white sugar ect. that way you can take a straight edge and level off your flour for example. I absolutely love your videos though.
