After making the filling you can leave it out. If you put in the fridge it will harden up and not be very “spread friendly”🤣. It will be the perfect consistency once the crust has cooled in the fridge. Then leave it out and pour in your cheesecake filling. Thank you for the question and have a blessed day😁😎✌️

I have been searching and I think I finally found the most amazing recipe for a pecan cheesecake! Question..... Can I substitute light corn syrup or brown sugar for the dark corn syrup or do you prefer the dark? Also some recipes call for only a pound of cream cheese and you are using 2 pounds yet both are 9 inch pans. How does it all fit when yours has more ingredients?
Hello Connie. Sorry for the late reply. I know its getting close to crunch time. I have actually only used the dark corn syrup. You can try the light corn syrup. I believe its more of color preference. I have not tried using only brown sugar but please feel free to make two cakes and experiment with the ingredients. As far as the cream cheese, yes some recipes have just 1 pound of cream cheese and I use 2. Yes both pans may be 9 inches in diameter but they may be different heights. If they are the same height then the cheese cake with the 2 pounds of cream cheese will just be a little thicker but trust me it will all fit😁. I have a question, once you have baked the cheesecake in the oven with the pecan filling beneath it, let it cool and put it in the fridge, wouldn't the pecan filling in the bottom get hard because it is left overnight in the fridge? I tried another person's recipe for this type of dessert, and when I tried to cut into the cheesecake, the pecan filling in the bottom was so hard, it became like rock candy/toffee. What can I do to avoid for that to happen again? I really want to try to do this again.
Thats a great question. I have had it happen to me once when I first started making it. All I can suggest is to bring it out before serving for about 30 mins to help it “warm” up a bit. I have before and that comes out great too if you want a crispy crust. I usually bake the crust when I make my Pumpkin Pie cheesecake. I like a crispy crust with that one for sure. The harder crust for the pecan pie cheesecake can be a bit tough to cut through. Thats the only reason I didn’t bake this one. Great question Heather and thank you for your comment. 😮Sorry about that. I adjusted a few measurements . I understand its not based on what fits in a cup but based on the weight of the ingredient. That I do not have. I believe I used a conversion calculator but obviously that was the wrong thing to do. Ill go back and weight the ingredients and update the recipe as soon as I can. I'm a confused about the amount of cream cheese....you show us TWO packages of cream cheese in the video, and MOST cream cheese is packaged in 8 oz. packages...yet you state that it is 2 lbs...which is 32 oz....which is correct??
