- This Chicken Korma is creamy, and velvety with the perfect hum of spices, and is definitely up there as one of my favourite curries of all time!
The caramelized onions and spiced yogurt give this korma such an amazing depth of flavour. Great over hot basmati rice or served with warm chapathis. Enjoy! :)

RECIPE
INGREDIENTS
5 tbsp, Canola Oil
2 medium Onions, chopped
10 raw Cashews
1 cup, Whole Yogurt
1/2 tsp, Turmeric
1 tsp, Coriander Powder
1 tsp, Red Chilli Powder
2 tsp, Garam Masala
1 stick of Cinnamon
3 Green Cardamom Pods
1 Black Cardamom
5 Cloves
10 Black Peppercorns
1 Bay Leaf
1 tsp, finely grated Ginger
1 tsp, finely grated Garlic
1 lb, boneless skinless Chicken Thighs cut into big chunks
1 cup, Water
Salt to taste
Fresh chopped Coriander to garnish
METHOD
Place 2 tbsp of oil in a heavy bottom pot, and heat on medium-low. Add onions and slowly sauté for 10-15 minutes until deeply browned. Allow to cool, and transfer to a blender with cashews. Blend until smooth, adding a little bit of water if necessary to form a thick paste.
In a bowl, whisk together yogurt, turmeric, coriander powder, red chilli powder, and garam masala until fully mixed. Set aside.
Heat remaining 3 tbsp in same pot on medium-low heat. Add cinnamon, green and black cardamom pods, cloves, black peppercorns, and bay leaf. Sauté for 15-30 seconds or until cloves have puffed up. Then add grated ginger and garlic and fry for an additional 30 seconds.
Increase heat to high, and add chicken. Cook for 5-7 minutes, stirring frequently until the chicken no longer looks raw on the outside.
Stir in spiced yogurt, onion paste, and salt to taste and reduce heat to medium-low. Partially cover with a lid and cook for 10-12 minutes, stirring often until the oils begin to separate along the edge of the curry.
Add water, and increase heat to medium. Cook for an additional 15-20 minutes partially covered until the chicken is tender and cooked through.
Remove from heat and garnish with fresh chopped coriander leaves. Enjoy! :)

That caramelised onion & cashew purée blew my mind. I’ve finally figured out why my curries suck.
Bingo! Me too! What a blessing she is.....my kitchen smells like it's flown non-stop to Delhi.
LOL you are NOT alone my friend! 😅
ToraJutsu01 We don’t let the flavors fully develop before the next step. I have figured that out, and have learned to slow down Nd enjoy the process. Makes all the difference in curries,
I learned about the caramelized onions about a year ago but was missing the cashew paste!
This tastes even better when the flavours are left to fully develop in the fridge overnight then reheated the next day... pure gastronomic bliss!!
yes !! i love making curry but I looooooooooooove the left overs more because it just tastes better the next day, i'll reheat on stove and thin it out with some chicken stock.
My mom keeps asking me where I've learned to cook like this. Its beyond hilarious to watch her confusion at my being able to cook apna food when she never taught me.
aint that an amazing feeling lol
Yes, some of these youtube cooking channels are quite good.
What is apna?
@@Guerrini2954 apna is a punjubi slang meaning "our people"
I'm a white guy and cooked this for some punjabi friends haha the reaction was great
In Hawaii there aren't many good indian food restaurants but I have a favorite in the city... unfortunately we don't get out to the city often so I only get to eat it once or twice a year. I've been searching for a proper korma recipe like what they offer but have never been able to duplicate it. I knew that geography was the main difference with the recipes I was trying and the one I actually wanted but I had no clue what part the family that owns the restaurant is from (they're first generation immigrants and a very tiny family run restaurant so it was his mothers recipe and he absolutely would not give me any hints). This blows it out of the water! This is the exact flavor i was looking for and i believe i can add the veg that they use pretty easily (i usually get it with eggplant). Thank you thank you thank you! This taste fabulous and its easy to follow you through the whole video!
I made this last night and I’m convinced it was the best curry I’ve ever made. I made a double batch and actually used a little less onions than asked for- I wasn’t sure how it was gonna turn out. As soon as I added the onions, it came together beautifully. The key is getting those onions caramelized; it takes a lot longer than 15 minutes too.
yeh, more like an hour at least for me!
Can I add coconut milk to this??
@leggbuildingdorchester6234 I'm sure you can? Try it for us and let us know :) I've been making this recipe for years and it's always amazing.
Followed your recipe twice now and my sister's boyfriend was genuinely blown away by how authentically Indian it tasted 🤣 yum yum 👌
I can’t wait to make this. I’m a Brit living in the US and you know how Brits love their curries. I love to cook so I can’t wait to get to trying your recipes.
The recipe was easy to follow and it came out amazing :) The only difference was that I used 0% Liberté Greek yogurt, brined leg and thighs with bone, and I let it simmer for an hour after the last step :) The meat was literally sliding off the bone when I ate it with lightly toasted whole wheat tortillas :) I used no salt other than the brining step :) Thank you Vijaya :)
Thanks for your comment...
Where have you been all my life? I love your videos, your personality and your recipes are nice and simple and to the point. I'm so looking forward to trying these dishes.
I keep coming back to this video. Very simple and to the point. Pleasant to watch. I have made this specific recipe about 5 times now and it delicious every time.
I used to measure the seasoning but now I just eyeball it lol.
Goes well with white rice. And you can eat it with naan or roti too 😋
Seriously the best. Making it right now after making it once 2 weeks ago, and let me tell you, y'all need to make this.
Going to cook this tonight. I have been eating Indian food for three weeks now . I feel so much healthier. My memory recall is faster and clearer. Moved all my kitchen round for all my spices and herbs. Thank you.
I made this for my parents a while back, adding some sauteed poblano peppers for some additional vegetables. They recently told me they enjoyed it so much, they have gotten korma at every Indian restaurant around town, and none of them are anywhere near as wholesome and flavorful as this recipe. Thanks for this one!
Ultimately you are my go-to when it comes to cooking Indian food. Your methods just continue to blow my mind
I made this for dinner last night and my husband LOVED it! I added some additional spices and green chilis for heat and it came out super delicious. Thanks for the amazing recipe !
@LFPRLDJJ I added some toasted kashmiri chillis that I grinded into a fine powder, fennel seeds, and a tiny bit of mace and Kewra water. I really enjoyed the taste.
just made this recipe tonight! it turned out AMAZING
Made this today. Absolutely delicious. I really like your recipies. This was the third dish I made from your videos. Keep up the good work.
Best regards from Germany.
I will cook this next week. Never understood how currys turned so creamy, mine always turned out quite watery. Now I get it!
This was so incredible. I finally made it this past weekend after wanting to for ages. So delicious. I doubled the recipe (except for the water), and it's so luxurious and rich. Thank you for such clear, simple instructions for what is definitely going at the top of this family's recipe stack!
Chicken, lamb, mutton, vegetables, paneer... No matter what goes in - curry Korma style has always been my favourite type of curry! And yours looks and sounds fantastic! 😊
Noob question; do you fish out the big pieces of spices before serving, or do they break down when cooking? Looks great, can't wait to try it!
Just made this, and it was the most satisfying Korma i've ever made. It's extremely luxurious but not at all heavy, it's quite tangy from the yogurt but the caramelized onions mellow it.
Thank you so much for this recipe, Vijaya! I just made this dish and it turned out SO delicious!!! 🙌🏾❤️
I made this for my boyfriend who loves indian food, and he loved it! it was my first time making Chicken Korma and it is delicious! thank you! :)
This is the best chicken korma recipe on RUclips.
Gorgeous. Thank you for step by step instruction, plus recipe. The most authentic recipe I've found so far. Appreciated.
I made this today and I was shocked how good it was, thanks, this was an awesome recipe and easy to make.
Wow, that looks so easy to do with only one ingredient too chop up ! And I was happy to see no additional cream being added in. I can't wait to try soon, thanks for sharing !
This looks so delicious!! Thank you for the recipe. I can’t wait to make this over the weekend 💕
I wrote down this recipe about six months ago ,,finally cooked it last week ,,it is the first curry I have made from scratch,,instead of using from a jar or packet ,,it was very nice and I will be making this again ,,probably many more times ,,thank you Vijaya
I'm always on the lookout for new recipes, and this one just won't heart over, gonna go make it right now. Great job with the recipe and its explanation, thanks.
Cooked this tonight but used lab and potatoes instead of chicken, magnificent. Fantastic recipe. Thank you so much for sharing this.
Officially subscribed! We live very rural so we don’t have a lot of culturally diverse foods available. I’m determined to learn and provide as authentic as I can manage foods for my kids and this recipe was so good and accessible! Thank you and can’t wait to try more!
Just tried this in a veganized version (soy-yoghurt + veggies instead of yoghurt+chicken) and it blew my mind! 100% recommendation. Only one thing I'd like to add: for those who are a bit heat sensitive, serve this dish with some extra yoghurt and/or chutney as it is (to my european palete at least) on the more spicy side of things.
Loved the video!
There’s an Indian restaurant in town that’s sooo good and this recipe tastes almost identical to their chicken korma.
10/10 recommend this recipe.
Imo salt really brings all the flavors out in the end.
I did it yesterday, it was very delicious 😋 My family enjoyed alot , I love it 😻 thank you very much dear
I made this dish for my mom and she absolutely loves it! She always ordered chicken korma from restaurants here and she never liked it, but now she certainly does :)
excellent video and also one of my favorite curries as well. Your instructions are good as are your descriptions of the final product you were tasting, while I was salivating......
I made this for my family twice! They love it! Even the little 5-yr-old picky eater.
Thanks for the récipe! I've never thought that this delicious recipe could be easier than this!
My kitchen smells so divine and I haven't even finished yet. Thank you so much for this video!
I love seeing people showing gratitude for the recipe and then creatively modifying it to their taste because that’s what we are, beautiful and creative human beings! 😊 it makes my heart sing!!
Yeah! But it sucks when there’s no response from the “chef”…
What’s the point if she doesn’t answer questions…? Unsubscribe?
Your recipe is awesome. Just one question : what kind of bay leave do you use? I heard indian bay leaves is very different than the western one
Wow, this looks simple and delicious. Thanks for sharing it!
Amazing recipe, great instructions and also the written recipe, thank you it was delicious !
It looks absolutely delicious! Very easy to make too! I love the spices as well!
this has always been a favorite Indian dish for me. Thanks for sharing the recipe!
Made this for tonight’s dinner …. Sooooo good and kid approved. They asked me to make it again. So glad I stumbled onto your page.
I love this recipe!!!! It tastes amazing, I made it for my family and they loved it
Ok - this is straight up delicious. Followed the recipe to a tee and it turned out fantastic!!!
I made korma for the first time and this recipe was absolutely amazing the best tasting korma I've had!!
Tried this today! Everyone at home loved it!!
Great recipe & fantastic chef ! The BEST !
Hi, can I use dry powdered spices just before searing the chicken instead of the whole ones you've used? Or it will not turn out as good?
Thanks, I enjoy your shows and I luv Indian food!
The best Indian cooking video I've seen so far on RUclips. Very precise, lots of details, well spoken 👏👏👏👏
Thank you so much!
Asan here. Followed your receipt. By far, the easiest explanation to making something that is judged by taste, I really enjoyed following you make it. I made it and turned out quite delicious.
I made this one last week following your recipe & man it was off the chain!
brilliant, absolutely brilliant recipe, made it over and over again
RUclips we needs a scratch and sniff option. This is making me hungry
That would damage the screen
Thank you for this wonderful recipe! So... I think I followed the recipe pretty much step by step... but the yogurt mix curdled when I put it into the pot with the onion/cashew paste... What did I do wrong? Perhaps too hot? Not enough water? Thanks for your help!
Totally need to try your recipes starting with this!
I just made this, I subbed sunflower seeds as I didn't have cashews on hand though, but it still turned out fabulous! 🤤 So anyone with a nut allergy; you can enjoy this one too.
Thanks for posting 👌
OMG so so nice how you explained EVERY DETAIL from wat region the curry is from, to different methods ooh your video is so easy to understand and you’re a very beautiful person. My niece is half Samoan half Indian so I will try this. We love korma n eat it often with naan n paratha at Indian restaurants here in Hawaii. 🤙
Great recipe! Thanks!
By the way, I just prepared it. It has been a success! Delicious. Thank you very much.
Can’t wait to try the recipe out! Looked more delicious and tender and creamy than the restaurant take out korma I was eating while watching this.
i just tried this tonight and it was delicious! I'm deffo gonna try out more of your recipes! The food was good, the tutorial on point so I subscribed!
Thanks for this excellent presentation. I’m going to try it but have a question. You say to use 400 degrees oven temperature but it looks like you’re using a fan oven. As fan ovens such as Neff cook at lower temperatures using their Circotherm fan, is the 400 degrees for a fan oven or a conventional oven?
this is a great video, i'm definitely going to try this. I have not seen your channel before but i will subscribe, always loved Kormas
I made this recipe a couple weeks ago, and it is very good. My $30 blender didn't handle the low volume onion and cashew mixture very well, however. I'll use the hand/immersion blender tomorrow when I make another batch. Also I'll add more chili powder because I like it spicy. Thanks for the great recipe and awesome video, Vijaya!
As a person who has been cooking for years, I think this is a very good recipe and very well presented. Thank you.
As a person whose very hungry,
I'd eat this.
Wow a person who has been cooking for years. Me too! You a human adult as well? Or just an ambitious adolescent?
@@elguero9279 Only 74 years young 😀
@@fspike2469 you actuaally 74? really cool person for 74 lol
Looks beautiful.
Thank you for the easy to follow recipe
Excellente recette. Tous mes invités hier soir ont adoré. Je l’a referais très souvent 🤩merci de l’avoir partagé
I've made this just now and it's absolutely gorgeous, texture, the tenderness of the chicken. I always like to make curry in different ways and this is exactly what I'm looking for. Beautiful curry and a beautiful woman.
How about a navratan korma? I've seen so many different methods to prepare it, and would love to know your take on it!
Omg thank you Indian! My family (White Americans) worship Indian food. When you eat Indian, it's like your taste buds are taking a vacation & they are soaring in the ski. Your senses are singing & tingling. It's a magical experience. Where to start? The spices, many uses of yogurt, naan, samosas, pakoras, the currys, all your sauces!! Chai tea, the list goes on and on. We are so grateful for you & your families coming to America and spreading the Joy. 🇺🇸🇮🇳💖🥰
Accurate description! Indian food is my absolute favorite! Fortunately I finally found an Indian market somewhat locally. The owner's wife is SO sweet to me. She's always so patient, sometimes she laughs at me when I bring her printed recipes LOL. She's always very kind and just puts things in my cart and asks me over and over if I know what I'm doing. 😂🤣 If I'm not sure she pulls out a pen and paper and writes me instructions and it's so awesome!! The restaurant they own is next door, so if I mess it up she will always ask me when I pick up takeout. If it didn't turn out well and she has it on hand, she always puts a little cup in there with more instructions. I adore this woman! I secretly wish she'd adopt me haha!

You're so lucky to have her and an Indian store to shop in wow that's awesome. I live in southern New Jersey we have lots of great ethic restaurants in my state but most are in North Jersey closer to NYC. My real favorite is actually Thai. I live on an island off the coast of NJ and theres a lot of amazing seafood and many Mexican restaurants, Chinese, and of course it's NJ Italian restaurants & pizzerias. But no Indian or Thai restaurants or stores. I drive an hour away close to the Philadelphia border which is across from Delaware river. That part of NJ has Asian supermarkets but not Indian. But it does have Indian & Thai restaurants to go eat from. There is Whole foods type supermarket called Wegmans (which is better than Whole Foods I think) which carries a lot of Indian products. And an hour half north where I live is a town called New Brunswick which has a huge Indian enclave with Indian tons stores. I don't know if you like Thai but my Thai friend told me that Thai food is actually a fusion of Chinese & Indian. I thought no wonder I love it so much. I tried making pecoras but they didn't turn out very well Haha. I do make great Tiki & Butter Chicken and curries. What have you mastered? If don't mind me asking. 🤩
@@bg9217 Well I'm not sure if I have mastered anything yet. I do feel like it takes a lot of research, trial and error and more research, when you're working with ingredients you're unfamiliar with. Eventually you start to be able to pick them out individually and know if the balance is off. I feel like I'm most comfortable with my chicken curry and Tikka Masala. I've worked the hardest on Chicken Vindaloo because my husband loves it and therefore has high expectations lol! 😂 He's happy with it now but it took me at least a dozen times. Maybe my best is aloo chaat because my sisters fight over it. If you can get your hands on mango powder and tamarind paste, they're certainly game changers. I personally really don't feel like you can substitute for those. I'm currently trying to work up the courage for naan and roti but I'm scared! 🤣
Thank you Vijaya. Will it freeze well if I cook in big batch?
Can’t wait to try this!
Korma é maravilhoso! Tanto faz se é de frango ou de carneiro. Comi muito isso em Londres. Obrigado por compartilhar a receita!
Love this recipe! Making it for the second time. Easy peasy. My family loves it. Just like my dear old granny never made.
This is the best recipe ive found , i could never get my onions right they always had the raw taste but this is fantastic, thank you so much for sharing xxx love from England UK x
Nice curry, also like the way you rolled your eyes when first tasted your curry
Honestly I was skeptical how it would turn out based on the amount of whole spices and the blend of really brown onions and cashews (I used almonds)... but WOW it turned out really well! Thank you!!
This is looks bloody delicious! It will be my weekend cooking project .Thank you from down under.
This looks great! How many does this recipe serve?
looks amazing, can't wait to try it

This looks like an Indian dish even I could do. I Love Indian food!! Thanks!
Cooked tonight, great success, excellent recipe and just the right amount of heat. It’s a winner, many thanks

Awesome video,,, really enjoyed it.... but I will enjoy it more when I make this meal..... thank you and keep up the great work..... love your videos....
Thank you very much Vijaya for the beautiful recipe. I am here in Ireland on a damp cold day in January and this recipe is gorgeous and warm. Your presentation is also first class and easy to follow. Please do more.

Thank you for the recipe. A lot of people ask if I know how to make Chicken korma. I've never made it before, after watching you I will definitely try it out. Thank you for sharing this with us. 🙏🙏🙏
😋 yummy!! Thanks again for your 🙏 show. The cashews are a good touch. Nice and creamy.
Making this today, it looks so simple, may be you have made it look simple by placing all spices in a single plate instead of small saucers. Very nice, can't wait
